Fig Newtons are sneaky little boogers. They are one of those snacks that claim to be “good for you” but are
also coincidentally placed in the cookie isle. Oh hell no. Those two just don’t mix. So next time you’re
meandering down that isle of all the snickity snacks made from food-like ingredients, but not actual food,
just remember this post. You will thank me. Yes you will.

My mom once again said these Fig Newton knockoffs were one of the best things I’ve ever made. I think
she just has a sugar problem and gets cranky when there are no treats in the house. So then when I make
some, she automatically thinks whatever it is is some kind of gift from God. I could probably put a pile of
dirt covered in chocolate on a plate and she would love it. Okay that’s a lie. Sort of. The addiction is real
people.

Have you guys read this article? I died. Literally died. It’s so true. And so me. My life in a literal nutshell. I
don’t really know what that statement means. But I think this is an appropriate use of it.

So I want to talk to you guys about SR Bars. We have discussed this before.
I am a bar lover. Make something into bar form and I automatically love it. And you. SR Bars is a new

company in the paleo world, and I got to try some of their stuff recently. They have flavors like Walnut
Apple Pie (my favorite) and Mint Chocolate Chip. Holy crap you guys they are good. And they have protein!
I’m Taylor, a 21 year old modern day cavegirl. Just
PROTEIN. You can never find bars with protein that don’t taste like cardboard and sawdust. Am I right? Yes
kidding. But I do like paleo. And baking paleo
I am. As usual. Just kidding. I’m wrong 94.7% of the time. But trust me, I am definitely right on this one. So
desserts. I don’t think cavegirls did that.

Ingredients:

For the filling:


1 cup fresh figs (about 10), stems cut off
1/4 cup honey

1 tsp cinnamon
pinch of sea salt
For the crust:
2 1/2 cups almond flour
1/4 tsp sea salt
1/2 cup honey
1/4 cup maple syrup
1/4 cup almond butter
2 tbsp coconut oil, melted
1 tsp vanilla
Directions:

1. Preheat oven to 350.


2. To make the crust, combine almond flour and salt in a medium sized bowl.
3. Combine wet ingredients in a large bowl.
4. Slowly add dry ingredients to wet, stirring well until a dough is formed.
5. Chill dough in refrigerator for about an hour.
6. While dough is chilling, prepare your filling. In a food processor, combine all filling ingredients until a
thick gel forms (it’s okay to leave som chunks!)
7. Place filling in fridge to chill.
8. After an hour, remove dough from refrigerator and separate into 5 equal parts.
9. Taking each part separately, roll out dough into a rectangle shape (about 5 inches wide and 1/4 inch
thick) between two pieces of parchment paper. Cut off rounded edges as needed to create a
symmetrical rectangle (Just add the extra edges back to the rest of the dough!)
10. Spoon 1/5 of filling evenly onto one side of the dough (lengthwise), leaving a bit of an edge for when
you flip the other side over.
11. Carefully take the non-filling edge and flip over lengthwise.
12. Use your fingers to press dough together where the two edges meet, creating a seam.
13. Place on baking sheet lined with parchment paper and repeat with remaining sections of dough.
14. Bake for 20-25 minutes.
15. Remove from oven and allow to cool for 10 minutes before removing to wire rack.
16. Once completely cool, cut into 2 inch pieces.
17. Enjoy!

AHH I love fig newtons!!! I remember hating them as a kid because they were tje “healthy
cookie” and what kid wants a healthy cookie! Now they are my favorite! I have a hard time
finding fresh figs where I live but will definitely have to try this recipe!

I found some organic dried figs on http://www.vitacost.com and will soak them in water for
12 hours before using in this recipe. Thanks for sharing!!
