Executive Summary
This executive summary outlines the design thinking journey undertaken to
develop and refine HEJA: a fermented ginger ale product. By embracing the principles of
design thinking, we have successfully created a product that aligns with customer needs,
fosters innovation, and delivers exceptional value.
Introduction: At the outset, we did basic product research. In addition, we also
developed a stakeholder map (consisting of primary: SITH researcher and potential
customer, secondary: distributor and regulator, tertiary: health expert and competitor)
before proceeding to the design thinking process.
Empathy I and Empathy II: By adopting a stakeholder-centric approach, we
embarked on a deep exploration of their needs, desires, and pain points. Through AI
research, journal validation, observation, expert interviews, and potential customer
interviews, we gained invaluable insights on how ginger ale can be an alcohol-alternative
and alcohol-complimentary beverage.
Define: Based on the knowledge acquired during the empathy phase, we
meticulously analyzed and synthesized the data to define a problem statement:
party-goers, comprising regular drinkers and non-drinkers, require non-alcoholic
products at drinking events in Indonesia due to religious or personal reasons and the
desire to seek alternatives to mitigate the effects of alcohol.
Ideate I and Ideate II: To generate a diverse range of potential solutions, we
organized brainstorming sessions and encouraged a culture of open creativity within our
team. We employed techniques such as how might we, 2x2 matrix, dot voting, SCAMPER,
and SWOT to generate innovative ideas which led us to three product ideas: fancy
absolute HEJA, HEJA soda, and HEJA Jelly Drink.
Prototype: Transforming ideas into tangible representations, we rapidly developed
prototypes using various ingredients, packaging, and recipes until we got the most
developed one of the three ideated products.
Testing I: Following testing and feedback sessions, we gathered valuable insights
from the audience, leading us to draw conclusions regarding taste and packaging
preferences. Specifically, out of 33 customers, 15 expressed a preference for the absolute
HEJA in terms of taste, while 13 customers favored the can-type packaging design.
Testing II: Building upon the results of Testing I, we proceeded with further
product testing by incorporating the absolute HEJA content into three can-type packaging
sizes: 250ml, 300ml, and 500ml. Subsequently, it can be concluded that out of 31
customers, 16 expressed a preference for the 300ml can size, while 7 customers indicated
a willingness to pay within the range of Rp21,000.00 to Rp30,000.00.
Iteration: Armed with stakeholders’ feedback, we embraced an iterative approach,
continuously refining and enhancing HEJA. We did our iteration on the phase of
empathy, ideate, and testing which made us through a reroute step to get the other
validation. Each iteration brought us closer to a final product.
In conclusion, the design thinking journey for HEJA, a fermented ginger ale
product, has been a transformative process that has led to the creation of Absolute HEJA
in a 300ml can-packaging, priced between Rp21.000,00 and Rp30.000,00. By embracing
the principles of design thinking and following a systematic approach of empathy,
ideation, prototyping, and testing, we have successfully developed a product that
addresses the needs of party-goers in Indonesia and provides a non-alcoholic alternative
for drinking events. This journey has showcased the power of design thinking in fostering
innovation, understanding user preferences, and delivering a valuable and user-centered
product.
CHAPTER 1
Introduction and Initial Problems

1.1 Introduction
Ginger ale is a soft drink containing water, carbonation, sugar, and ginger
extract. Ginger is the primary component that gives ginger ale its characteristic flavor
and scent. Despite its name, ginger ale does not contain any alcohol. Ginger ale has
grown in popularity as a pleasant beverage with a strong ginger flavor. This drink is
delicious on its own or as a foundation for cocktails. Ginger ale is also used to treat
nausea, motion sickness, and to improve digestion. In general, ginger ale is made
from fermented ginger extract which was incubated in a closed container for several
days. When stored, ginger undergoes fermentation, resulting in a transformation of its
taste. From that process, the ginger ale generated has an alcoholic taste, hence it is
usually referred to as ginger beer.

