 1 lb (about 450g) fresh strawberries, hulled and chopped
 1/4 cup granulated sugar (adjust to taste depending on the sweetness of the strawberries)
 1 tablespoon lemon juice
 1 cup heavy cream
 1/4 cup powdered sugar
 1 teaspoon vanilla extract

Instructions:
1. Prepare the Strawberries:
 In a mixing bowl, combine the chopped strawberries, granulated sugar, and lemon
juice.
 Stir well to coat the strawberries in the sugar. Let them macerate for about 15-20

desired.
4. Chill and Serve:
 Refrigerate the strawberry fool for at least 1-2 hours to allow the flavors to meld
together and the dessert to chill.
 Just before serving, garnish the strawberry fool with additional sliced strawberries
and mint leaves, if desired.
