Topic: Pickling Cucumber

Food Processing – is the transformation of raw ingredient into food into


forms, food processing typically take clean harvested crops of butcher animals
products and used these to produce attractive marketable and often long self-
food products.

Pickling – Pickle originated in India where is it called the Achar the English
term Pickle comes from the Dutch word “Pekel” which refers the brine – is the
preserving or extending the shelf life of food brine or immersion in vinegar
was used to preserve food for out of season use for long journey especially by
the sea.

Pickled Cucumber

Ingredients:

1 cup water

1/3 cup vinegar

2 tablespoons sugar

1-2 teaspoon salt

2 cups sliced cucumber

½ cup sliced onion or green onion

Additional Vegetable (bell pepper, whole tomatoes)

Procedure:

1. In a small bowl add the water ,vinegar, sugar and salt


2. Stir to combine until the sugar and salt has dissolved
3. Add the cucumber and onion
4. Taste and adjust the ingredients to your liking.
5. All the cucumber should be covered in the brine if you have lots
cucumber make a more brine.
6. Let the mixture rest in the fridge until is ready to eat the flavor over
time so on overnight soak is great.
