G7 and Db7 share the same 3rd and 7th. The 3rd and 7th are what define a dominant chord,
Tritone Substitution so because they share the 3rd and 7th, they are interchangeable.
Db also pulls strongly towards C because it is a half step away.
So subV7 has a strong tendency to resolve back to the I chord.
