Teabreak
- The traditional teabreak originated in the West.
- Tea Break is usually held when the event begins or in the middle of a
party. The purpose of Tea Break is to help guests have a relaxing.
- Tea break is a party at which people gather together, enjoy food, sip
drinks and chat with each other.
- The party is held under buffet form with drinks such as tea, juice,
coffee, fruit and accompanying cakes.
- Teabreak time usually only needs about 30 minutes to 1 hour.
Teabreak service process
• Choose a venue and area for the party (if necessary)
• Cleaning the party area
• Decorate the space and party table
• Determine the number of guests to attend and plan the menu
• Prepare the necessary tools for the party such as cups, plates, spoons
• Prepare food and drinks including tea, milk, coffee, filtered water, cakes, fruits, ... on the
banquet table according to the selected menu
• Support guests during the party, observe and promptly respond to guests' needs when
needed
• At the end of the party, use trolleys, buckets and specialized items to clean up; clean and sort
tools by type and move to the cleaning area
• Clean the party area (as original). Set-up the space and the party table (if needed)
Canape & Cocktail party
• The French have been calling finger foods canapés since the late 18th
century. Over time the word canapé evolved into a broader term for
any small-sized finger foods served at catered parties.
• Canape & cocktail party is use for luxury party, almost the canapé
parties can be drinking-only and food-only. Customers enjoy canape
and wine while meeting, chatting and taking photos.
• Organize: wedding, birthday, meeting, exhibition, ...
• Canape is a type of hors d'oeuvre, consisting of a small piece of bread
and topped with some savoury food. Can using beef, salmon, fruit,
egg, cheese, mayonaise, …
Serve canape and cocktail
2 type serve:
1. Staff serve:
• Staff need to be skillful and gentle so as not to make the dish
distorted.
• Staff will handling around a party area to inviting customers enjoy
canapé.
• Especially after offering dishes for customers to complete, staff must
move to another place to avoid feeling uncomfortable for customers.
2. Serving by yourself:
• Customers is serving by themselves and the staff refill dishes when
out of food.

Concept menu: Tet dinner
- For Saigon's year-end parties, dishes such as spring rolls, rice, beer,
etc. are indispensable on the table. So we choose lotus delight salad,
egg rolls, and vegetarian lotus sesame fried rice for party food.
- Desserts are mainly dishes that are close to Vietnamese people on Tet
holiday
- Beer is an indispensable drink of Vietnamese people in general as well
as Saigon people in particular. If in foreign countries use alcohol to
celebrate, in Vietnam, they use beer.
Service food:
• Regarding food, guests will serve themselves. Because we
want customers to go to the counter and experience the Tet
meal for themselves through each dish decoration as well as
feel the Tet atmosphere.

• Because of the large number of guests, the service of beer
will be brought to the guests by the staff.

- Layout: vintage jungle
- Decoration stuff: wood table, vines, dry leaves,
chopping board.

• Rectangle wood table
• Food is placed on porcelain plates with motifs showing
Vietnamese culture and on chopping wood board.
• On the table will be decorated with dried flowers, dried
branches, some wood decorations.
Service food:
• Guests will serve themselves, to avoid disturbing guests while
they are enjoying the works.
Service beverage:
• The banquet table will be located in the main hall
• In addition, there will be staff to serve alcohol

each other
