Chemistry in everyday life

 Everyday, we see the effects of chemistry all around us. E.g ca be found in the
home , during cooking activity in the body during the process of digestion,
excretion, and in health care and cleaning activities around homes and even
chemistry can be found in the air
 Chemistry is a science that deals with the composition, structure and properties of
substances and with the transformation undergo.
 Today we shall be looking at chemistry relates to our food under two major
headings
1. Why baking soda causes food to rise
2. Effects of saliva in digestion
Why Baking Soda Make Foods Rise

 Baking soda is used in homes, eatery, bakeries as an important ingredient that


causes food to rise. Because baking soda can undergo a chemical reaction called
decomposition.
 Baking soda is also known as Sodium bicarbonate (NaHCO3). It can undergo a
decomposition reaction when is heated up to 80°C. Chemical decomposition is
also referred to as chemical breakdown.

Chemical decomposition of baking soda

 A decomposition be defined as a chemical reaction in which one reactant breaks


down into two or more products. Here, baking soda is the reactant. It is broken
down during the process of baking into three compound which are sodium
carbonate, water and carbon dioxide as a result of application of heat when it is
mixed with heat
 Baking soda =NaHCO3
NaHCO3 + heat at 80°C = NaCO3 + H2O + CO2
 The produced carbon dioxide gas makes baked goods rise! The higher the
temperature of the sodium bicarbonate, the faster it will decompose. Only sodium
carbonate will remain as a solid product. Both carbon dioxide and water are
gaseous at the warm temperature, which means that they will disappear into the
surrounding air. This process happens during cooking and baking.
How saliva helps in digestion
 What is saliva ?
 Saliva is an extracellular fluid produced and secreted by salivary glands in the
mouth.
 Saliva is composed of a variety of electrolytes, including sodium, potassium,
calcium, magnesium, bicarbonate, and phosphates. Also found in saliva are
immunoglobulins, proteins, enzymes, mucins, and nitrogenous products, such as
urea and ammonia 
 The enzyme called amylase found in the saliva is essential in beginning the
process of digestion of dietary starches and fs. It also plays a role in the breaking
down of food particles trapped within the dental crevices which protect the tooth
from bacterial decay . Saliva also performs a lubricating function, wetting food
and make it easy to swallow, and protecting the mouth from drying out

Amylase is the present in the saliva of humans and some other mammals, where
it begins the chemical process of digestion. Foods that contain large amounts of
starch but little sugar, such as rice and potatoes, become slightly sweet as they
are chewed because amylase break down some of their starch into sugar

Most people like to eat starchy foods such as rice, potatoes etc. This
carbohydrate need to be digested and converted for the body to utilize them the
enzyme in the saliva in the mouth makes it easy of digestion as we chew the
carbohydrates in our mouth making it easy to swallow and the the process of
digestion continues in the stomach Saliva in the mouth is very important,
everyday we eat food and the food is mixed with saliva
