Minimum 99.5% Fructose (D-Laevulose).

Properties

• Molecular Weight Range - 180.16

• Melting Point: 102-105°C
• Viscosity of solution at 20°C (% w/w) (mPa.s) - 20%
1.8, 40% 5.6
• Heat of Solution: 12.5 kcal/kg
• Relative Sweetness: Up to 1.8 times as sweet as
sucrose.
• Solubility: Very soluble in water (approx. 80g/100ml
@ 20°C).
• Fructose is more soluble in alcohol than sucrose
(Solubility in 90% Ethanol approx. 10.0g/100g
Mol. Wt: 180.16 solution @ 25°C).
