ICING, OR FROSTING
• Icing, or frosting, is a sweet, often
creamy glaze made of sugar with a
liquid, such as water or milk, that is often
enriched with ingredients like butter, egg
whites, cream cheese, or flavorings.
GLAZE
• Glazes are used to give desserts a
smooth or shiny finish. A glaze is
usually drizzled onto a cake or applied
with a pastry brush to give a glisten to
pastries. Glazes also add a glassine
look to fruit pies and tarts.

• Boiled Icing
• Boiled frosting is a fluffy white cake
frosting that is made by gradually pouring a
hot sugar syrup over stiffly beaten egg
whites. The eggs are beaten constantly until
the mixture is smooth and satiny, similar to
the way an Italian meringue is made.