1.2 Initial Problem


In general, no additional bacteria are introduced to ginger ale, causing it to
contain alcohol and become a ginger beer drink. This becomes a problem because the
majority of Indonesians are Muslim, necessitating the use of a non-alcoholic ginger
ale drink. SITH students did several trials in order to find a ginger ale drink with a
low alcohol concentration. In the case of SITH students, besides being stored in a
sealed container, specific bacteria are added to generate acidity from the ginger, which
is Lactobacillus Plantarum. Actually, ginger itself contains bacteria and other
microorganisms. One of the bacterial species naturally found in ginger is
Lactobacillus, but not specifically Lactobacillus plantarum. Instead, Lactobacillus
Hilgardii is commonly present in ginger. However, Lactobacillus Hilgardii is not
available in the ITB (Institut Teknologi Bandung), which is why Lactobacillus
Plantarum is used as an alternative. Despite being different species within the
Lactobacillus genus, Lactobacillus plantarum is considered the closest match to
Lactobacillus Hilgardii available at ITB. As a result, the SITH students’ ginger ale
develops a tangy flavor profile. However, due to the bacterial activity producing acid,
the alcohol content remains relatively low, making it not quite classified as ginger
beer. This distinction allows the product to be deemed safe and suitable for the
Indonesian market, considering the significant Muslim population.
CHAPTER 2
Defined/Reframed Problems

2.1 Empathize Process

2.1.1 Stakeholder Map

The first step to developing a product is understanding the needs of the


customer. However, in the process, it's likely that many other stakeholders will
become involved. Therefore, we arranged a stakeholder map to help us gather
data about each stakeholder’s concerns of our product, which is ginger ale. Our
stakeholder map categorized primary stakeholders, secondary stakeholders, and
tertiary stakeholders. We categorize our stakeholder map based on those who
have a direct impact and those who have an indirect impact.
Primary stakeholders are defined as parties who take a direct impact on
developing our product-ginger ale-so we considered potential customers and
SITH researcher to be included as our primary stakeholders. What makes this
second iteration different from the first iteration of empathy is that in this second
iteration we already categorize our potential customer by the range of age which
is 18-29 and 30-60. We divided the range of age into two groups because each
range has frequently distinct diverse lifestyle choices, preferences, power of
buying, and thoughts. So, classifying the target customers based on age might be
an accurate approach. The second criteria for our potential customer is alcohol
drinkers and non-drinkers. As stated on research data from chat GPT, journal,
and validated by SITH researcher, targeting alcohol consumers it’s a considered
that ginger ale is widely used as a mixer for alcoholic beverages. However, it is
important to recognize tha t ginger ale holds appeal beyond this specific group.
Non-drinkers can also derive enjoyment from ginger ale, particularly those
seeking a flavorful and refreshing beverage as an alternative to alcoholic drinks,
it is supporetd by the addition of Lactobacillus Plantarum that makes ginger
alcohol tastes less alcohol and slightly taste like orange juice that makes this
ginger ale more enjoyable for those who don’t drink alcohol. In addition why
drinkers become one of our criteria is that ginger ale is recommended for
hangovers as it helps to alleviate nausea and relieves an upset stomach. The
second group of primary stakeholder is SITH researcher, specifically
Microbiology student, as they have an in-depth knowledge of the technical
requirements, product requirements, and the development process. By making
them the primary stakeholders, we can be assured that their perspectives,
suggestions, and knowledge will be taken into consideration while we develop
the product.
Secondary stakeholders are people who indirectly influence the product.
They have no direct relationship with the product, yet their actions or opinions can
nevertheless have a big impact. Interviewing them will allow us to spot any
unnoticed risks, possibilities, or potential improvement areas. Our secondary
stakeholder consists of distributor and regulator. Our objectives to visit several
nearby distributors are to observe similar products available in the market, we also
want to hear distributors' perspectives on the ginger ale industry, and we are
interested in finding out about their perceptions on consumer demand, any
particular trends, or any upcoming prospects. The second stakeholder is the
regulator. As previously stated, the fermentation process in the production of
ginger ale leads to the formation of alcohol. However, SITH researchers have
introduced lactobacillus plantarum to reduce the alcohol content in this particular
product compared to traditional ginger ale. Nonetheless, it is important to verify
with the halal regulator, MUI (Indonesian Ulema Council), whether this ginger ale
can be certified as halal given its contents.
Tertiary stakeholders may not have played a big part in the development of
ginger ale. They may still be important to take into consideration though, as they
may be impacted by the product. Engaging tertiary stakeholders can ensure a more
comprehensive understanding of the effects of the product and help us make
effective choices. Our tertiary stakeholders consist of competitors and health
experts. Our aim to consider competitors as our tertiary stakeholders is we will
conduct market research about products that are already available in the market,
for example Schweppes, ginger beer, or other sodas. Observing competitors will
give valuable insight about the competition in the ginger ale industry, including
studying the ingredients used and examining consumer feedback. This research
will provide us with a clear understanding of the current market landscape and the
factors that consumers consider important when choosing a ginger ale.
Additionally, we aim to conduct taste tests of several ginger ale products, so we
know the characteristic taste of ginger ale. Lastly, health experts can evaluate the
nutritional content of ginger ale, examine its potential impact on health, and verify
the scientific data demonstrating its benefits, because of that we consider health
expert as our tertiary stakeholders.
2.1.2 Empathy I
The first empathy was achieved by doing ginger ale study via ChatGPT.
We validated chatpgt's conclusions based on the findings of this study by
interviewing representatives of SITH students who made ginger ale. Besides that,
we also

