LA NIÑA DE MIS OJOS
Its image, defines it well: seductive, young, semi-sweet and fresh.
VARIETIES
60% Viura and 40% Sauvignon Blanc.
WINEMAKING
The must is fermented in stainless-steel tanks at 15ºC, very low temperatures to gently extract the
best organoleptic characteristics of both of its grape varieties.
TASTING NOTES
Straw yellow, clean and bright. A balanced aromatic intensity in which exotic and tropical notes are
combined (stone fruit like peach) along with some citric touches. In the mouth it is friendly, fruity and
unctuous with a sweet and soft finish.
FOOD PAIRING
It is ideal to pair with a wide range of dishes, from appetizers to fish, seafood, paellas or desserts as
raspberries cheesecake.

SAUVIGNON BLANC
An aromatic, balanced, fresh and full flavoured wine that shows the great potential of this
variety in DOC Rioja
VARIETY
WINEMAKING
The must slowly ferments in stainless-steel tanks at a controlled temperature of 15ºC, for 20 to 25
days, to maintain the characteristic freshness and lightness of this variety.
TASTING NOTES
Lemon yellow, clean and bright. Its fruity character stands out both in the nose and in the mouth,
finding fresh grapefruit, passionfruit, white peach and a hint of citric notes of lime. The white flowers
are also present in the nose. The sweetness of the tropical fruit and citrus flavours perfectly
complements with the freshness of its good acidity. Pleasant and voluminous entry in the mouth, this
balanced white is fresh and gastronomic, thanks to its persistent creaminess and finish.
FOOD PAIRING
Ideal to enjoy with a cheese fondue, fish or spaghetti a la marinera. You can also pair it with rice
dishes, like the typical Valencian paella or sushi. Our chef´s suggestion: Galician seafood salpicón.

WINEMAKING
Both grape varieties are mixed and pressed together, to get a light colour rosé must that is fermented
in stainless-steel tanks at a controlled temperature of 14ºC for 24 days, looking to preserve the
expressiveness and freshness of each variety.
TASTING NOTES
Light salmon in color, Alma Bohemia stands out for its fruity character in the nose and in the palate.
Displaying delicate stone fruit aromas of peach and apricot, along with cherry and banana notes. It
has a pleasant and balanced entrance. It is round, fresh and with a persistent finish.
FOOD PAIRING
It is wonderful to enjoy as an aperitif on its own or paired with salads, rice, seafood and Asian food. Our
chef's suggestion: mussels with marinera sauce.

ROSADO
Fresh, fruity, savoury and full of nuances rosé
VARIETY
100% Tempranillo.
WINEMAKING
This wine is made using the bleeding technique. Once the grapes are destemmed, they macerate in
the stainless-steel tanks at controlled temperature for about 24 hours until we reach the desired color
and concentration for this rosé wine. The must is fermented at 14ºC for 25 days in the same tanks.
TASTING NOTES
Light strawberry color, with a coral touch, brilliant and clear. A fragrant nose in which red-berry fruit as
raspberries, strawberries and cherries mix with banana notes. Some lactic and herb flowers aromas
also stand out. On the palate, it has a fresh entry and a pleasant acidity accompanied by sour cherry.
It is full-bodied and round, with sweet and well-balanced tannins. It is a pleasant and appealing wine,
with delicious strawberries, jelly mini cups and citric flavors.
FOOD PAIRING
It matches well with light meats, salads, vegetable stews, pasta, curry-based dishes, Thai food,
tempura, grilled fish as well as fine pastries. Our chef's suggestion: spinach salad with bacon, nuts and
red berries.

AGEING
TASTING NOTES
Purple-red color with garnet hints. The nose is characterized by a sweet profile that Evoque the typical
licorice aroma of the Tempranillo along with red fruits as raspberries, cherries and currants. Its fruity
character stands out both on the nose and on the palate, resulting on a fresh, round and smooth
wine with a persistent finish in which the red fruit stands out.
FOOD PAIRING
It accompanies very well all kind of everyday meals, from salads to pasta or meat dishes. It is also a
great wine if you like an evening glass before or after dinner to enjoy the end of the day.

AGEING
12 months in French oak casks, 15% is new oak and the rest are second and third use barrels, to
conserve the fruit expression. It also ages 2 more months in Allier French oak foudres of 22hL
afterwards.
TASTING NOTES
Intense, mid-depth cherry red colour, clean and bright. There is a predominance of red fruit aromas of
strawberry and cherry in the nose, with a gentle liquorice touch and a well-integrated oak, what will
add some subtle balsamic and toasty notes. It has a light and balanced entrance in the mouth, with a
rounded mouthfeel and good acidity. The tannins are gentle and well-structured, and it has a fruity,
pleasant and long aftertaste.
FOOD PAIRING
Tapas, stews, red meats and semi-hard cheeses as Manchego, Provolone and Comte. From patatas
bravas to a Wellington beef or chorizo and bean stew.

