Adriana Lima: Chocolate and Coconut Cake

When Adriana Lima isn't training hard to rock it on the runway, she
indulges her sweet tooth with her favorite ever dessert – chocolate and
coconut cake. Adriana admitted to reporters that she's "crazy for coconut."
If you also love this tropical ingredient, you'll go crazy for this soft and
moist cake too!
Servings: 6-8
Total Time: 2hours 50mins
Ingredients:
Cake:
¾ cup all-purpose flour
½ cup cocoa powder
1 tsp baking powder
¼ tsp salt
¾ cup unsweetened shredded coconut
1 cup granulated sugar
2 large eggs
½ cup canola oil
1 cup coconut cream
½ tsp vanilla essence

Ganache:
4½ ounces semi-sweet chocolate (chopped)
½ cup coconut cream

Directions:
1. Preheat the main oven to 350F. Grease an 8” square baking tin.
2. Add the flour, cocoa powder, baking powder, and salt to a bowl – stir to
combine then add the shredded coconut.
3. In a second bowl, whisk the sugar and eggs together. Next, add the
canola oil, coconut cream, and vanilla essence and continue to whisk until
combined.
4. Fold the dry ingredients into the wet ingredients until incorporated.
5. Pour the batter into the prepared pan and bake in the oven for 30-35
minutes until set in the center.
6. Take the cake out of the oven and allow to cool completely.
7. Prepare the ganache. Add the chopped chocolate and coconut cream to a
heatproof bowl and melt in the microwave in short bursts, stir until silky
and combined.
8. Pour the ganache over the cooled cake. Chill the cake for one hour until
the ganache is set.
Amy Grant: Grandma Zell’s Pecan Cookies

These cookies are a family tradition for Grammy-winning, Queen of


Christian Pop, Amy Grant. When Amy isn't singing or songwriting, she is a
keen baker, and these Pecan Cookies are a sweet treat that she learned to
bake with her Grandmother Zell.
Servings: 48
Total Time: 30mins
Ingredients:
2½ cups packed brown sugar
1 cup butter (softened)
2 eggs
1 tsp vanilla essence
½ tsp baking soda
½ tsp salt
2½ cups all-purpose flour (sifted)
1½ cup pecans (chopped)
Directions:
1. Preheat the main oven to 350 degrees F.
2. Using a mixer, cream the sugar and butter until fluffy.
3. Add the eggs, vanilla essence, baking soda, and salt. Gradually add the
flour and mix until incorporated. Fold in the pecans.
4. Using clean hands, form the dough into even, large marble size balls.
5. Arrange the balls on a parchment-lined cookie sheet. Space the balls 2"
apart from one another.
6. Bake in the oven for 10-12 minutes until golden.
7. Take out of the oven and allow to cool slightly before place on a wire
baking rack to cool completely.
8. Enjoy.
Amy Schumer: Peanut Butter Cup Cookies

During the lockdown, comedian Amy and chef, husband Chris got baking,
and these dreamy Peanut Butter Cup Cookies are the scrumptious result.
Servings: 12

Ingredients:
Cookie Dough:
1 cup granulated sugar
1 large egg
8 tbsp unsalted butter (room temperature)
2 cups all-purpose flour
1 tsp bicarb of soda
1 tsp kosher salt

Peanut Butter Cups:


2 cups chocolate chips
½ cup milk
½ cup smooth peanut butter
½ cup powdered sugar
Sea salt (to sprinkle, optional)

Directions:
1. For the cookie dough, in a bowl, whisk the granulated sugar with the egg
and unsalted butter.
2. In a second bowl, sift in the flour, bicarbonate of soda, and kosher salt.
3. Add the contents of the first bowl to the second bowl, and using a
wooden spoon, stir thoroughly to create dough. Wrap the dough in kitchen
wrap and transfer it to the refrigerator until needed.
4. For the peanut butter cups: Using a double boiler set up, melt together the
choc chips and milk. Take off the heat and set to one side.
5. In a small bowl, using a fork, whisk the peanut butter with the powdered
sugar.
6. Dollop small circles of the mixture into a 12-cup muffin tin. Use only
half of the chocolate mixture.
7. Drop a scant teaspoon of the peanut butter on top of the chocolate
mixture in the muffin cups.
8. Spoon the remaining chocolate over the peanut butter mixture.
9. Transfer to the fridge to firm and set.
10. Preheat the main oven to 375 degrees F.
11. Take the cookie dough out of the fridge and make golf ball-size cookie
balls.
12. Space the balls evenly oat onto a cookie sheet, pressing them gently to
flatten slightly.
13. Press a peanut butter cup in the middle of each cookie. Scatter over a
sprinkling of sea salt.
14. Bake in the preheated oven for 7-8 minutes before checking the cooking
progress. Rotate the cookie sheet if needed. Take out of the oven when the
cookie's edges are brown, and creases are starting to form. The total time
for this step is around 10 minutes, depending on your oven.
Arnold Schwarzenegger: Austrian Apple
Strudel

