• Manufacturing: agrichemicals, agricultural construction, farm machinery
and supplies, seed, etc.
• Food processing: preparation of fresh products for market, and
manufacture of prepared food products
• Marketing: promotion of generic products (e.g., milk board), new
products, advertising, marketing campaigns, packaging, public relations,
etc.

Biological hazard
• Biological hazards occur when hazardous or pathogenic organisms are
introduced to food and thus pose a food safety concern to consumers.
• Example
• Bacteria
• Viruses
• Parasites

• Come from the workplace environment or from in adequate sanitation practices


and cross contamination during transportation, handling, processing and
storage such as poor food hygiene practices.
Chemical Hazard
• Occur when chemicals are present in foods at levels that can be
dangerous to humans
• Contamination may occur through many ways
 The environment(air, soil, water)
 Intentional use of chemicals (pesticides and veterinary drugs)
 Manufacturing process
 Addition of food additives
• Example of chemical
• Mycotoxins
• Natural toxin produced by fungi
Physical Material Hazard
• Extraneous material can be considered hazardous due to its hardness, sharpness, size or
shape.
• Examples of extraneous materials that may be found in food
• insects, hair, metal fragments, pieces of plastic, wood chips and glass
• It may cause lacerations, perforations and wounds or may become a choking hazard.
Allergenic Hazard
• Any protein that is capable of producing abnormal response in sensitive
response usually involve with human antibodies.

Biotechnology-related Hazards/Novel Foods

• The definition of biotechnology used by CFIA is:


"The application of science and engineering to the direct or indirect use of living
organisms or parts or products of living organisms in their natural or modified
forms"
• The genetically modified (GM) food may cause hazard in developing
allergenicity, transfer of genes from GM food to cells of the body or to bacteria
in the in gastrointestinal tract.
Overview of OSHA

• Occupational Safety and Health Administration, a federal agency of the


United States that regulates workplace safety and health

• Occupational Safety and Health Act (United States) of 1970, a federal law in
the United States, the act that created the Occupational Safety and Health
Administration mentioned above
GENERAL DUTIES OF EMPLOYER AND EMPLOYEES
Employer
i. Provide information, instructions and supervision to ensure safety and well-
being.
ii. Provide and maintain work places and systems to be safe and healthy.
iii. Manage the procurement, use, handling, storage, transportation and disposal
of materials safely.
iv. Provide welfare facilities to employees such as worker's rest room, suitable
dining and emergency facilities.
Employee
i. Take reasonable care of the safety and health of himself and others
ii. Collaborate with employers or any other person in discharging any
obligations or requirements imposed on employers or other persons.
iii. Wearing & using Personal Protective Equipment (PPE) provided by the
employer.
iv. Adhere to any instructions or steps on safety & health introduced by his /
her employer.
v. Report all incident that take place in workplace to employer.
