TASK SHEET No.

Title: Pizza

Performance Objective: Given the tools, you should be able to prepare


Pizza by following the standard recipe and
enterprise practices.

Supplies/Materials:

Pizza Crust
1 teaspoon active dry yeast
pinch of sugar
2/3 cup warm water
2 cups all purpose flour
1 teaspoon sea salt
1 tablespoon olive oil
Pizza Sauce
8 ripe tomatoes
salt, pepper
thyme and rosemary
2 tablespoons olive oil
1 clove garlic
Pizza Toppings
4 pieces of longganisa or chorizo de bilbao
your crust
your sauce
1 cup (eyeball it) of shredded mozzarella cheese
12-15 quail eggs
1 large onion, cut into rings
salt, pepper
1 tablespoon of cornmeal or breadcrumbs

Equipment : Oven, Mixer with whisk attachment

Steps/Procedure:

1. Preheat oven to 500 degrees (or highest setting). While you’re


waiting for the oven to heat up, cut the longganisa into small bits
and pan fry until slightly brown. Set on a plate to cool.
2. In a pizza pan, sprinkle cornmeal or breadcrumbs. Lay the pizza
dough on top and stretch to the edges of the pan. Spread your
tomato sauce over the dough.
3. Sprinkle half of your cheese on top of your tomato sauce, then put
your longganisa (or chorizo) on top of the cheese. Place cracked
quail eggs on top of the meat, then the onion rings on top of your
eggs.
4. Sprinkle the remaining cheese on top of everything and bake for 10
minutes, or until the crust has browned.
5. Slice and serve hot.
