Mole
the origin of mole: Puebla and Oaxaca. The
best-known moles are native to these two
states, but other regions in Mexico also make
various types of mole sauces. Moles come in
various flavors and ingredients, with chili
peppers as the common ingredient.
tamales
Tamales originated in Mesoamerica as early
as 8000 to 5000 BC. The preparation of
tamales is likely to have spread from the
indigenous cultures in Guatemala and
Mexico to the rest of Latin America. Tamales
is consumed at home mainly on the
weekend, 51% of the time it is during
breakfast and 45% at dinner.
tacos
Tacos are thought to come from Mexico, long before
the Spanish arrived. Ancient Mexicans used freshly
made, soft, flat corn tortillas and gave them with
fillings like fish and cooked organs. It was a staple
meal that provided vital nutrients and energy to those
who consumed it.
The taco as we know it today is a blend of ancient
Mexican recipes and International influences.
However, before it was known in America, natives in
Mexico were eating a version that looked quite
different.
Pozole The pozole recipe comes from pre-
Hispanic times, so its current recipe is a
mix of Mexican, European and Asian
ingredients. In pre-Columbian times it was
made from the meat of an animal that the
indigenous people raised as a source of
meat.
chilaquiles
Chilaquiles are a traditional Mexican dish dating back centuries to
the early Aztecs. The word chilaquiles (pronunced: [tʃilaˈkiles] or
chee-lah-kee-lehs) derives from an ancient word in the Aztec
Nahuatl language meaning “chilis and greens.” The Nahuatl
language originated in Central Mexico and can still be heard
spoken today in some regional communities. The tradition of
preparing chilaquiles has existed for hundreds of years. As such,
they are a very common meal for many Mexican families.
Chilaquiles are said to have been first brought to America in a
cookbook by Encarnación Pinedo, “The Spanish Cook” in 1898.
