1.. SUNNY/PLATE EGG

OEUF AU PLAT

Put frying pan on fire. When it’s slightly hot, pour a very little quantity of groundnut oil into it. Break an
egg directly into the pan and add a little spice without turning. Leave it to fry a little.

Don’t turn the egg if it is preferred half done.

The yolk should not be broken nor scattered.

2. PAIN PERDU

Bread

Liquid milk

Egg (2)

Sugar

Very little salt.

Cut the bread into slanting pieces.

Break the eggs and mix properly. Add sugar and mix to dilute. Add salt and mix again. Add milk and mix.
Taste it to see if the salt and sugar are okay.

On your gas and hit the frying pan. Add oil.

Put each bread (pain) into the milk, turn it over to ensure all of its body is touched. Put in pan to fry.

Note: The bread should not get soaked.

3. FRUIT PRINTADE

Potato chips

Chicken, Turkey or Guinea fowl.

Fry the chips to satisfaction and pour into a sieve. Add little salt and shake very well to mix.

Boil chicken, turkey or guinea fowl with salt (compulsory) and little spice (optional). Oil should already
be on fire so you can fry the meet immediately to save time.

After frying to satisfaction, put another pan on fire and place the meat inside it. And sauce to every part
of the meat and grill.
Put the meat in plate. Put the chips beside it. Put sauce in sauce plate. Add fork and cutting knife.

4. COUSCOUS

Couscous

Onion

Vegetable oil

Tin tomato

Powder pepper

Put pan on fire. Add oil. Add chopped onions and stir-fry. Add tin tomato and stir-fry. Add powder
pepper. Add spice. Add maggi. Add salt. Add water. Leave to boil and then reduce the water-sauce. Pour
the couscous into the pot and stir together.

5. TOMATO SAUCE

Onions

Tin tomato

Fresh tomatoes

Vegetable oil

Maggi

Spice

Salt

Chop desired quality of onions. Do same to fresh tomatoes. Grind moderate quality of fresh tomatoes.

Put pot on fire and add oil. Add onions and stir-fry. Add tin tomato, stir-fry and leave to cook for some
minutes. Add spice. Add maggi. Add salt. Add the grinded tomatoes and leave to cook for some minutes.
Then add the chopped tomatoes and leave to cook for about four minutes. Your sauce is ready.

6. SPAGHETTI

CARP = TILAPIA

BAR = KOKA
7. FISH

Half teaspoon of spicing powder. Add half portion of magic chicken maggi and mix very well. Add
moderate portion of salt. Add little vegetable oil. Add very little water and mix everything very well.

Cut the fish in slant form on both sides. Add the spices very well into every cuts and holes very well.

Freeze it for three hours then fry. You can as well fry immediately if it’s urgent.

8. PANCAKE

Flour

Milk

Sugar

Egg

Vanilla or nutmeg

Salt

Pour milk into a cup or container. Add vanilla. Add sugar and mix till sugar dissolves.

In another container, add flour. Break an egg or two into it, depending on quantity of the flour and mix
very well. Be pouring the milk solution into it gradually and continue mixing till it gives you the
texture/thickness you want. Then filter it.

Put your frying pan on fire. Rub vegetable oil in it (not pour). Gradually pour 1 sauce spoonful in the pan,
ensuring it evenly spread throughout. Turn it the other side. Remove and repeat the process.

9. FRIED RICE

Basmati rice

Vegetable oil

Liver

Green beans/Green pea

Carrots

Green pepper

Spring onions
Onions

Unripe atarodo

Turmeric

Garlic/spices

Maggi

Salt

Boil the liver and cut into smaller pieces.

Cook the rice as a normal white rice. Wash starch from it and pour into a sieve to dry.

Chop the onions, garlic and atarodo.

Cut the green beans, carrots, green pepper and spring onions.

Pour vegetable oil into flat pot. Add onions and garlic together and stir-fry. If the person doesn’t like
garlic, add only onions, then add fried rice spices. Add liver. Add carrots and green beans. Add maggi.
Add salt in moderation (remember you already add salt to the rice). Add turmeric. Taste it to see if it’s
tasty enough.

Pour the rice into it and stir properly, mixing and turning. Add spring onions, green pepper and atarodo
and mix again.

Using curry for your fried rice is unprofessional.

Your rice is ready. Enjoy.

CHINESE FRIED RICE

Follow the same process as that of general fried rice. Add Soy Sauce instead of turmeric.