The former Californian governor doesn’t mind admitting that his grandma’s
Apple Strudel is one of his favorite dessert recipes. One thing is for sure
when you serve this typical apple strudel, your family and friends will 'all
be back' for more!
Servings: 4
Total Time: 2hours
Ingredients:
Strudel Pastry:
8¾ ounces flour
1 egg
1 tsp butter
Pinch of salt
3-3½ cups cold water (as needed)
Flour (to dust)

Filling:
14 apples (peeled, cored and cut into chunks)

Splash of fresh lemon juice


1¾ ounces raisins
3½ ounces ground almonds
Dash of rum
2 tbsp butter
6 tbsp breadcrumbs
1 tbsp icing sugar
Pinch of cinnamon
1 egg (beaten, to glaze)

Directions:
1. For the pastry: Create a small mound of flour on a lightly dusted clean
work surface. Make a hole in the top and crack in the egg. Add the butter,
salt, and water (as needed). Knead the ingredients quickly to form a smooth
dough and leave undisturbed for approximately 60 minutes at room
temperature.
2. In the meantime, prepare the filling: Add the apple chunks to a bowl.
Drizzle with lemon juice and stir in the raisins and almonds. Add a splash
of rum.
3. In a pan, melt the butter.
4. Toss the breadcrumbs with the icing sugar and cinnamon in the melted
butter.
5. Top the apple mixture with the breadcrumb mixture.
6. Roll the pastry out thinly on a large clean tea towel. It should be possible
to pull it in all directions. Once the pastry is thin, brush it all over with the
melted butter.
7. Spoon the apple filling across ⅔ of the strudel dough. Fold in the sides
and roll up, you can do this with the help of the clean tea towel. Close the
ends to seal.
8. Brush the beaten egg over the strudel's surface and transfer to the
preheated oven for 40-50 minutes until golden.
9. Dust lightly with icing sugar and enjoy warm.
Billy Idol: Soft Baked Chocolate Chip
Cookies

While some musicians’ backstage demands include gummy bears, square


melons, or Champagne, Billy Idol’s guilty pleasure is Soft-Baked Choc
Chip Cookies!
Servings: 12-16
Total Time: 25mins
Ingredients
2¼ cups all-purpose flour
1 tsp cornstarch
1 tsp bicarb of soda
½ tsp salt
¼ tsp baking powder
¾ cup butter (at room temperature)
¾ cup brown sugar
¼ cup granulated sugar
2 eggs
1 tbsp vanilla bean paste
1½ cups mixed chocolate chips (dark and semi-sweet)

Directions:
1. Preheat the main oven to 350 degrees F. Using parchment paper line 2
baking sheets.
2. In a bowl, combine the flour with the cornstarch, bicarb of soda, salt, and
baking powder. Stir well to incorporate.
3. Using an electric mixer beat the butter with both sugars for 3-5 minutes,
or until light and fluffy.
4. Beat in the eggs until combined.
5. Add the vanilla bean paste.
6. On low speed, if using a stand mixer, in two additions, add the flour
mixture. Make sure that it combines into the wet ingredients in between
additions.
7. Use a spatula fold in the chocolate chips.
8. Transfer the dough to the fridge for 15 minutes.
9. Remove from the fridge, quickly in ¼ cups measure the dough out and 2”
apart, drop onto the prepared baking sheet. Aim for 6-8 per baking sheet.
10. Repeat until all the dough is used.
11. Bake in the oven for 10-12 minutes, or until the edges are pale golden
and the top of the cookies are pale.
12. Remove the cookies from the oven and set aside to cool on the baking
sheets for 60-90 seconds. Transfer to a wire rack to completely cool.
13. Serve and enjoy.
Blake Lively: Vegan Choc Chip Cookies

Blake Lively loves all things food, her husband Ryan Reynolds has even
nicknamed their home “The Blakery,” thanks to all of Blake’s delicious
homemade bakes. While filming The Rhythm Section movie, Blake
admitted to starting every day with a yummy Vegan Choc Chip Cookie.
Servings: 12
Total Time: 2hours 20mins
Ingredients:
1 cup oat flour
¼ tsp salt
½ tsp bicarb of soda
¼ cup granulated sugar
½ cup brown sugar
2 tbsp almond milk
¼ tsp vanilla essence
2 tbsp canola oil
⅓ cup vegan-friendly chocolate chips
Directions:
1. Add the flour, salt, bicarb of soda, and sugars to a bowl and combine.
2. Next, add the almond milk, vanilla essence, and canola oil to a second
bowl and combine.
3. Fold the dry ingredients into the wet ingredients until incorporated. If the
dough is too dry, add a splash more milk.
4. Fold in the chocolate chips.
5. Gather the dough together into a ball and chill for 2 hours.
6. Preheat the main oven to 325 degrees F. Grease a cookie sheet.
7. Roll the chilled dough into 12 equally-sized balls and arrange on the
greased cookie sheet.
8. Place in the oven and bake for just over 10 minutes until lightly golden.
9. Allow to cool before serving.
Catherine Zeta-Jones: Welsh Cakes