TASTING NOTES
Garnet color with a slightly orange rim and a medium layer. Complex medium aromatic intensity. It
perfectly combines the freshness of the red fruit as raspberry and cherry and the complexity added
by its time in French oak barrels. Subtle pepper and balsamic notes are followed by roasty and smoky
aromas. It has an interesting entrance in the palate with gentle, fine, rounded and wide tannins. Of a
medium-high acidity and pleasant and persistent aftertaste.
FOOD PAIRING
Altanza Reserva will enhance and complement a wide range of meaty stews, roasted meats, grilled
blue fish and white fish with different sauces. Our Chef´s suggestion: Mutton Stew.

TASTING NOTES
Bright cherry-red colour. Great aromatic complexity due to its long ageing. On the nose you find
aromas of spices and such reduction leading to a slight hint of leather, and smoked aromas. The
wood also provides memories of cocoa, toasty and coffee. His entry into the mouth leaves a nice
wine, charming, powerful with good acidity and well balanced. From soft sweet tannins it has a
smooth entry, nice fresh with long aftertaste.
FOOD PAIRING
Ideal for small snacks and spiked elaborate haute cuisine. All kinds of meat, stews, meats, vegetables
and cheese.

TASTING NOTES
Deep-intense ruby, garnet heart with violet glints. Sweet and expressive bouquet with liquorice and
ripe cherry and plum notes, well-integrated with the New French oak aromas of vanilla, spices and
balsamic. It leaves an outstanding aftertaste for a Crianza, thanks to its silkiness mixed with complex
aromas.
FOOD PAIRING
A perfect wine to enjoy with appetizers based on sausages, cold meats and cheese, and many other
dishes like baked blue fish or smoked salmon. Suggestion: slow cooked pork cheek in red wine sauce.

TASTING NOTES
Dark maraschino cherry, with garnet glints at the edge; very deep. Harmonious blend of black cherry,
liquorice, fig, black pepper, clove, tobacco and a hint of leather. Its expressive bouquet incites drinking.
It has a strong character and nerve, and it remains fresh with rounded and harmonious tannins in the
mouth. A wellbalanced, well-structured wine, with oaky blending seamlessly with black cherry and
fruit preserve flavours, though the last remain longer.
FOOD PAIRING
It is perfect to pair with rich and strong flavoured food as lamb cutlets roasted in vine shoots.
Suggestion: grilled “Iberian secret” (a juicy and tasty pork cut).

Malolactic fermentation in French oak foudres, followed by 18 months in New French oak barrels.
TASTING NOTES
Bright cherry colour. In the nose, the raspberry, blackberry, and liquorice aromas are perfectly
assembled with the toasty and balsamic notes from the new oak. As time goes by, more complex
aromas start to show up like tobacco, cedar, leather and spices as pepper and clove. Powerful
bouquet. It is lively, full-bodied, with a nice acidity and great structure. Pleasant aftertaste, excellent
delight.
FOOD PAIRING
Very suitable for dishes with intense flavours such as stews, game meat, lamb, duck and barbecued
red meat, in general. Suggestion: grilled marinated duck breast with honey.
LIMITED COLLECTION:
Only 183 barrels of this wine are produced in its best vintages, always using new barrels that we keep
in our underground club where the conditions are optimal for aging.

20 months in New French oak barrels plus 3 months in French oak (Allier) foudres of 22 HL.
TASTING NOTES:
Deep red in color with dark violet brush strokes in the background. The nose is dominated
by a dark and earthy palette of aromas, where the black fruit is the main protagonist and it
is decorated with balsamic, minerals, cacao and smoky notes. Intense and rich entry. The
tannins are very fine, it is long with a distinguished plum and chocolate aftertaste. It has
the structure to age.
FOOD PAIRING:
This wine pairs nicely with smoked meats or meat cooked on fire, like the typical baby lamb
chops of Rioja. Also, with truffle and/or cheese-based recipes.

UVA POR UVA
The winemaker’s favourite plot. Limited edition: 2.127 bottles
VARIETY:
100% Tempranillo.
AGEING:
The selected grapes are kept in a cold chamber for 36 hours, for a pre-fermentative cold maceration
at 4ºC, concentrating in this period of time, color and aromas. Four days after, they are introduced
into the stainless-steel truncated tank and the fermentation starts spontaneously, thanks to the
native yeasts. The temperature is controlled during the whole fermentation process at 20 – 24ºC, for
about 20 days. The second fermentation takes place into French oak barrels to gain complexity. They
are two-year-old barrels, to preserve the fruit expression. The wine is left in the same barrels for 18
months and then bottled into 2,127 bottles where it rests for another 6 more months.
TASTING NOTES:
When you look at it, it is intense, deep and purplish. When you smell it, you are captivated by the floral
aromas of violets typical of the 2019 vintage. The strawberry and raspberry aromas flows straight into
your nose elegantly mixed with hints of aromatic plants; these last aromas must have something to
do with the thyme trees that naturally grows next to our plot. On the palate, you can feel the freshness
of a fruity wine, the power of a meticulous selection and the delicate and rounded tannins of an
excellent vintage. The red fruit stays long with minerality, and it is mixed with a nice sweetness
achieved by the French oak.

