Born in 2013, HISPANIA, is a leading provider of high-quality Spanish gastronomic,

wine and cultural experiences with presence in London, Brussels and Spain. By opening
emblematic premises related to Spain in some of the most important cities in Europe,
we have become pioneers in valuing the quality of our land.

Gastronomic Offering – Approach

The menu will be designed in agreement with the management of Gran Melia Nha
Trang as follows:

o To include Hispania’s signature dishes that have featured in our London and
Brussels restaurants for years.
o Showcasing some of the most representative dishes in Spanish Gastronomy.
o Menu to be changed twice a year reflecting seasonality and new gastronomic
trends in Spain.
o The recipe selection to take into account local circumstances and preferences, in
particular local climate conditions.
o Recipes to be easily replicated by the chefs at Hispania Grand Melia Nha Trang.

Fifth generation of family chefs, Marcos is the executive chef of Casa
Gerardo, (restaurant with over 130 years of history), and he runs the
different gastronomic areas in Hispania.

Marcos Morán has been awarded 1 “Michelin Star” and 3 “Repsol Soles”.
With a National Gastronomy Award, Marcos has also been awarded as
“chef de l´avenir” by the international Gastronomy Academy.

Through his work and helpful advice, he has made it possible for Hispania
to provide a nurtured gastronomic service, that gives importance and value