Now, a member of one of Tinsel Town’s iconic A-list families, this award-
winning actress hails from the small town of Swansea in South Wales.
Welsh Cakes are a traditional sweet treat dating back to the 19th century.
Servings: 8
Total Time: 30mins
Ingredients:
8 ounces self-raising flour

Pinch of sea salt


3½ ounces butter
1¾ ounces caster sugar
1¾ ounces currants
1 egg (beaten with 3 tbsp whole milk)
Caster sugar (to garnish)

Directions:
1. In a bowl, combine the flour with the salt. Rub in the butter.
2. Add 1¾ ounces caster sugar along with the currants and stir thoroughly
to combine.
3. Pour the beaten egg into the bowl and mix to a stiff dough.
4. Roll the dough out on a lightly floured work surface or board to a ¼
“thickness.
5. Using a circular pastry cutter, cut out 8 rounds.
6. Over moderate heat, heat a griddle or cast-iron frying pan until hot and
grease with a knob of butter. To check if the griddle is hot enough, sprinkle
a drop of water on the surface, and if it evaporates into tiny balls, then it's
good to go.
7. Add the cakes to the griddle or pan and cook for 3-4 minutes on each side
until slightly risen and golden.
8. Sprinkle with caster sugar and enjoy.
Celine Dion: Fig and Cherry Galette

Canadian singer Celine Dion is a woman who knows what she wants. And
throughout her Taking Chances 2008 tour, she requested a constant supply
of Bavarian figs, French cherries, and crinkle-free chips. We are sure the
diva would approve of this dinner-party dessert.
Servings: 12
Total Time: 2hours 30mins
Ingredients:
Pastry Dough:
3 tbsp butter
1 cup white whole-wheat flour
1 cup all-purpose flour
1 tbsp sugar
1½ tsp lemon zest (freshly grated)
½ tsp salt
⅔ cups low-fat cream cheese
3 tbsp canola oil
2 tbsp low-fat milk (cold)

Fruit layer:
2 cups dried mixed figs (trimmed and cut lengthwise in halves)
½ cup prunes (pitted and cut in half)
½ cup dried tart cherries
Zest of 1 large orange
¾ cup ruby port
¾ cup water
2 whole cloves

Almond layer:
½ cup blanched almonds
¼ cup all-purpose flour
¼ cup sugar
½ tsp aniseed
Flour (to dust)
2 tbsp milk (to serve)
1 tbsp coarse granulated sugar (to serve)

Directions:
1. For the pastry dough: In a pan over moderate heat, melt the butter.
2. Once the butter starts to bubble, cook while stirring for 2-5 minutes, until
golden.
3. Transfer to a metal bowl and place in the fridge for 25-30 minutes, until
solid.
4. In a food processor, combine the whole-wheat flour with the all-purpose
flour, sugar, lemon zest, and salt. On the pulse setting, mix once or twice.
5. Cut the butter (from Step 3) and cream cheese into pieces, add them to
the processor and process to a coarse meal consistency.
6. Add the canola oil and pulse until the consistency of wet sand.
7. Add the milk and pulse until you have small clumps.
8. Transfer the pastry dough to a piece of parchment paper and press gently
into a ball. Press the ball into an 8" wide disk. Wrap the disk in parchment
paper and place it in the fridge for a minimum of 1 hour before rolling.
9. For the fruit layer: In a nonreactive pan, combine the figs with the prunes
and dried cherries, orange zest, port, water, and cloves. Over high heat bring
to boil before turning the heat down, cover with a lid, and simmering gently
until the fruit is softened, jam-like and reduced to a thick syrup consistency.
This step will take around 30 minutes. If when the fruit is ready, the liquid
is too thin, remove the lid and simmer for an additional few minutes, to
thicken.
10. For the almond layer: In a food processor, combine the almonds with ¼
cup flour, ¼ cup sugar, and aniseed. Process to a fine meal consistency.
11. Next, roll out the pastry: Place a large sheet on parchment paper on a
clean worktop and dust lightly with flour.
12. Place the pastry disk in the middle of the sheet and dust lightly with
flour.
13. Roll the dough out into a 15” circle. If the pastry cracks while you roll,
slowly nudge the cracked part together again, pressing lightly. Dust with
additional flour as necessary and keep the circle even.
14. Preheat the main oven to 375 degrees F.
15. To assemble and bake: Spread the almond mixture evenly over the
pastry, leaving a 2” border clear around the edges.
16. Place the cooked fruit on top. Evenly distribute the figs and cherries, but
make sure that any large figs are in the center. Drizzle up to 2 tablespoons
any leftover syrup from the bowl over the top.
17. Using the parchment paper, lift the edges of the pastry and loosely fold
over the filling. Work in 2-3” sections at a time. The pastry may crack as
your life and fold.
18. Brush the top of the pastry lightly with milk and scatter over 1
tablespoon of sugar.
19. Carefully lift the galette onto the parchment paper and transfer it along
with the paper to a baking sheet. Trim and discard any parchment that is
overhanging.
20. Bake in the oven for 35-40 minutes, until the edges begin to brown.
Halfway through cooking check its progress, and if the crust is golden
brown in place, tent it loosely with aluminum foil to stop it browning.
21. Set the galette aside to cool on the baking sheet for a minimum of 15
minutes.
22. Lift the parchment paper and galette onto a serving platter.
23. With a spatula, lift the galette slightly and carefully slide out the
parchment paper.
24. Serve the galette at room temperature garnished with orange zest.
25. Enjoy.
Dolly Parton: Peanut Butter Pies

