INTRO + OVERVIEW

The diagram illustrates the stages involved in the process of producing coffee beans. Overall,
the process consists of eight steps, beginning with coffee beans being collected and ending with
(culminating in) coffee being delivered to customers.

In the first stage, ripe coffee beans are collected manually, with an average of approximately
250 to 300 pounds of coffee beans being harvested each day. In the following step, the collected coffee
beans are transported by pickers in burlap bags to the production site where they are pulped.

The pulped coffee beans are then left overnight in pure rainwater for fermentation, which can
take up to 2 weeks, depending on the number of available sun days. Subsequently, the fermented
coffee beans are hand-distributed upon the floor to be sun dried. During this step, the beans are raked
several times to ensure that they are dried evenly. After two weeks, the dried beans, which are now
called parchment, are taken to a milling machine to remove the parchment and its silver skin, allowing
the green beans to be ready for roasting. Next, the beans are roasted according to the specifications of
customers before being cooled, packaged, and delivered to consumers.
