Paneer Dum Biryani

Ingredients:

 Paneer curry
o Onions caramelized
o Bell peppers, mushrooms, and cashews stir fry
o Rice parboiled in biryani spices
 Onions - 2 medium cut lengthwise and stir fried to get caramelized to taste - season with
salt
 Bell peppers, mushrooms, and cashews stir fried and seasoned with salt
 Wash and soak rice - 6 cups
 Cut and soak paneer in boiling water, salt, and kasoori methi

Paneer Curry

 4 tomatoes chopped and stir fry till water is gone


 Add spice powder - (cashews, red chilies, shah jeera)
 Mix 1 cup strained yogurt + 1 can coconut milk
 Add tomato paste - half can
 Salt to taste

Biryani assembly

 Layer paneer curry at bottom


 Cooking Rice
o Add soaked rice to boiling water and start taking out rice once you see it dancing
 Put one layer of rice over the paneer
 Layer of onions and veggies
 Remaining rice over the veggies
 Final layer of onions and veggies
 Place wet paper towel on top of the last layer cover and bake at 350 degrees F for 30mins