The first step was to look for ginger ale products on ChatCPT. Ginger ale,
according to chatgpt, is a carbonated soft drink flavored with ginger. It has a
unique, spicy flavor derived from ginger root and is often light golden or pale in

overtones. Ginger ale can be kept in the refrigerator for several months to a year.
Ginger ale, according to chatgpt, should be consumed in moderation. Excessive
use can result in excessive sugar consumption, gastrointestinal difficulties,
probable drug interactions, allergic reactions, and carbonation effects.
On top of that, Ginger ale, a delightful and fizzy beverage, offers a
multitude of benefits. Not only does it tantalize taste buds, but it also provides a
range of health advantages. One notable benefit is its antioxidant effects, which
help combat free radicals in the body and promote overall well-being.
Additionally, ginger ale possesses anti-inflammatory properties, which can assist
in reducing inflammation and relieving discomfort. This refreshing drink is also
renowned for its ability to alleviate nausea and motion sickness, making it a
popular choice during travel. Moreover, ginger ale contributes to respiratory
health, as its components can help alleviate congestion and promote clearer
breathing. Beyond its health benefits, ginger ale serves as a refreshing and
thirst-quenching beverage, making it a perfect choice for those seeking a flavorful
alternative to ordinary sodas. Last but not least, ginger ale acts as a digestive aid,
facilitating digestion and soothing gastrointestinal distress. Whether you enjoy it
as a refreshing treat or as a natural remedy, ginger ale is a versatile beverage that
brings both pleasure and health benefits to those who indulge in its effervescence.

Finally, we want to know if ginger ale is a good alternative for alcoholic

non-alcoholic option, eliminating the potential risks associated with alcohol
consumption. Its effervescent nature adds to its appeal, creating a fizzy texture
that enhances the drinking experience. Additionally, the refreshing ginger flavor
of ginger ale adds a distinctive touch, providing a pleasing taste sensation. The
versatility of ginger ale is another noteworthy aspect, as it can be enjoyed on its
own as a standalone beverage, satisfying the need for a flavorful and enjoyable
drink. Moreover, it serves as an excellent ingredient in cocktails, allowing for
creative mixology and offering a unique twist to traditional drinks. The
effervescence of ginger ale contributes to the overall vibrancy and liveliness of
cocktails, elevating the drinking experience. Consequently, ginger ale serves as a
compelling option for individuals seeking an alternative to alcoholic beverages,
offering a delightful, alcohol-free option that combines the refreshing quality of
ginger flavor.

SITH Interview Validation


After conducting in-depth research on chatgpt, we conducted interviews
with one of the parties who had made ginger ale, namely SITH students, to
validate our findings on chatgpt. We interviewed 4 SITH students batch 2020 via
the zoom meeting platform. Full results of the SITH Interview can be seen in
Appendix 1.
The first thing we do is validate ginger ale from ChatGPT results and
ginger ale made by SITH students. It is mentioned that SITH's Ginger Ale is
enhanced with Lactobacillus plantarum microbial starter to provide natural
carbonation in the drink. SITH products include bacteria, a percentage of ginger,
and an 8 percent sugar content in addition to the additional fermentation process.
The ginger ale made by SITH can last 7 days in the refrigerator with a tightly
closed glass container and away from sunlight. SITH students only make it at 10
ml due to the limited supply of ginger ale. Nevertheless, they stated that it is
approximately 250 - 300 ml for daily use. If consumed in excess, SITH drink
might disrupt gut bacteria, resulting in diarrhea, severe bloating, and indigestion.
Furthermore, SITH’s students also validate ChatGPT results that state one
of ginger ale benefits, which is Antioxidant effects. Ginger ale contains
Lactobacillus Plantarum bacteria, which enhance antioxidants and improve
digestion. SITH's primary focus is on its antioxidant benefits rather than its
digestive benefits, as they haven't examined it extensively with digestive experts.
Apart from that, SITH students also clarify that ginger ale Ginger ale is
largely a drink. They have never used it to make marinated glazes, ice cream, or
skincare and body items. Agar-agar jelly is another way ginger ale can be
prepared.