If you are working 9 to 5, then there may not be a lot of time to prepare a
sweet dessert. In which case, this recipe will tick all the boxes. Better yet,
these Peanut Butter Pies can be frozen.
Servings: 6-8 (2 pies)
Total Time: 30mins
Ingredients:
1½ cups powdered sugar
1 cup crunch peanut butter
8 ounces cream cheese
16 ounces cool whip
2 graham cracker crust

Directions:
1. In a bowl, combine the powdered sugar with the peanut butter and cream
cheese.
2. Fold in the cool whip.
3. Add the filling into the crusts and place them in the fridge to chill.
Dwayne “The Rock” Johnson: Banana and
Choc Chip Pancakes

It’s no secret that The Rock has an insane body, thanks to his strict diet and
workout regime. Luckily though, he allows himself a crazy cheat meal once
in a while. While his savory meal depends on his mood when it comes to
sweet treats, Dwayne has a clear favorite – Banana and Choc Chip
Pancakes, and he can often be seen on his Instagram posing next to a stack
of this deliciously simple dessert.
Servings: 2-4
Total Time: 30mins
Ingredients:
1½ cups all-purpose flour
1 tbsp baking powder
2 tbsp brown sugar
½ tsp salt
½ tsp ground cinnamon
1 cup whole milk
1 large egg
2 tbsp canola oil
½ tsp vanilla essence
½ tsp cinnamon
1 cup mashed banana
½ cup mini choc chips
Non-stick cooking spray

Directions:
1. Add the flour, baking powder, brown sugar, salt, and cinnamon to a bowl
and stir to combine.
2. In a second bowl, whisk together the milk, egg, canola oil, vanilla
essence, and cinnamon.
3. Fold the wet ingredients into the dry then stir in the mashed banana. Fold
the choc chips into the batter.
4. Heat a griddle pan over moderately high heat and spritz with cooking
spray.
5. Ladle an ⅛ of the pancake batter into the griddle pan and cook for 2-3
minutes on each side until golden. Transfer to a side plate and cook the
remaining batter.
6. Serve warm.
Ed Sheeran: Cookie Dirt Pudding

In typical Ed Sheeran style, the world-renowned singer songwriter’s


favorite dessert is a simple, down to earth Cookie Dirt Pudding. It’s made
by combining layers of silky pudding with crushed cookies and crème
crumbs. It’s the perfect fuss-free dessert for your next movie night or family
dinner.
Servings: 8-10
Total Time: 40mins
Ingredients:
8 ounces cream cheese (at room temperature)
½ cup butter (at room temperature)
1 cup powdered sugar
2 (3½ ounce) boxes vanilla instant pudding mix
3½ cups whole milk (chilled)
12 ounces cool whip
1 pound cookies and crème biscuits (crushed)

Directions:
1. In a bowl, beat together the cream cheese, butter, and powdered sugar.
2. In a second bowl, whisk together the pudding mix and milk until
combined. Fold the cool whip into the vanilla pudding.
3. In large pudding dish, spoon in alternate layers of cream cheese mixture
and vanilla pudding, separating each layer with a generous sprinkling of
biscuit crumbs.
4. Finish the pudding with a layer of biscuit crumbs.
5. Serve straight away or keep chilled until ready to serve.
Freddie Highmore: Lemon Meringue Pie

This star of medical drama, The Good Doctor, first shot to fame in his role
as chef Nigel Slater in British comedy Toast. This recipe for Lemon
Meringue Pie was a point of contention for him and his stepmother, played
by Helena Bonham Carter.
Servings: 6-8
Total Time: 2hours 45mins
Ingredients:
Lemon Curd Filling:
10 whole eggs (whisked lightly)
2½ cups whipping cream
6 ounces caster sugar
1 tbsp lemon rind (finely grated)
1 cup freshly squeezed lemon juice

