What Is
Fermentation &
Yeast?
• In Simple Language, fermentation is a
process in which an organism converts a
carbohydrate, such as starch or sugar,
into an alcohol or an acid 
• Not to mention, fermented foods add
tang and zest to your meals and are an
excellent addition to a healthy diet.
• Fermentation can be done by various
methods, and one of the method is by
using yeast.
• Yeast performs fermentation to obtain
energy by converting sugar into alcohol.
Now, by making Idlis
which involves the

fermentation, we'll let
you know how
fermentation takes
place and what are
chemical and physical
changes after it
so let's get started.
About Idli
• Idli is one of the most healthiest
and popular South Indian
breakfast dish. These are soft,
light, fluffy steamed round cake
made with a ground, fermented
rice and lentil batter, They not
only famous in India but outside
the India too
Soaking rice and
lentils
• For making simple traditional idli, both the rice and
the urad dal are rinsed a couple of times with fresh
water and soaked for 4 to 5 hours.
Grinding Equipments & Grinding

•   The grinding of the batters, can be done in


a table-top stone wet-grinder or in a mixer-
grinder. Most South Indian families have a
table top stone grinder that they trust to
make a fluffy idli batter.

Fermentation
• fermentation is the most important part in Idli making,
without fermentation process we cannot make Idli.
• There are two methods of fermentation which can be
used in Idli making...
• One is the traditional method in which you need to keep
the better overnight for fermentation
• Second is the modern method in which you need to add
yeast to the batter.
• And today we will see how we can ferment Idli better
using yeast

Fermentation
Using Yeast
• In the daily hustle bustle of life you
cannot wait overnight for fermenting Italy
thus we use yeast.
• Nowadays yeast is very common method
used for fermenting not only the Italy
better but many other products such as
breads cakes, pavset etc.....

• So now for fermenting Idli batter you


need to add 5 grams of yeast to 1/4 cup of
warm water, and then keep it aside for 10
to 20 minutes for proper fermentation.
After that add the activated yeast to the
Idli batter and leave it for half an hour.
Steaming
• The last process of steaming, for steaming Grease Idli pans with oil or ghee and then add idli
batter into the moulds and steam it for 15 to 20 minutes 
• (idlis should never be over steamed as they can get dry and hard)

Benefits of Idli
• As Idli comes under Fermented foods so they are rich in
probiotic bacteria so by consuming fermented foods you
are adding beneficial bacteria and enzymes to your overall
intestinal flora, increasing the health of your gut
microbiome and digestive system and enhancing the
immune system
• As idli is healthy south Indian food each idli contains just
39 calories, which is a minimal amount in comparison to a
healthy 2,000-calorie daily diet. Idlis contain no cholesterol,
no fat, and no saturated fat. Consuming less than 16
grams of saturated fat and 300 milligrams of cholesterol
lessens your risk of different cardiovascular disease and
stroke. From the salt, each idli does contain about 65
milligrams of sodium which is very normal.

Side effects of Fermented
Foods
• Fermented foods are considered safe for most people.
However, some individuals may experience side effects.
• he most common side effect is an initial and temporary
increase in gas and bloating
• These symptoms may be worse after consuming fiber-
rich fermented foods, such as kimchi
• If fermenting at home, make sure you follow recipes
closely for safety purposes. Incorrect temperatures,
fermentation times, or unsterile equipment can cause
the food to spoil, making it unsafe to eat.