We also interviewed numerous people, including one of Bandung's
well-known wholesalers. Appendix 2 contains information about the interview.

b. Observation
To gain better understanding and the real condition of ginger ale in
market from pricing, consumer willingness to buy, and the availability in
market, on 11th July 2023, we conducted observations in several
supermarkets in Bandung Riau Junction and minimarket which Toko Dago
34. We first want to observe a specific brand which is Schweppes, as
Schweppes has always been at the top of the search bar in google when we
search “ginger ale” and our team has been familiar with the brand at
convenience stores. Unexpectedly, we did not find the Schweppes ginger ale.
Then we asked the employees there about the availability of that brand. Both
employees from Riau Junction and Toko Dago 34 stated that ginger ale from
Schweppes is no longer available in market, which means it is discontinued,
and only available tonic water of Schweppes. We had a chance to asked the
reasons why Schwepess no longer available in market, both employees said
that the supplier no longer supply to the markets, even though Schweppes
ginger ale used to be demanded by lots of people Then, we were looking for
other brands in Riau Junction that sell ginger ale. It turned out there are
Bunda berg Ginger Beer and Bickfords Traditional Ginger Beer, to give a
taste test of ginger ale we decide to buy both of those two brands and
compare the taste. Bickfords and Bundaberg are both added by carbonated
water, however based on the web, Bundaberg is still processed with
fermented yeast, so Bundaberg is more similar to SITH ginger ale. Taste
wise our team prefers the Bundaberg one because it has a more powerful
ginger taste than the Bickfords one. Therefore, our team chose to focus on
Bundaberg for the next phase of prototyping and testing. The transcript of

Beside observing markets and interviewing distributors, we also did
observations at the club place. We observed drinking ginger ale at two
different circumtances since the impression of taste might vary depending on
the circumstances. The first circumstance is drinking ginger ale and
replacing alcoholic beverages, and the second circumstance is drinking
ginger ale after consuming alcohol beverages. Turned out ginger ale can help
to settle the stomach and relieve nausea. This is because ginger has
anti-inflammatory and carminative properties, which can help to reduce
stomach pain and gas, which means the data from chat gpt and journal is
proven works that ginger ale helps nausea and soothing upset stomach. The

c. Interview
Based on Chat GPT, Microbiology student, and journals stated that

people who do not drink alcohol. It has a similar fizzy and flavorful profile
to alcoholic beverages, but without the alcohol content. In addition, Ginger
ale is also a flexible drink that can be enjoyed on its own or mixed with
other alcoholic beverages. It is a popular mixer for beer, whiskey, tequila,
gin, and rum, and can be used to create delicious cocktails. Ginger is also a
highly regarded natural remedy for soothing an upset stomach and
alleviating hangover. Therefore we decided to narrow our potential
customers into party goers, then party goers consist of people who drink
alcohol and not drinking alcohol, and middle aged who drinks alcohol. We
divided our respondents into three groups such as alcohol drinkers,
non-drinkers, and middle-aged drinkers. Then, we conducted interviews
between June 14 and 18, 2023, we successfully interviewed 41 people, to be
specific middle aged drinkers 9 people, 15 people that drink alcohol, and 17

2.2 Define and Reframed Problem

2.2.1 Problem statement


Based on the results of interviews with 41 representatives consisting of 3
customer categories (alcohol drinkers, non-drinkers, and middle-aged drinkers)
at the empathize stage, we decided to remove middle-aged drinkers from our
target market because not in line with our target market, which is party goers
aged 17-27 years old. Also from the results of interviews and empathy for
middle-aged drinkers, the majority stated that they were not interested in
consuming ginger ale because they did not like the taste of ginger itself or still
thought ginger was a health drink so it was not suitable as an alternative for

From the validation results in the previous empathy process, it is known
that ginger ale can be a mixer and alternative for alcoholic drinks so we
conducted interviews with users focused on party-goers that consist of regular
drinkers and non-drinkers. From the interview, the problem was defined, which
is that users need to consume non-alcoholic products at drinking events because
there are many visitors who choose not to consume alcohol due to religious or
personal reasons. Additionally, even regular drinkers seek alternatives to
mitigate the effects of alcohol. This reflects the increasing emphasis on
individual preferences and well-being in social gatherings.