Crust:
13 ounces plain flour
3½ ounces ground almond meal
4¼ ounces icing sugar
8¾ ounces butter (chilled and chopped)
2 egg yolks

Meringue:
3 egg whites
3½ ounces caster sugar

Directions:
1. For the filling: In a bowl, whisk the eggs with the whipping cream, caster
sugar, lemon rind, and fresh lemon juice until combined. Transfer to the
fridge for 2 hours.
2. For the crust: In mixture fitted with a paddle attachment, mix the flour
with the almond meal, icing sugar, and butter, process to a breadcrumb
consistency.
3. Add the egg yolks and whisk to form a dough.
4. Knead the dough lightly on a clean, lightly floured worktop and continue
to knead it comes out clean on your hands.
5. Roll the dough out to a 0.20” thickness and wrap in kitchen wrap.
Transfer to the fridge for 60 minutes, to rest.
6. On a clean, floured work surface, flatten and roll the pastry to 0.11”
thickness.
7. Butter a circular 4” deep, 11” fluted springform tart tin.
8. Press the dough into the dish and trim off any excess. Transform to the
refrigerator for half an hour to chill and rest.
9. Preheat the main oven to 375 degrees F.
10. Blind bake the tart base with parchment paper and baking beads for 10
minutes.
11. Remove the paper and beads and bake the tart for an additional 8
minutes, until golden.
12. Remove the tart tin from the oven and allow to cool.
13. Spoon the lemon filling into the pastry shell and bake in the oven at 320
degrees F, for 30 minutes, or until the filling is set.
14. Take the tart out of the oven and put aside to cool for 25 minutes.
15. Transfer to the fridge for approximately 2 hours.
16. To prepare the meringue. In a clean, dry bowl, whisk or beat the egg
white until soft peaks begin to form.
17. Next, 1 tablespoonful at a time, add the sugar, allowing the mixer to

touch.
6. Allow the cake to completely cool while you make the frosting.
7. For the frosting: In a pan, without boiling, melt the butter and sugar for
approximately 2 minutes.
8. Stir in the sour cream and return to a boil.
9. Take the pan off the heat and add the powdered sugar and vanilla.
10. Allow the frosting to thicken as it cools.
11. When the frosting is cool, frost the cake.

1. Preheat the main oven to 350 degrees F. Lightly grease a 13x18” sheet
pan.
2. In a pan, melt the butter.
3. Stir in the canned pumpkin puree, cinnamon, fresh nutmeg, and
cardamom.
4. Pour in the boiling water, stir well and put aside to cool.
5. In a second bowl, mix the flour with the sugar and salt and combine
lightly.
6. In a large measuring cup, combine the eggs with the bicarb of soda,
buttermilk, and vanilla essence.
7. Next, add the pumpkin mixture to the flour mixture and stir lightly to
combine.
8. Add the buttermilk mixture and stir until incorporated.
9. Place approximately half of the cake mixture onto a buttered quarter
sheet pan.
10. To the remaining batter, add the cocoa powder, and stir well to combine.
11. Dollop the mixture all over the cake pan, and with a knife, swirl the
batters together.
12. Bake in the preheated oven for 20-22 minutes. The cake is ready when
it springs back when poked. If this does not happen, continue baking for an
additional 1-2 minutes. When sufficiently cooked, set aside to cool.
13. Once the cake is cool, prepare the icing. In a stand mixer and using the
whisk attachment mix the butter with the cream cheese, scraping down the
sides of the bowl a few times.
14. Gradually add the powdered sugar.
15. Next, slowly add the cinnamon, beginning with 1 teaspoon at a time.
Continue adding until you achieve your desired taste.
16. A couple of drops at a time, add the orange food coloring until you
achieve your desired shade of orange.
17. One teaspoon at a time, drizzle in the milk, until it is easy to spread.
18. Set half of the mixture aside.
19. To the remaining batter, add ¼ cup of cocoa powder, and stir well to
combine, adding more milk as needed.
20. Spread the mixture in alternating tiger stripes onto the cooled cake.
21. Scatter with sprinkles and place in the fridge until ready to serve.

edges to seal. Cut a few slits in the top of the pie.
5. Brush the pastry with the egg white then sprinkle over a pinch of sugar.

for another 25 minutes until golden.

