Definition of Terms!
Solution - a liquid mixture in which the minor component (the solute) is
uniformly distributed within the major component (the solvent).
Mixture - a substance made by mixing other substances together.
Sanitizing Agent - used to reduce the number of microorganisms to
acceptable levels in brewing.
Chlorine - an inexpensive and effective disinfectant
Sanitize - make clean and hygienic; disinfect.
Cleaning - Cleaning is the process of removing unwanted substances, such
as dirt, infectious agents, and other impurities, from an object or
environment.
Processing area - any place where food products or their ingredients
intended for human consumption is prepared, processed, repacked, `
handled or manufactured.
• What are the three approved sanitizing solutions?
• There are three acceptable types of sanitizer solutions for use in a
food establishment.
Chlorine (Bleach)*
Chlorine
Quaternary Ammonia (QUAT, QAC)
• Iodine.
*What materials are needed in preparing sanitizing solution?
*Use a sanitizing solution of 1 teaspoon of liquid chlorine bleach to one gallon of
warm water (at least 75°F) (200 ppm solution) with clean wiping cloth. (Note:
solution should be changed often). Wiping cloths should be kept in the sanitizing
solution. Air dry.

*What is the correct mix for sanitizer?


*Sanitize in a solution of 1 tablespoon of household chlorine bleach in 1 gallon of
clean water.
How to Mix an Approved Sanitizing Solution
Sanitizing - reduces the number of microorganisms on surfaces to levels considered
safe. Sanitizing Solution Chemicals can sanitize dishes and other food contact
surfaces such as cutting boards, knives, cooking utensils, and counter tops.

Things you need to mix a chlorine sanitizer solution using bleach:


1. Ordinary household bleach. Do NOT use bleach with fibre guard or fresh scent.
2. Teaspoon or tablespoon
3. Spray bottle or bucket labelled Sanitizer
Mix according to directions provided below. If you do not use household bleach,
commercial chlorine solutions, quaternary ammonia solutions or iodine solutions may
be used at solution strength listed below. Always follow the manufacturer’s
instructions.
