Crockpot Roast

6 small potatoes6 small onions 6 medium carrots 1 boneless beef chuck roast (approximately 3
pounds) Salt and pepper to taste 1 cup water

Place all ingredients in your slow cooker in the order listed. Cover and cook on low for 8 hours.

Lemon Pepper Chicken

1/2 pounds of boneless skinless chicken breasts or four large breasts the juice of 1/2 lemon 1
teaspoon freshly ground black pepperPlace chicken in the slow cooker. Squeeze lemon juice over
the chicken. Sprinkle with pepper. Cover and cook on low for 6 to 8 hours. Add more lemon
juice if needed.

Brown Sugar Chicken

2 lbs. boneless chicken pieces1 cup packed brown sugar2/3 cup vinegar1/4 up lemon lime soda2-
3 tablespoons minced garlic2 tablespoons soy sauce1 teaspoon black pepper

Place chicken pieces in your slow cooker. Combine remaining ingredients and pour over the top
of chicken. Cover and cook on low for 6 to 8 hours. Serve with rice. Yields 4 servings.

Cheesy Crock-Pot Chicken

6 chicken breast (boneless, skinless)


garlic powder
2 cans cream of chicken soup
1 can cheddar cheese soup

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour
over chicken in a crockpot. Cook on low all day. Serve over rice or noodles.

Crockpot Lasagna

1 box rigatoni, cooked


1 1/2 lbs. ground chuck, browned & drained
1 lg. pkg. sliced pepperoni
1 green pepper, chopped
2 lg. pkgs. Mozzarella cheese
2 lg. cans pizza sauce
1 med. onion, chopped
2 lg. cans mushrooms
Green olives, sliced

Begin with layer of sauce on bottom of crockpot. Stir all remaining ingredients together. Place in
crockpot and cook on low for 5 hours

Lois' Corn-Potato Chowder

6 slices of crisp bacon, crumbled


4 med. potatoes, peeled and diced
1/2 c. minced onions, chopped
1 (16 oz.) can cream corn
2 cans (13 3/4 oz.) chicken broth
1 tsp. salt
1/4 tsp. pepper
1 can evaporated milk

Place all ingredients, except milk in a crockpot. Cover and cook on low for 10 to 12 hours. Add
milk and cook covered for 1 hour. OR: Place all ingredients except milk in Dutch oven. Cover
and simmer 1 1/2 to 2 hours, until potatoes are tender. Add milk and cook covered until milk is
warmed up. Makes 2 quarts (best when leftover).

Crockpot Red Beans and Rice Recipe

1 ham bone, with meat, or ham hocks


1 pound small dried red beans, soaked overnight and drained
1 onion -- chopped
3 cloves garlic -- minced
salt and pepper -- to taste
6 cups hot cooked rice
1 cup chopped green onions

Place beans in bottom of crockpot and add remaining ingredients, except rice and green onions,
with 1 1/2 quarts water. Cover and cook on high 2 hours. Turn heat to low and cook, covered, 10
to 12 hours. Remove ham bone and mash some of the beans against the side of the pot to thicken
the remaining liquid. Remove meat from bone and return meat to pot. Season with salt and
pepper and serve with rice, topped with chopped green onions.
Crockpot red beans and rice recipe serves 6.

Crockpot Rice Pudding

2 1/2 c. cooked rice


1 1/2 c. scalded milk
2/3 c. white or brown sugar
3 eggs, beaten
1 tsp. salt
2 tbsp. vanilla
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. raisins
3 tbsp. soft butter

Combine all ingredients. Pour into lightly greased crockpot. Cook on high 1 to 2 hours. Stir
during first 30 minutes. Recipe can be doubled.

Crockpot Beef Stroganoff

1 1/2 lbs. round steak


4 tbsp. margarine
2 cans cream of mushroom soup
1 tsp. paprika
1 c. onion, chopped
1/2 c. water
1 c. sour cream

Cube round steak. Put steak in crockpot with remaining ingredients. Salt and pepper to taste.
Cook on high 1 hour then low 4 to 6 hours. Serve with noodles, rice or mashed potatoes.

Crockpot German Potato Salad

2 potatoes, sliced
1/2 c. onions, copped
1/2 c. celery sliced
1/4 c. green peppers, diced
1/4 c. vinegar
1/4 c. oil
Chopped parsley
Sliced bacon, cooked and crumbled

Combine all ingredients except parsley and bacon. Add salt and pepper to taste. Stir and cook for
5-6 hours in crockpot. Add sugar if needed. Garnish with bacon and parsley.

Pork Chops In Crock Pot

1/2 c. chopped onions


2 tbsp. oil
1/2 clove garlic, minced
1 tbsp. Worcestershire sauce
1/2 tsp. chili powder
3/4 c. water
3/4 c. ketchup
Salt and pepper

Cook onions in oil until lightly brown. Add other ingredients. Cover and simmer about 20
minutes. Put pork chops in crockpot and cook 8-10 hours with sauce. Serve hot.
