Mango Potato Curry Recipe

Ingredients
 2 Mangos
 New potatoes
 1 tin Low fat coconut milk
 2 onions, diced
 Garlic
 Fresh ginger (optional)
 Turmeric powder
 Cumin Powder
 Peas
 Spinach

1. Boil/steam/microwave potatoes until just cooked. Once they’ve cooled a bit, cook in
oven with a bit of oil and salt until they a crispy and cooked through.
2. While the potatoes are cooking, make the sauce. Start by frying onions in a few
tablespoons of oil until just turning brown, about 10 minutes. Then add garlic and
ginger if using and fry for about 2 mins. Then add Turmeric, Cumin, a pinch of salt,
and pinch of sugar and fry for anther 2 minutes. Add the coconut milk and simmer
until it has thickened slightly.
3. Peel Mango and slice into bite sized chunks, any juice that come out from this
process can be added to the sauce.
4. Add mango, potatoes, and peas to the sauce and cook for about 5 minutes, or until
peas are cooked through.
5. Add spinach and cook until wilted down, about a minute.
6. Serve with rice and naan!
