OBJECTIVES: THIS STUDY AIMS TO;
1. Produce a ham using mushrooms.
2. To know the effectiveness of mushrooms as a meat
substitute in making ham.
3. It aims to create a ham that is organic and nutritious.
4. To determine and find an alternative ingredient for
meat, using mushrooms.
INTRODUCTION
Alternative meat using mushroom on making ham. Ham is one of the most consumed pork
products in the world, and did you know that ham was one of the most ancient meats of civilized
peoples and was common throughout Europe and Asia except were forbidden by religious. Ham
is pork from a leg cut that has been preserved by wet or dry curing, with or without smoking. As
a processed meat, the term "ham" includes both whole cuts of meat and ones that have been
mechanically formed. Mushrooms are the best vegetable alternative for meat because,
mushrooms do have a “meaty” texture and add a flavor known as “umami” that tends to be very
satisfying, which makes them ideal to include in pasta sauce, stews, casseroles, chili and other
mixed dishes to maintain a rich flavor and texture while reducing or eliminating the meat they
contain. Mushrooms are a good meat substitute although they are not packed with protein.
BACKGROUND OF THE
STUDY

The meat industry is a significant contributor to environmental


problems, including deforestation, greenhouse gas emissions, and
water pollution. Additionally, excessive meat consumption has
been linked to health issues such as heart disease, obesity, and
certain cancers. Therefore, there is a growing need for alternative
sources of protein to replace meat in diets.
SIGNIFICANCE
Benefits of Alternative ham using mushrooms;
(1) Mushrooms have a lot of benefits packed with ton of essential vitamins and
minerals, boosting vitamins, minerals and antioxidants known to be an important
part of diet.
(2) It raises exposure to ultraviolet lights that are good source of vitamin D according
to a review publication in the October 2018
(3) Mushrooms are also rich source of potassium, which in one whole mushroom
provides 306 milligrams(mg), known for reducing the negative impact that sodium
can have in a person's body, it also lessens the tension in blood vessels, potentially
helping to lower blood pressure.
STATEMENT OF THE
PROBLEM
The following questions were the focus of this research:

(1) What is the efficacy of mushroom-based meat alternatives in terms of taste,


aroma and texture?
(2) What are the assessment of the respondents on the efficacy of mushrooms as meat
substitute on ham?
(3) Is there a significant difference between the assessment of the respondents and the
efficacy of mushroom as meat substitute on ham?
HYPOTHESIS
(1) For taste, they often have a umami taste, which is known as the "fifth taste" and is associated with
a savory, meaty flavor, for aroma, mushrooms have a distinct aroma that can add depth and
complexity to plant-based meat alternatives. Some mushrooms, such as shiitake or portobello, have
stronger and more pronounced aromas compared to others, and lastly for texture, they have a firm
yet tender texture that can mimic certain meat textures, such as ground meat or shredded meat.

(2) The efficacy of mushrooms as a meat substitute in ham can vary depending on personal
preferences and culinary skills. Some people may find mushroom-based ham substitutes to be quite
satisfying and a viable alternative to traditional ham.

(3) There is no significant difference between the efficacy of mushroom and the assesment of the
respondents.

RELATED LITERATURE
Mushrooms contain macronutrients that support a healthy immune system. According to the Mushroom Council,
your immune system will benefit from mushrooms whose nutrients include: Selenium, which helps your body
make antioxidant enzymes to prevent cell damage.They also contain antioxidants and have been associated with
potential health benefits, such as boosting the immune system and reducing inflammation. Meatless meat": A
study published in the International Journal of Gastronomy and Food Science in 2020 titled "Mushroom- Based
Meat Substitutes: History, Present, and Future" discusses the use of mushrooms as meat substitutes. Producing
meat, particularly from livestock, is known to have a significant environmental impact due to issues like
deforestation, greenhouse gas emissions, and water usage. Mushrooms, on the other hand, can be grown in
controlled environments using fewer resources. Additionally, mushrooms are low in calories and fat, making them
a potentially healthier alternative to certain types of meat, especially when used as part of a balanced diet. Their
adaptability allows for creative culinary exploration and the development of innovative meat-like dishes.
Mushrooms offer a wide range of culinary possibilities, allowing for creativity in preparing vegetarian and vegan
dishes. While mushrooms may not be nutritionally identical to meat, they offer a range of benefits that make them
a popular choice among vegetarians, vegans, and people looking to reduce their meat consumption. Many
varieties of mushrooms, such as portobello, shiitake, and oyster mushrooms, have a dense and chewy texture that
can resemble meat when cooked properly. This characteristic makes them suitable for dishes where meaty texture
is desired, such as burgers, stir-fries, and stews. Livestock production, especially beef and pork, is associated with
significant environmental impacts,including deforestation, greenhouse gas emissions, and water pollution. By
replacing meat with mushrooms, you can help reduce the environmental footprint of your diet.