3. Divide the dough into 3 even-size balls, and flatten each ball into a disc.
4. Wrap each disco in kitchen wrap and transfer to the fridge while you
prepare the fillings.
5. For the filling: In a 12" nonstick skillet over medium heat, heat the butter.
Once it stops foaming, add the cherries along with ¾ cup of sugar and bring
simmer while stirring until the sugar is entirely dissolved. Continue to
simmer until the cherries are bite-tender, but not falling apart. This step will
take around 8 minutes.
6. In a small bowl, stir the water with the cornstarch to create a thick paste.
7. Stir the slurry into the filling and bring boil while frequently stirring for 2
minutes. Set aside to cool a little.
8. Preheat the oven to 375 degrees F.
9. Roll one disc of the dough out into an 11" round.
10. Place the round into a 9” pie plate.
11. Spread the filling into the shell and weave a few strips of pastry over the
top to create a lattice design. Trim the crust.
12. Bake in the oven until golden and the filling bubbles, this will take 60
minutes.
13. Remove from the oven cook the pan completely on a rack. For 1-2
hours. This will permit the juices to thicken.
14. Serve and enjoy.

the flour. For the final addition, take the bowl from the mixer and using a

not to over-mix.

8. For the frosting: Again, using the stand mixer and paddle attachment on
moderate-high speed, cream the butter with the sugar and salt, until

and stir in the honey until it dissolves. Set aside to steep for 15 minutes.

3. Take the tea bags out of the saucepan along with the cardamom, then
return the pan to the heat. Add the rum/gelatin mixture to the pan and stir
until the gelatin dissolves.
4. Pour the mixture into 4 ramekins and chill for 3-4 hours until set before

baking pans.
3. Bake the cakes in the preheated oven for 25-35 minutes, or until springy
to the touch. Set aside to cool.
4. In a bowl, beat or whisk the milk along with the vanilla pudding mix for
approx. 2 minutes. Set aside to stand for 2-3 minutes, until soft-set. Cover
the bowl and place in the fridge.
5. In a pan, melt the chocolate along with the butter over moderately low
heat, stirring until silky smooth.
6. Next, stir in the powdered sugar, vanilla essence, and sufficient hot water
to create a thick glaze. Put aside.
7. To assemble the pie: Place one cake layer on a platter and spread with the
pudding mixture. Place a second cake layer over the pudding. Spoon with
chocolate glaze and allowing the glaze to drip down the perimeter of the

Chocolate Ice Cream. You don’t need to be a vegan like Miley to enjoy this
light and refreshing homemade ice cream.

Total Time: 10hours 10mins
Ingredients:
¾ cup water
1¼ cups lite coconut milk
⅔ cup cane sugar
⅔ cup unsweetened cocoa powder
¼ tsp sea salt
6 ounces vegan dark chocolate (chopped)
½ tsp vanilla essence

Directions:
1. Transfer the bowl of your ice cream churner to the freezer to chill
overnight.
2. The same day, prepare the ice cream base. To a large saucepan, add the
water, coconut milk, cane sugar, cocoa powder, and salt. Whisk to combine
and place over moderately high heat, bring to a gentle boil while continuing
to whisk for approximately 60 seconds.
3. Take off the heat and add the chopped chocolate and vanilla essence.
Whisk the mixture until the chocolate has melted.
4. Transfer the mixture to a bowl and chill in the refrigerator for 2 hours
until cool.
5. Scoop the cool ice cream into the chilled ice cream churner bowl and
process using manufacturer instructions. Churn the ice cream until it is the
consistency of soft-serve, then return to the bowl and freeze overnight
before serving.
Mindy Kaling: Jelly Donuts

While on the Ellen Show, Mindy Kaling shared that she couldn’t get
enough of Jelly Donuts while pregnant with her first child. If you love
donuts as much as professional comedian Mindy, then get making a batch
on your own at home!

Ingredients:
2 (¼ ounce) sachets active dry yeast

½ cup warm water


½ cup warm skim milk
1⅓ cups granulated sugar
⅓ cup butter (at room temperature)
Yolks of 3 large eggs (at room temperature)
1 tsp salt
3¾ cups all-purpose flour
3 tbsp fruit jelly
White of 1 large egg (beaten)
Oil (for deep frying)

Directions:
1. Dissolve the yeast in the warm water in a small bowl. Set to one side.
2. In a large bowl, beat together the skim milk, ⅓ cup sugar, butter, egg
yolks, salt, 3 cups flour, and the yeast mixture until combined.
3. Add more flour, if necessary, until the dough is soft.
4. Transfer the dough to a greased bowl, turn the dough over and then cover
with a clean towel, set aside for 45 minutes in a warm place until double the
size.
5. Punch the dough down and then transfer to a lightly floured worktop.
Knead approximately 10 times then divide the dough into two portions.
Roll each portion into a ¼” thick sheet. Using a 2½” round biscuit cutter,
cut circles out of the dough.
6. Spoon ½ tsp jelly onto the center of half of the circles, brush the
perimeter of the dough circle with beaten egg white. Top with the remaining
dough circles and press down gently on the edges of the dough to seal.
7. Transfer the donuts to a greased baking sheet, cover, and set aside to rise
for 45 minutes until double inside.
8. Heat oil in a deep fat fryer to 375 degrees F. In batches, lower the donuts
into the hot oil and fry for 1-2 minutes on each side until golden.
9. Take out of the oil and set aside on a plate covered with kitchen paper.
10. Cook the remaining donuts.
11. Roll the cooked donuts in the remaining sugar while still warm.
Nicole Kidman: Rice Pudding

Although born in Hawaii, this famous and talented actress says that creamy
Rice Pudding reminds her of her childhood, growing up in Australia.

