RU students join together to collect canned food for those in need

MAGGIE LAMB
malamb@radford.edu
Thanksgiving 2011 is almost here; time has flown by so fast. Radford University studentslike Lauren English and Rachel Moore, are longing for classes to end so that they can go home to warm, delectable, home-cooked meals, not to mention the feast theyll inevitably have that Thursday. However, about 30 families in the New River Valley area wont be able to have that feast. These people are struggling to get by with the essentials, so these families have gone to St. Judes Catholic Church to ask for help this Thanksgiving, and St. Judes has stepped up. However, the church cant do it on their own; theyre asking for Radfords help. Two clubs have responded; Catholic Campus Ministry and RU Recreation have teamed up to operate a food drive. They are asking for any nonperishable food items or monetary donation. The money will go toward buying turkeys and perishable foods. The food collected will then go to St. Judes Catholic Church, where they will be placed into thanksgiving Baskets, and then delivered to those who asked for help finding food. Normally, theres not as big of a problem collecting food around Thanksgiving, as people get in the spirit of the holiday, but the amount of food asked for has been doubled. Students are stepping up to give a helping hand. Tables will be placed in the Bonnie on Tuesday, Nov. 8 and Thursday, Nov. 10 from 11 a.m. to 2 p.m. to pass out flyers as a reminder and answer any questions. The following week, Nov. 14-16, a box will be placed to drop off the food. On Tuesday, Nov.15, a table will be in the Bonnie from 11 a.m. to 2 p.m. for any monetary donations.

Oatmeal
Oatmeal is a whole grain making it full of vitamins, minerals and fiber while being low in calories. It also means it keeps you feeling full for a long time! Get the most from your oatmeal by using sugar substitutes and toppings such as fruits or nuts! Find oatmeal at Au Bon Pain, Dalton Dining Hall, or Starbucks

Muffin
Muffins are usually made with processed ingredients including sugar and hydrogenated fats. This means eating them will cause a spike in blood sugar levels followed by a crash meaning they wont satisfy hunger as long as oatmeal would.

Food of the Week

Flaxseed
What is it? Flaxseed comes from the flax plant. There are two
basic varieties: brown and golden. Why should we eat it? Flaxseed is high in fiber and packed with omega-3 fatty acids. It has been shown to lower cholesterol and fight different forms of cancer. How can I incorporate it into my diet? Add it to anything! Put it in your morning oatmeal, top your salads with it, mix it into baked goods, cook it in with rice and pasta sauces- the possibilities are endless!
