How to make

Rawon
Rawon is one of the special culinary of East Java that has been in Indonesia for a long time.
Many Indonesians and foreign people like this dish with its authentic taste and unique
appearance. It is estimated that this rawon already existed in Indonesia in the 10th century.
The dark black sauce that comes from the fruit of keluak or kluwek plus beef makes this dish
even more delicious. Here are the ingredients and how to make the dish. So you can make it
at home and serve it to your family!

Ground Spices :
Main Ingredients
: :
• 6 candlenut
• ½ tsp peppers
• 500 gr beef
• A pinch of cumin
• 2 pieces of chayote
• 8 pangium (peel the skin, take the contents)
• Salt (according to taste)
• 1 galangal root
• Sugar (according to taste)
• 2 stalks lemongrass
• MSG (according to taste)
• 1 ginger root
• 1 pack of beef broth
• ½ tsp corianders
• 1 liter of water
• 4 kaffir lime leaves
• 5 stalks spring onion
• ½ (or 1 cm) of turmeric root
• Vegetables oil
• 8 clove of shallot (peeled)
• 7 clove of garlic (peeled)
• 1 large red chili
Complement Ingredients :

Tools :
• Toge
• Crackers • Large pot (for making Rawon)
• Sambal (chilli sauce) • Wok (for stir-fry the spices)
• Salted egg • Stove (medium heat)
• Fried onions • Ladle
• hite rice • Knife
• Cutting board

Step by step :

1. Prepare the ingredients and spices needed.


2. Wash the beef, then boil until tender for 30 minutes in medium heat.
3. While waiting for the meat to become tender, we prepare the spices. Shallots, garlic, coriander,
candlenuts, pepper, ginger, turmeric, cumin, pangium.
4. Peel the chayote and cut into cubes.
5. Once the meat is tender, remove from heat and set aside. Then cut into pieces according to taste.
6. After the meat has been cut into pieces, put it back into the water that the meat was previously boiled
and add the chayote along with the meat.
7. Turn the heat back on, and boil again until tender.
8. Back to spices. After the spices are finely ground, we prepare a frying pan and pour enough oil, then fry.
9. When stir-frying, add the lime leaves, lemongrass, galangal and green onions to the stir-fry spices.
Saute everything until fragrant.
10. Add the stir-fry spices to the boiled meat and chayote
11. Stir everything until smooth, then boil until boiling.
12. Rawon is ready to be served.
13. Serve with a sprinkling of fried onions, toge, chili sauce, crackers, and a salted egg
