Crispy dilis, also known as crispy anchovies, is a popular Filipino snack or appetizer that's enjoyed for its

crunchy texture and savory flavor. Here's a simple recipe to make crispy dilis at home:

Ingredients:

 1 cup dried dilis (anchovies), cleaned and heads removed

 1/2 cup cornstarch

 1/4 cup all-purpose flour

 1/2 teaspoon garlic powder

 1/2 teaspoon onion powder

 1/4 teaspoon ground black pepper

 Cooking oil for frying

 Salt to taste

Instructions:

1. Rinse the dried dilis under cold water to remove any impurities. Pat them dry thoroughly using
paper towels.

2. In a shallow dish or bowl, combine the cornstarch, all-purpose flour, garlic powder, onion
powder, and ground black pepper. Mix well to combine.

3. Heat cooking oil in a deep fryer or a heavy-bottomed pot to about 350°F (180°C).

4. Toss the dried dilis in the flour mixture, making sure they are evenly coated.

5. Shake off any excess flour mixture from the dilis and carefully drop them into the hot oil, frying
in batches to avoid overcrowding the pot.

6. Fry the dilis for about 1-2 minutes or until they turn golden brown and crispy. Be careful not to
overcook them as they can quickly burn.

7. Once crispy and golden brown, use a slotted spoon to remove the fried dilis from the oil and
transfer them to a plate lined with paper towels to drain off excess oil.

8. While still hot, sprinkle the crispy dilis with a pinch of salt to taste, if desired.

9. Allow the crispy dilis to cool slightly before serving.

Enjoy your homemade crispy dilis as a snack on its own or as a topping for salads, rice dishes, or even
soups. They can be stored in an airtight container once completely cooled for future snacking.