Ingredients:
2 cups water
Pinch of salt
¼ cup Arborio rice
3 eggs
⅓ cup sugar
1 tbsp vanilla essence
¼ cup sultanas
2½ cups milk

Directions:
1. Preheat the main oven to 350 degrees F.
2. In a pan, bring the water and salt to boil.
3. Gradually add the rice to the boiling water and uncovered, boil rapidly
for 10 minutes. Drain the rice.
4. In a bowl, beat the eggs with the sugar and vanilla essence.
5. Add the drained rice to the egg mixture, followed by the sultanas.
6. Slowly pour in the milk and stir gradually to combine.
7. Pour the mixture into a shallow casserole or ovenproof dish.
Place the dish in a baking tin.
8. Pour sufficient water into the pan to fill halfway up the baking dish.
Bake the pudding in the oven at 350-375 degrees F for 30-35 minutes.
9. Stir the rice with a fork; this will prevent a skin from forming.
Turn the heat down to 320 degrees F and bake for an additional 30-40
minutes, until the custard is set.
Peter Weber: Arroz con Leche

Season 24’s Bachelor, Peter Weber, loves Arroz con Leche, a type of rice
pudding. Not traditional rice pudding, though, this Mexican version is
flavored with cinnamon and vanilla and can be served either warm or cold.

Ingredients
1¾ cups water
¾ cup white rice
1 cinnamon stick
2 cups milk (divided)
⅓ cup sugar
¼ tsp salt
1 tbsp butter
½ tbsp. vanilla essence
Ground cinnamon (to taste)
Directions:
1. For the rice, bring the water to boil. Add the rice, turn the heat down to
low, cover with a lid, and cook for 20 minutes.
2. In the meantime, in a pan, soak the cinnamon stick in 1 cup of milk.
Reduce the heat to low.
3. Next, add the sugar followed by the salt and cook for 10 minutes, while
regularly stirring.
4. Add the butter and stir thoroughly to incorporate.
5. Pour in the remaining milk and add the vanilla essence. Stir well to
combine.
6. Continue to cook over low heat for 2 minutes.
7. Turn off the heat and cover with a lid.
8. Set aside to rest for 5 minutes.
9. Dust the pudding with the cinnamon. Serve either warm or cold.

will see her tucking into this classic dessert named after Russian ballet
dancer, Anna Pavlova. Rebel is now on a strict weight loss and fitness

Meringue:
1 tsp cornstarch
4 large egg whites (room temperature)
1 cup sugar
1 tsp white vinegar
1 tsp vanilla essence

Cream Layer:
1 cup heavy whipping cream
1 tsp vanilla essence
2 tbsp sugar
1 pint fresh strawberries (rinsed and hulled)
2 fresh medium kiwifruits (peeled and sliced or chopped)

Glaze:
¼ cup sugar
¼ cup water
1½ tsp cornstarch

Directions:
1. Add the egg whites to a bowl and set aside at room temperature for half
an hour.
2. Beat the egg whites until soft peaks begin to form.
3. A little at a time, add the sugar and cornstarch, beating until glossy and
stiff.
4. Next, beat in the vinegar and vanilla until the meringue when rubbed
between your thumb and finger is not grainy.
5. Spread the meringue evenly onto a foil-lined 12" pizza pan.
6. Bake in the oven at 275 degrees F for 50-60 minutes. Turn the heat off
and set aside to stand in the oven for at least 60 minutes.
7. To prepare the cream layer, whip the cream with the sugar and vanilla
until stiffened. Spread the mixture over the top of the now cooled meringue.
8. Arrange the fruit in an attractive design over the surface of the cream
layer. Put aside.
9. In a small pan, combine the glaze ingredients (sugar, water, and
cornstarch). Bring to boil and thicken. Set aside to cool before brushing the
glaze over the fruit.
10. Transfer to the fridge to chill before enjoying.

chose a Southern classic as her favorite dessert.

