“CUY CHACTADO”

Meaning The term chactado refers to the
way of cooking a food pressed
under the weight of a stone. The
term could come from the
Aymara verb chchaktaña,
"desaparecer", which would refer
to the fact that the meat is hidden
under the stone while it cooks.
History ● The Cuy Chactado is an exotic typical
dish, originated in the Cajamarca
region and popularized in Arequipa.
● The guinea pig is a good source of
protein, and it is also abundant in
these regions.
● In the past, the curacas requested
this dish to be more efficient in their
tasks.
● Specifically it is accompanied with
boiled potatoes, corn, etc.
Slow Food We can consider it as slow food
for its nutritional benefits and the
accompaniment of native foods,
such as potatoes, corn and
guinea pigs that are raised and
worked by the farmers
themselves.
Benefits It is not only a delicious
preparation, but it is also very
nutritious. Guinea pig is a good
source of protein.
They interviewed a Peruvian
nutritionist about it and she said:
"The consumption of guinea pig
helps people who suffer from
dyslipidemia or heart problems."
Conclusions In Lima there are about 258
restaurants that present the Andean
animal in their menus. Specialists
have pointed out that there are two
types of market: “the traditional one,
which consumes it with heads and
legs, and a larger one, which would
like to consume guinea pig, but in
other presentations”.
