BAK GUA (Sweet Meat) Adeline’s Recipe

1 kg minced pork / chicken


3 Tbsp fish sauce
13 oz sugar
½ tsp five spice powder
½ tsp pepper
1 Tbsp cooking oil
1 Tbsp brandy / rose wine
5 Tbsp soya sauce
1/8 tsp red food colouring (optional)
1 Tbsp chilli powder (totally optional)
1 tsp salt
1 tsp oyster sauce

(A) Mix and Marinate meat with above seasoning. Leave in the fridge overnight. Mix
thoroughly until well blended (sticky to touch) – approximately 15 minutes.
(B) Grease a few baking trays (large pizza trays) with cooking oil.
(C) Divide meat into four portions and press meat on to trays evenly. Make sure there is no
hole.
(D) Bake in over at 170°C until cooked. Remove and cut into square pieces.
(E) Grill / bbq

Put in over (80°C, 5 mins) until you can cut into small pieces.
