What is fanesca? Easter

Fanesca is a delicious Ecuadorian soup that contains fresh tender grains and
dried fish, specifically, cod. Given the variety of grains that exist in the Andes,
fanesca is prepared with up to 12 types of grains, in honor of the twelve apostles.
Some of the fresh grains that are used to cook this delicious dish are: peas, corn,
broad beans, chochos, lentils, beans, mote, mellocos, among others.

It is important to clarify that there is no strict recipe to follow when preparing this
dish, that is, there are many variations in the preparation of fanesca. People
usually cook it depending on their tastes and adding their personal touch.
Although fanesca is not an extremely difficult dish to make, it does require time
and dedication. Hence, families usually get together to prepare it together, a fact
that awakens a sense of unity and community.

What is fanesca usually served with?
Once made, the fanesca is usually decorated with pieces of cod, slices of hard-
boiled egg, fried ripe plantains, empanadas de viento, fried dough, fresh cheese,
white onions, chochos, red chili juliennes, parsley leaves and/or avocado. This is
usually eaten additionally with chili criollo. These accompaniments further
beautify and enrich the fanesca dish and make each bite an extremely pleasant
experience.

What is the fanesca accompanied with?
If you think that's all, you're wrong. Before or after eating fanesca, people usually
enjoy a delicious molo , which is an Ecuadorian-style mashed potato served on
a lettuce leaf and decorated with slices of hard-boiled egg, cheese and white
onion; and, as a dessert, the fanesca is accompanied with a delicious rice
pudding or figs with cheese.
