SUMMARY AND CONCLUSION

Jaggery that is made from the juice of raw and concentrated sugarcane is the one that is
commonly used. Jaggery is made by boiling the juice of sugarcane and then heating it for
producing thick crystals. Jaggery consists of sugar in the form of sucrose and is widely used in
different food products in the form of a sweetener. It is considered healthier in comparison to
refined sugar because there are different plant minerals and phytochemicals preserved in
jaggery.

Jaggery contains various nutritional components. They are rich in a variety of compounds
including vitamins, minerals, proteins and antioxidants like selenium, Vitamin A, Vitamin C,
Vitamin E, etc. Scientific literatures have found jaggery to show numerous properties such as, it
may act an anti-toxic agent, it might have anti-neoplastic properties, it may have antioxidant
properties.

Jaggery has been used extensively over the years for its countless benefits. Due to the wide
use of jaggery in Ayurveda, it is also called “medicinal sugar”. Jaggery is also known as gud,
vellam, Bella or bellam. In an Indian diet, it is consumed either directly or used to prepare
several sweet-based foods. This nutritious unrefined sugar offers several benefits. Daily
consumption of jaggery may help in asthma, cold, cough and anaemia and act as a natural
cleansing agent.

Results:

Engineering Properties:

1) Physical properties:
1. The bulk density (db) of the powder is 0.8430 gm/ml , medium granules is 0.8156 gm/ml
and of the large granules is 0.7946 gm/ml.
2. The true density (db) of the powder is 1.4220 gm/ml , medium granules is 1.2103 gm/ml
and of the large granules is 1.1527 gm/ml.
3. Porosity of the powder is 0.4029 gm/ml , medium granules is 0.3259 gm/ml and of the
large granules is 0.3116 gm/ml.
4. The angle of repose for powder is 26° ,medium granules is 28° and of the large granules
is 31°.
5. The moisture content for powder is 1.24 % , medium granules is 2.46 % and of the large
granules is 3.15%.
6. The tapped density for powder is 0.7142 gm/ml , medium granules is 0.625 gm/ml and
of the large granules is 0.555 gm/ml.

2) Chemical properties:
1. The Reducing sugar of the powder is 12.20 % , medium granules is 8.54 % and of the
large granules is 6.83 %.
2. The Non-reducing sugar of the powder is 12.863 % , medium granules is 14.938 % and of
the large granules is 18.900 %.
3. The Total sugar of the powder is % , medium granules is % and of the large granules is
%.
4. The Ph of the powder is 5.90 , medium granules is 6.08 and of the large granules is 6.03 .