2.2.2 Jobs-To-Be-Done
Party-goers that consist of regular drinkers and nondrinkers who in this
context are customers of ginger ale have Jobs-To-Be-Done in consuming ginger
ale products, that is to enjoy a social gathering without consuming alcohol and
find a non-alcoholic drink that will help them stay safe after consuming alcohol.
In commercializing ginger ale products, several stakeholders such as SITH
researchers and distributors also have their own Jobs-To-Be-Done. Seeing that
there are still many people who don't like the taste of ginger because they still
think of it as a spice that doesn't taste good. makes SITH researcher's have
Jobs-To-Be-Done to create a ginger beer recipe that is suitable for Indonesian
tastes. Distributors can commercialize their products by selling them to
appropriate customers, as in this context ginger ale as a mixer and alternative for
alcoholic beverages so that distributors are expected to come from alcoholic
beverage stores and night clubs so that products can be marketed accordingly to
targeted customers.

2.3 Supporting Data

In order to gain a deeper understanding of the researchers' perspectives, we
conducted interviews with the SITH team on June 7, 2023 at 8:00 PM. The
interviews lasted for an hour and 20 minutes. Of the 5 researchers in the
SITH team, only 3 were able to attend the meeting. They were located in
Surabaya, while we were in Bandung, so the interviews were conducted
via Zoom.

b. Interview with Distributors
To gather insights about ginger ale that were sold in stores, we conducted
field research on June 11 and 12, 2023. We visited three stores: Borma,
Riau Junction, and Toko Dago 34. At each store, we spoke with the
responsible worker to ask about the ginger ale that they sold.

With the objective of attaining a more in-depth understanding of
customers' perspectives on ginger ale, we did interviews with 41
individuals divided into three groups. The interviews were conducted
between June 14 and 18, 2023. The interviews were semi-structured and
lasted for approximately 10 minutes each.

CHAPTER 3
Ideation, Prototyping, and Testing

3.1 Ideation

3.1.1 How Might We I


We discovered a challenge by considering the results of previous empathy
and followed by developing a problem statement based on the user and their
needs. The challenge that we encounter is figuring out how to create ginger ale
as an alternative drink to alcoholic drinks, as well as how ginger ale may be
utilized as a neutralizer while drinking alcohol. After going through these
phases, the next step that we go on to is the ideate stage, where we continue
searching for the most effective type of solution for our products. We did an
in-class activity as the start of our idea process. Every member of our group has
to come up with one How Might We question and write it down on a post-it
note. The How Might We technique is meant to generate as many potential
creative ideas for developing the ginger ale into a solution to the issue as
feasible. After collecting the data, we used a dot voting technique to choose the
top three HMW questions.
At that time, our top 3 HMW questions were
1. How might we transform ginger ale into another form other than
liquid?
2. How might we remove the negative connotations and
misconceptions about ginger ale, highlighting its versatility,
refreshing qualities, and ability to enhance social experiences?
3. How might we enhance ginger ale's visual appeal or its packaging?
From the top three HMWs, we have to narrow it down to one
HMW that most closely solves the challenges we face.
However, we decided to integrate the three HMW questions into a single
new question that incorporates all three. We take this action because we believe
that the three questions are of equal importance, so why not combine them? The
HMW question that we end up using is how might we transform ginger ale into
another form other than beverages with appealing packaging to remove the
misconceptions about ginger ale?

3.1.2 2x2 Matrix I


After determining the HMW question, we began to generate ideas for
product solutions based on our HMW. Just like before, each member of the
group contributed at least three potential ginger ale product ideas and wrote it
down on a post-it note for later selecting using the dot voting system. In
developing these concepts, we are also using a two-by-two matrix that allows us
to categorize them according to the amount of effort generated in creating this
product and its level of impact. We came up with a wide variety of product
concepts, ranging from ridiculous ideas like turning ginger ale into inhalers to
more realistic options like candy. We started with more than ten different ideas,
but eventually settled on the top three product ideas, which include a liquid herb
drink, an effervescent tablet, and paper candy that have been selected through
dot voting.

3.1.3 How Might We II (Second Iteration)


A few days after the initial ideate process, we evaluated the results of our
HMW questions along with the product ideas. Turns out that the outcomes of
our first discussion did not correspond to the problem statement that we had
laid out before. As a result, we came to the conclusion that the HMW selection
process needed to be restarted, and we would also gather new suggestions that
were more relevant to our problem statement. The only difference between the
current phase and the previous one is that we conducted the dot voting online
since one of our team member was unable to join us offline.
We adjusted everything related to altering the product's form (turning it
into something other than a liquid or drink) and added more insights on how to
improve the negative associations, taste, and appearance to make them more
acceptable to the audience as a whole. This time, the top three HMW questions
that we discovered were;
1. How might we create other variations of ginger ale beverages?
2. How might we improve ginger ale's flavour and visual appeal for
all attendees at drinking events?
3. How might we remove the negative connotations and
misconceptions about ginger ale, highlighting its versatility,
refreshing qualities, and ability to enhance social experiences?
Once again, we merged the three HMW questions into a single one, “How might
we remove the negative connotation and misconceptions about ginger ale by
creating other variations of beverage to improve the flavour and visual appeal of
ginger ale?”