ELABORATION:
Our Ecologic Olive Grove is hand-picked during the night, at low temperatures, to preserve the natural
aromas of the olives that are going to go through a cold mechanical extraction without use of
solvents or refining methods. It is bottled without filtering, to maintain all its organoleptic properties.
This EVOO is Ecologic Certified by the DO Rioja of organic olive oils, as well as the Spanish Minister of
Agriculture. It is a natural product exclusively obtained from physical procedures.
TASTING NOTES:
Golden green colour. Delicate fresh and fruity aroma, with green olives, fresh cut grass and garden
tomatoes notes. It is thick and delicate on the palate, thanks to its low acidity. Persistent, with a subtle
and pleasant spice at the end. It has an outstanding intensity and a mild flavor. It is perfect to enjoy it
raw or as a component of modern and traditional gastronomy recipes.

It enhances the flavors of the food, either cold as salads, creams or cheeses, or enriching dishes

In appearance, deep dark amber color. On nose is intense, complex and elegant. Dried fruits, toasted
aromas and herbal. On mouth, it has oily and bitter taste. Dried fruit and peel of apricot and oranges
mixed with some toffee and nut, tipicallu present in fortified wines. Dried oxidized aromas dominate,
with tones of mushrooms, herbs and forest floor.

Soups and consommés, white meats, oily fish, tuna, artichokes, asparagus and cured cheeses.

TASTING NOTES:
In appearance, deep dark amber color with glints of old gold. Fragant nose, intense and complex
dried fruit (dried orange peel), nuts with some varnish, cedar and cinnamon. There is a tannic
bitterness present from the oak in the undertones. On mouth, it has oily sensation in mouth, kind of
bitter. We find “solera” notes followed by a long spicy finish.
FOOD PAIRING:
Game meats such as duck, partridge, stewed meats, Iberian hams, cured cheeses such as Idiazabal
and Parmesan, mushrooms and truffles.

In appearance, it has a light mahogany color. Highly aromatic, on nose is loaded with toasted oak,

a nice long length in the finish for the complex of sweet spices and pastries.
FOOD PAIRING:
Nuts, spicy cheeses, foie gras, chorizos, smoked and spicy meats. Pairs well with desserts with fruits

Extraordinary sweet wine, with outstanding fruity notes thanks to its more than 25 aging time. Dark
and dense iodized color witha bright amber edge. Its bouquet is very rich and pleasant with
predominantly sweet notes of dried fruits, accompanied by toasty aromas. Savory herbal notes
combine for atoffee-like taste. Velvety in the mouth with powerful structure. Large and balance
flavoring inthe mouth, spicy and “solera” hints. Persistent finish.
FOOD PAIRING:
It can be enjoyed as a dessert or as an accompaniment to sweets made from dark chocolate, ice
cream or intense blue cheeses.

Dark mahogany color. Scented and voluptuous nose, raisin aromas, slightly oxidized character which
is fine. Elegant and complex. In the mouth flavours are intense and complex with hints of wormwood,
cinnamon, cardamom, thyme, cloves and nutmegs. The full bodied palate has great length with a
long aftertaste.
FOOD PAIRING:
Fantastic drink on its own or with ice, also with a slide of fresh orange. A fine vermouth to enjoy on its
own, or as an aperitif (cheese, charcuterie, snacks, anchovies, olives, mussels). Vermut Amillo is a very
versatile drink.

COLECCIÓN Roberto Amillo VERMUT DE JEREZ RESERVA ESPECIAL
Aromatized wine, elaborated from sherry wines based on Palomino and Pedro Ximénez grapes.
AGEING:
The base wine is a blend of Oloroso with an average age of some 15 years and Pedro Ximénez with 6
in which no fewer than 32 botanicals are macerated, it includes wormwood, cinnamon, cardamom,
thyme, aniseed, rosemary and clove and once prepared the product is aged in French oak barrels, for
about 14 months.
TASTING NOTES:
Deep amber and mahogany hue. Intense, rich and complex nose with present French and American
oak aromas. Balsamic notes are mixed with chocolate, hazelnuts, roasted coffee and citrus notes
such as orange zest, with a subtle spice of liquorice and clove. In the palate it is oily and rounded and
in it, you can appreciate the velvety sweetness of the PX and the long-nice estructure of the Oloroso.
FOOD PAIRING:
Smoked fish and meat, grilled octopus and sardine, fried anchovies, clams and razor clams, grilled
pepper, stuffed olives, dry fruit, aged cheeses and Iberian ham.
