The Origin of Carbonara
Carbonara, among Rome's four classic pastas, holds a special place in the hearts of pasta lovers worldwide.
It's not only a staple in Italian cuisine but has also inspired various iterations globally, from ramen to pizza
flavors. Despite being a subject of debate regarding its authenticity, the traditional carbonara recipe is quite
simple: a luscious sauce comprising eggs and pecorino, enveloping spaghetti and savory guanciale, topped
with a sprinkle of black pepper.

The origins of this dish, Carbonara, are subject to debate, much like its recipe. Various theories suggest its
roots, with one focusing on its name, possibly derived from the Italian word 'carbonaro,' meaning charcoal
burner, or 'carbone,' which means charcoal. This connection leads some historians to propose that the dish
was first prepared by Italian charcoal workers known as 'carbonari' in the Apennine mountains between Lazio
and Abruzzo. Another theory suggests the name comes from the ground black pepper in the recipe,
resembling coal dust, leading to nicknames like "coal miners' spaghetti" in certain parts of America.

How did we come up as The Apennine?


While brainstorming ideas, we decided to use the internet to find some resources about carbonara. The first
thing that comes to our mind is the history of it, as the stall name should be connected to our product. As
states in the history, the carbonara was first prepared by Italian charcoal workers known as ‘carbonari’ and
they cooked it in the Apennine mountains. This is where we picked the name, The Apennine.

Objectives
 To create a high quality carbonara recipe that stands out in the market, potentially incorporating unique
ingredients or techniques
 To develop a strong brand identity, emphasizing the authenticity, quality, and any unique selling points to
attract the target customers. Our target customers are the students who loves pasta and shake
beverages.
 To implement marketing strategies to raise awareness of our product,
 To achieve feedbacks from the customers and incorporate it to our product to continously improved the
recipe based on the timely preferences

Recipes
A. Classic Carbonara

Ingredients:
Chicken Strips
Garlic (diced)
Onion (sliced)
Cheese (grated)
All-purpose cream
Evaporated Milk
Macaroni Pasta
Salt and pepper to taste
Cornstarch
Procedure:
1. Boil the pasta and the chicken in separate pots. Set aside when done.
2. For the sauce, saute the garlic and onion until golden brown.
3. Then add the chicken strips.
4. If the chicken strips is already golden, add the all-purpose cream and evaporated milk. Let it simmer for 15-
20mins.
5. Then add 1 1/2 tbsp of cornstarch, 2 tbsp of salt and pepper to taste. Let it simmer again for 15-20mins.
6. Add the cheese into the sauce and stir it carefully.
7. Once the cheese melted, add the pasta and mix. Serve it while hot.

B. Tuna Carbonara

Ingredients:
Tuna (1 spicy flavor, 1 classic flavor; strained)
Garlic (diced)
Onion (sliced)
Cheese (grated)
All-purpose cream
Evaporated Milk
Macaroni Pasta
Salt and pepper to taste

Procedure:

1. Boil the pasta in the pot. Set aside when done.


2. For the sauce, saute the garlic and onion until golden brown.
3. Then add the tuna. Saute until golden brown.
4. Add the all-purpose cream and evaporated milk. Let it simmer for 15-20mins.
5. Then add 1 1/2 tbsp of cornstarch, 2tbsp of salt and pepper to taste. Let it simmer again for 15-20mins.
6. Add the cheese into the sauce and stir it carefully.
7. Once the cheese melted, add the pasta and mix. Serve it while hot.

C. Garlic Bread

Ingredients:
Bread
Salted Butter
Garlic (minced)
Parsley (optional)
Black Pepper

Procedure:

1. Mix the minced garlic and butter.


2. Chop herbs if available and add to the butter mixture.
3. Then slice a bread and apply the butter mixture.
4. Toast the bread, medium-low heat until it turns golden brown.
5. Serve alongside with carbonara recipe.

D. Chicken Nuggets
Ingredients:

Chicken Breasts
Flour
Breading Mix
Eggs (beaten)
Breadcrumbs

Procedure:

1. Cut the chicken into nugget-sized pieces.


2. Mix the flour and breading mix.
3. Beat 2 eggs in another bowl and place breadcrumbs on a separate bowl.
4. Dip each chicken piece into the flour mixture, then into eggs, and coat in breadcrumbs.
5. Fry until golden brown and crispy.
6. Serve with dipping sauce.