3.1.4 2x2 Matrix II (Second Iteration)


We also use the SCAMPER method to determine the optimal solution to
our problem statement. The ginger ale may be developed into a new product by
following the steps outlined in our SCAMPER process. The findings of our
SCAMPER are listed below.

After answering the new HMW question, we redefined ideas for the
products that we may be able to create in the future. As before, we make use of
the 2x2 matrix to rank the products in accordance with the amount of effort
required and the degree of impact offered by the products. Dot voting is used,
just as it was before, except this time it is done online using Canva to choose our
top three product ideas. The following are our top three ideas: Ginger ale in a
fancy bottle with a greater ginger content, ginger ale in a soda can with a more
refreshing experience, and ginger ale jelly drink.
Before we begin prototyping and testing any of the products, we do a

3.2 Prototyping
In order to create an high fidelity prototype that closely resembles the authentic Sith
Ginger Ale product, we couldn't obtain the original Sith Ginger Ale. Therefore, for this prototype,
we purchased Ginger Ale available in supermarkets. To achieve a high-fidelity prototype that
resembles the original Sith product, we added soda to our Ginger Ale. The reason behind adding
soda is based on an interview with Sith, where they explained that the flavor profile of Ginger Ale
resembles a citrusy soda.
We recognized that the store-bought Ginger Ale might not fully capture the authentic taste
of Sith Ginger Ale. Hence, we took the additional step of incorporating soda into our Ginger Ale
blend. This decision was made based on the information gathered from the interview, where Sith
described their Ginger Ale flavor as resembling a citrusy soda. To achieve a higher level of
accuracy and authenticity in our prototype, we chose to include soda with a citrus flavor into the
Ginger Ale mixture.

c. Result (low/high fidelity)
Based on ideate tool we found out that our idea is “How might we remove the
negative connotation and misconceptions about ginger ale by creating other
variations of beverage to improve the flavour and visual appeal of ginger ale” then
come up with The following are our top three ideas: Ginger ale in a fancy bottle
with a greater ginger content, ginger ale in a soda can with a more refreshing
experience, and ginger ale jelly drink. We then used a high fidelity prototype for
each product.

Absolute HEJA: Absolute HEJA bottled in fancy glass bottle, it gives high class and
fancy impression whenever people see it for the first time. Taste wise, Absolute HEJA
contains the highest concentration of ginger because of the extract ginger that we add,
as the result,k it gives hint of warmth sensation from the ginger, yet it still has a bit of
refreshing taste from the lemon
HEJA Soda: Heja Soda packaged in a can, the appearance gives the impression as a
“daily drink” and more casual. Heja soda contains the highest soda concentration as it
is added with extra soda water and more lemon juice, therefore Absolute Heja offers a
refreshing sensation.

Heja Jelly Drink: The Heja Jelly Drink is meant to be a less formal beverage option.
In addition to having the flavor of ginger, it also has the unique texture of jelly.

3.3 Testing

CHAPTER 4
Selected Solution

4.1 Final Product

After undergoing every process and feedback, we have finally developed the final
product named Absolute Heja, ginger ale soda infused with lemon extract, featuring a
high concentration of ginger. It is conveniently packaged in a 300ml can. This product
will be sold within the price range of 21,000 to 30,000 Indonesian Rupiah. It serves as
a suitable alternative to alcohol, functioning as both a mixer and an alcohol
neutralizer.
The origin of our brand name, Heja, was derived from the Indonesian word for
'Ginger,' which is 'Jahe.' By rearranging the syllables from Ja-He to He-Ja, we created
our unique brand name. Interestingly, in Swedish, 'Heja' means 'To shout a cheer or
cheers,' which aligns with our brand’s objective—to bring joy to consumers of our
products.
4.2 Further Action

S : Well, Ginger Ale is a drink made from
ginger but the ginger is fermented. In the
sense that the ginger extract is incubated
in a closed container for several days.
When stored, the ginger will ferment and
the taste will change. If it's ginger ale
usually it will contain alcohol and it will
be ginger beer. Well, the difference is that
the original ginger ale drink has a
fermentation process, so the ginger is
made into a liquid and left in a closed
container. In our case, apart from being
stored in a closed container, we added
bacteria that can produce acid from the
ginger. Therefore, the Ginger Ale we
make has a sour taste. Then, because the
bacteria that we feed produce acid, the
alcohol isn't too much so you can't say
ginger beer either, the term is safe for the
market in Indonesia because there are
many Muslims.