1 large egg (at room temperature)

1½ cups all-purpose flour
¼ tsp salt
2 tsp baking powder
½ cup whole milk

1½ quarts fresh strawberries (hulled, sliced)
Directions:
1. Preheat the main oven to 350 degrees G. Grease a 9” square baking tin.
2. Add the shortening and sugar to a bowl and beat until creamy. Add the
egg and vanilla essence and beat again.
3. In a second bowl, combine the flour, salt, and baking powder. Add the
dry ingredients to the shortening/egg mixture in batches, alternating with
splashes of milk until the mixture comes together.
4. Spread the shortcake batter into the prepared baking tin in an even layer.
Bake in the oven for 20-25 minutes until pale golden.
5. Take out of the oven and allow to cool completely.
6. Cut the shortcake into 9 squares. Split each square in half crosswise, and
fill with whipped cream and fresh strawberries.
7. Serve straight away.

½ tsp bicarb of soda

1. Preheat the main oven to 250 degrees F. Cover 2 baking sheets with
parchment.
2. First, make the salted caramel. Add the butter, brown sugar, corn syrup,
vanilla essence, salt, and bicarb of soda to a saucepan over moderately high
heat and bring the mixture to the boil for 8-10 minutes while continuously
stirring.
3. Take the caramel off the heat and whisk in the chocolate hazelnut spread.
4. Add the popcorn to a large bowl and pour over the caramel/chocolate-
hazelnut mixture. Toss to coat the popcorn in the mixture.
5. Spread the coated popcorn in an even layer on the 2 baking sheets.
6. Place in the oven and bake for approximately 25 minutes until the
mixture hardens.
7. Take the popcorn out of the oven and allow it to cool and set before
serving.

2 cups all-purpose flour
1 cup brown sugar
¼ cup granulated sugar
1 cup unsalted butter (room temperature)
2½ tsp vanilla essence
1 tsp salt
2 + tbsp milk (as needed)

Directions:
1. Heat treat the flour by adding it to a microwave-safe bowl and heat on
high for 50-60 seconds until it registers an internal temperature of 166
degrees F.
2. Using a hand mixer or stand mixer, beat the sugars with the butter. Beat
until light in color and fluffy, for around 60 seconds.
3. Beat in the vanilla essence and salt until incorporated.
4. Beat in the flour from Step 1, until just combined.
5. One tablespoon at a time, add the milk and beat until dough begins to
come together.

juice, and lemon zest in a small pan and bring to boil Remove the pan from

2. Once the mixture is cooled, whisk in the yogurt.

4. Transfer to a freezer-friendly re-sealable container and smooth the top.

Ingredients:
Buttermilk Pie Crust:
1⅓ cups flour
1 tsp sugar
½ tsp salt
½ cup butter (cut into ½ “cubes)
3 tbsp buttermilk
1-2 tbsp ice water

Filling:
Zest of 1 lemon (finely grated)
1⅔ cups granulated sugar
1 tbsp stone-ground yellow cornmeal
1½ tbsp flour
½ tsp kosher salt
5 tbsp unsalted butter (melted)
5 large eggs
⅔ cup heavy whipping cream
½ cup freshly squeezed lemon juice
3 tbsp freshly squeezed orange juice
½ tsp vanilla essence
Powdered sugar (to dust)

Directions:
1. For the buttermilk pie crust: In a bowl, combine the flour, sugar, and salt.
2. Cut the butter into the flour mixture until only pea-size crumbs remain.
3. Next, add the buttermilk and ice water, stir lightly and form the mixture
into a ball.
4. Place the mixture on a sheet of kitchen wrap, cover, and pat into a disk
shape. Transfer to the fridge for 30 minutes.
5. Roll out into a 13” circle and fit in a 9” pie shell, folding any excess
underneath the edges, crimp the edges and transfer to the fridge for 20
minutes.
6. Prick the crust with a fork 15-20 times on the bottom and sides. And with
a foil collar around the crust, add parchment and baking beans and blind
bake at 400 degrees f for 15 minutes.
7. Once the crust is ready, remove the beans and parchment and return to
the oven to bake for an additional 15 minutes.
8. Remove from the oven and allow to cool while you prepare the filling.
9. For the filling: Place a baking rack in the middle of the oven and preheat
to 325 degrees F.
10. Place the prebaked pie shell on a rimmed sheet pan and put to one side.
11. In a bowl, rub the zest of 1 lemon with the sugar for 30 seconds. Stir in
the cornmeal, followed by the flour and salt.
12. Add the melted butter followed by the eggs, one at time. Stirring
thoroughly after each addition.
13. Mix briskly until the filling is pale and thickened.
14. Stir in the whipping cream, citrus juice, and vanilla.
15. Strain the mixture through a mesh sieve directly into the pie shell.
16. Bake the pie on the center rack of the preheated oven for 40-50 minutes.
The pie is ready when the edges are just puffed, and the center wobbles
slightly but is no longer fluid. Take care not to over-bake the pie, as it will
continue cooking and setting as it cools.
17. Dust with powdered sugar and serve at room temperature.
