Ingredients
2 onions, quartered
3 carrots, chopped
3 celery stalks, chopped
1 leek, chopped
4 cloves garlic, smashed
1 bay leaf
6 cups water
Salt and pepper to taste

Procedure
In a large pot, combine quartered onions, chopped carrots, celery stalks, chopped leek,
smashed garlic cloves, and a bay leaf.
Pour in water and season with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat and simmer for 45 minutes to an hour,
allowing the flavors to meld.
Strain the stock, discarding the solids, and set aside for later use.

velvety texture and rich taste.

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 cans (28 ounces each) diced tomatoes
1 tablespoon tomato paste
2 cups vegetable stock (from the above recipe)
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 cup heavy cream
Salt and pepper to taste

Procedure

Procedure