adaptation? First, we adapt it to a low
concentration first, with a little salt, more
and more, until it's the same concentration
as we used in the Ginger Ale. In Ginger
Alenya itself, we use the ginger at 9%
concentration with the addition of
Lactobacillus Plantarum which has been
adapted.

actually followed the schedule of the
practice, so it just so happened that we
only managed to store it for 7 days. And
during those 7 days, the storage is still
good. And for the rest, we don't continue
because the practicum time is over, so for
now we answer it for up to 7 days. For
more than 7 days, it may need more
research.
B : So if it is more than 7 days, will it
change the taste or anything?
S : There are 2 aspects, the change in the
aroma and the change in taste. So if the
aroma and taste are not fresh anymore, not
sour anymore, you could say it has a bit of
a rotting taste, so the ginger is a bit
stronger and spicier. The ginger drinks
have an aftertaste, the longer the after
taste, the better the after taste. It's like
after drinking it, the taste of ginger sticks
longer, if it's stored for too long.
B : Are there any tips for storing ginger
ale?
S : Actually, it's recommended to keep it
in the fridge, because it still has the
bacteria. If the bacteria are stored at room
temperature, the growth will be faster. So,
we suggest storing it in the refrigerator, a
regular refrigerator at 20 degrees, it's okay
not to need it in the freezer. So if you keep
it in the refrigerator, the bacteria will grow
more slowly, which means it will
decompose more slowly. If it's at room
temperature, it's likely less than 7 days, it's
already starting to rot. Yesterday we tried
the one we waited 5 days, but it changed a
bit when kept at room temperature.

Are there any specific materials for ginger S : It is recommended that it is made using

can run. The problem is that if air gets in
or something like that, then the formation
of acid from the bacteria will not be
optimal, so it won't taste too good either.
B : So if I open it once then i have to

S : No, so yesterday we tried it every day,

was still safe. So the point is, if you want
to consume it, open it but then close it
again like a normal drink.
B : Then you said earlier that to test if it
can last more than 7 days, it needs further
research, what aspects can it go through?
S : So to extend the shelf life, it takes a
long time, because we are constrained
during the practicum, which only has 7
days left before we can try it, so we can
only try it for 7 days. Now, for further
research, the shelf life can be more than 7
days, maybe up to 10 days or 2 weeks in
the fridge because if it's relatively 2 weeks
in the fridge, the product should still be
consumable. It's just that we haven't done
the test yet, so we can't give an analysis
that far.

What are the considerations when you Starting from why we choose ginger. So in

ginger like that. So, we chose the drink.
Ginger's common drink is ginger Ale
because it's made by fermenting it and the
taste is also suitable to what people prefer
because it's similar to beer. So, we finally
got the modification there.
At that time, why we chose Ginger Ale
was because what we saw was that there
was far more research on Ginger Ale
compared to other products. Because there
was a lot of research on it, we chose
Ginger Ale. There are also many scientific
studies so it's easy for us to find
references.

Does that mean Ginger Ale is a drink, S :No, it's really for drinking.
right? Is there any potential to become a
food? B : Oh, if it's like a skincare product or a
product for consumption outside the body,
isn't there yet? Possible or not?
S : Not the Ginger Ale itself, that's why
it's only for consumption, except for the
ginger, it can be used as medicine.
B : If it's dried or suitable for making
powder or compacted like making candy
like that, is that possible or not?
S : It's actually possible, but I don't know
in more detail how to make it into powder.
Actually, yes, it's possible, but for the
health content we haven't been able to
validate it, because there haven't been any
scientific studies there either.

Apart from Lactobacillus Plantarum, are S : Actually there is, so we made it during

S : I also want to add, our original goal
was to compare Ginger Ale with
Plantarum, saccharomyces cerevisiae, and
those 2, which one is tastier. So it turns
out that after we tested it the most
delicious was adding Lactobacillus
Plantarum, in the end we only added
plantarum. Why does it taste different?
Because the results of the fermentation of
the two are different, so the plantarum
produces acid it is dominant, whereas the
yeast is dominant between producing
carbon dioxide or producing alcohol.
Because those two are different, they
produce different tastes too, and when we
tried to test it for drinking on other people,
it turned out that they preferred it when
they added Lactobacillus Plantarum.

