Piri piri chicken is a flavorful and spicy dish originating from Portugal and popular in

many parts of the world. Here's a simple recipe for making delicious piri piri chicken at
home:

Ingredients:
● 4 bone-in, skin-on chicken thighs
● 4 bone-in, skin-on chicken drumsticks
● 2 tablespoons olive oil
● 4 cloves garlic, minced
● 2-3 red chili peppers, finely chopped (adjust according to your spice preference)
● 2 tablespoons lemon juice
● 1 teaspoon smoked paprika
● 1 teaspoon dried oregano
● 1 teaspoon salt
● 1/2 teaspoon black pepper

Instructions:
​ Prepare the Marinade:
● In a bowl, combine olive oil, minced garlic, chopped red chili peppers,
lemon juice, smoked paprika, dried oregano, salt, and black pepper. Mix
well to form a thick marinade.
​ Marinate the Chicken:
● Place the chicken thighs and drumsticks in a large bowl or a resealable
plastic bag.
● Pour the marinade over the chicken, making sure each piece is well
coated. Massage the marinade into the chicken to ensure it's evenly
distributed.
● Cover the bowl or seal the bag and refrigerate for at least 2 hours, or
ideally overnight, to allow the flavors to penetrate the chicken.
​ Preheat the Grill:
● Preheat your grill to medium-high heat. You can also use a grill pan or
oven if a grill is not available.
​ Grill the Chicken:
● Remove the chicken from the marinade and shake off any excess.
● Place the chicken pieces on the preheated grill, skin side down. Grill for
about 5-7 minutes on each side, or until the chicken is cooked through and
has grill marks. The internal temperature should reach 165°F (75°C).
​ Serve:
● Once the chicken is cooked, transfer it to a serving platter.
● Serve the piri piri chicken hot, garnished with fresh chopped parsley or
cilantro, and with lemon wedges on the side for squeezing.
​ Optional: Basting Sauce:
● If you prefer extra sauciness, you can reserve some of the marinade
before marinating the chicken and use it as a basting sauce while grilling.
Make sure to boil it first to kill any bacteria from the raw chicken.
