Chocolate Dry:
24 cupcakes / 24 minutes @ 160°C 235g – Self raising flour
15g – Cocoa powder
Dry: 250g – Caster sugar
350g - Plain flour ¼ tsp – Salt
370g - Caster sugar 270g – Butter
60g - Cocoa powder 4 – Eggs (large)
1 tsp - Bicarbonate soda
½ tsp - Salt Wet:
150g - Dark chocolate chips 3 tbsp – Buttermilk
1 tsp – Red colouring paste
Wet: 1 tsp – Vanilla extract
1 cup - Coffee ^Add to dry mixture then...
425ml - Vegetable oil
1 cup - Buttermilk ¾ tsp – Bicarbonate soda
3 - Eggs (large) 1.5 tsp – Cider vinegar
^Add to whole mixture last

Rainbow Icing:
12 cupcakes / 20-22 minutes @ 170°C 150g – Butter
240g – Cream cheese
Dry: 840g – Icing sugar
240g – Self raising flour
1/8 tsp – Bicarbonate soda
¾ tsp – Salt
200g – Caster sugar

Wet:
2 – Eggs (large)
145ml – Whole milk
110ml – Vegetable oil
1 tsp – Vanilla extract

Buttercream icing:
285g – Softened butter
¼ tsp – Salt
450g – Icing sugar
½ tsp – Vanilla extract
1.5-2 tbsp – Colour Mill food colouring

Red Velvet
24 cupcakes / 22 minutes @ 170°C