For your own product, is there added So for the production of Ginger Ale that
sugar or something like that in the final we use, the first ingredient is
product? Lactobacillus Plantarum, second is ginger,
third is sugar. How much sugar is that?
The sugar is as much as 8% of the total
production volume. So, for example, if we
want to produce 100 milliliters, that
means 8 grams of sugar, that's 8% of the
total volume. We once added salt but it
didn't taste good.

Do you have product testing? Like to a S : There is, so the test is called an

test we test whether the taste is good, the
aroma is good, the texture is good, the

organoleptic tested. So yesterday we did it
twice, the first was to test which bacteria
are tastier, plantarum or yeast. So it turns
out that the plantarum is tastier, we tested
the internal organoleptic, so it's just the
five of us, and it turns out we agree that
plantarum is tastier. Now, for the second
organoleptic test, we will test whether the
Ginger Ale given by the plantarum tastes
better than the regular Ginger Ale without
adding anything. So, the number of
participants or panelists we tested was 30
people, and they were around our
laboratory. And from the results obtained,
the Ginger Ale added with plantarum is
better than the regular Ginger Ale. There
were 70% of the panelists who chose to
add plantarum instead of the usual one. So
we can conclude that the plantarum
material has succeeded in improving the
quality of the Ginger Ale.
B : Maybe it's because the races that use
plantarum have a citrus flavor like what
you said earlier, right?
S : Yes, it's sour.
B : Have you ever tried the Ginger Ale
product before you made it?
S : Yes, we've tried Ginger Ale. But if it is
industrial products like those on the
internet, we never do. So we compare it to
our own Ginger Ale.

What is the dosage for consuming the S : Due to the limited quantity, we only

day, it's just that it's rare for people to
drink ginger drinks every day, right? So
it's free, there's no consumption limit, just
like regular drinks.
B : So this Ginger Ale is like a regular
drink, right? It's not like a drug drink that
has a measure.
S : Yes, it's like an ordinary drink that has
a health function, like yogurt.

want to look whether he's growing or not,

smell. As for the commercial, it's not like

yet, so it is grown manually.
B : Does that mean no one sells it yet?
S : Yes, you can't really, you have to do it
manually too, because the bacteria isn't
natural bacteria, but it's an adaptation of

ITB, where did you ask for it?
S : Actually, if the bacteria is still there,
we can give it to you. But for your
assignment, when will the implementation

B : The product should available next
month.
S : Oh next month, because in June we're
not all in Bandung. So I don't think I can
help either. The problem is that the culture
really comes from us too, it's in us too. As
for the culture itself, it's actually being
saved, but I don't know if it can be used or
not this month. So I suggest you just ask
for a new culture because there's already a
little culture. At least if you want to make

effect because when we checked the
carbonation, it was very low with almost

although it's less compared to regular

B: Does that mean it's safe to mix it with
soda? It would make it more refreshing,

S: From what I see, it should be safe to
mix it with soda because regular Ginger
Ale usually has a soda effect. Since ginger
contains enzymes that produce carbon
dioxide and create bubbles, it's safe to mix
it with soda. However, we don't know the
exact composition of the soda solution and
the Ginger Ale because we haven't tested
it yet. So it needs to be tried and matched
with the taste.

In your opinion, what kind of customers S: The first and foremost thing is that it

the first priority. It should be safe for
people who can consume ginger because
there are some people who don't like

B: Are there any specific benefits of
ginger? I know that ginger can help
relieve nausea. Does Ginger Ale have that
effect?
S: Actually, Ginger Ale can be considered
to have similar benefits as ginger because
ginger is one of its main ingredients.
However, we haven't tested it for treating
specific illnesses. For example, we don't
know if drinking Ginger Ale can help
alleviate stomach aches. But if someone
wants to drink Ginger Ale because they
believe it has antioxidant properties or
other benefits, that's possible. Do you
understand?
B: I understand, so even though Ginger
Ale has other elements added to it, it
doesn't take away the main function of
ginger, right?
S: Yes, that's correct.
S: I want to ask, are you supposed to
create a product based on this or just write
a report? I'm curious.
B: It's more about determining what kind
of Ginger Ale the community prefers. It
doesn't necessarily involve creating a
product and marketing it.
S: Oh, I see. Alright then.

concentration of the bacteria. In our
previous testing, we only used a
concentration of 10% of the total volume.
It would be beneficial to try different
concentrations to see if a lower or higher
concentration yields a more favorable
taste.
If we had more research time, we would
also like to measure various levels of
compounds present in the product. For
example, we would like to determine the
acidity levels and identify the specific
compounds responsible for the acidity,
along with their respective concentrations.
That's what we would like to explore
given the opportunity.

who have previously tried ginger
