“ Food fraud is defined as the sale of food products that are


not up to recognised standards in order to generate
financial gain. Food fraud can appear in a range of


different formats.

Introduction to food Fraud

Food fraud is the act of purposely altering, misrepresenting,


mislabeling with any food product at any point along the farm–to–table
food supply–chain.
 Fraud can occur in the raw material, in an ingredient, in the final product
or in the food’s packaging.

Food fraud is the deception of consumers through
intentional adulteration of food:

 (a) by substituting one product for another.


 (b) using unapproved enhancements or additives.
 (c) misrepresenting something (e.g., country of origin).
 (d) misbranding or counterfeiting.
 (e) stolen food shipments.
 (f) intentional contamination with a variety of chemicals, biological agents or other
substances harmful to private– or public–health.

to avoid them

1. Olive oil can be tampered with in many ways, such as diluting the real thing with less
expensive oils (like soybean or sunflower) or diluting high-quality olive oil with low quality.
2. Dairy products.
3. Honey. Saffron
4. Sea foods.
5. coffee can be adulterated with twigs, stone, barley, and corn husks to increase the apparent
weigh.

How to prevent and detect food fraud

 An effective food fraud prevention program is a combination of science,


data and common sense.

 Thefirst step is to do a vulnerability assessment test, where you answer a


basic question: how likely is my company to be on the receiving end of
food fraud? To do that, you’ll have to audit your suppliers first.

 Here is a series of question to guide you:


1. Do they have a good reputation? Were they involved in food fraud incidents in the past?
2. What’s the level of trustworthiness of the country where they operate?
3. Who are the suppliers of your suppliers?
4. Is it a new supplier, or do you have an established relationship with them?
5. Is the documentation they provide complete and clear?
6. Are the ingredients you buy from them at risk of adulteration?
7. Are their products certified?
