RATIONALE

Coffee is one of the most valuable primary products in the world trade, and also a
central and popular part of our culture.
Coffee production generates a lot of coffee wastes and by-products, which, on the one
hand, could be used for many applications.

RATIONALE

Coffee husks and pulp are comprised of the outer skin and attached
residual pulp, and these solid residues are obtained after de-hulling of
the coffee cherries during dry or wet processing.
Dry processed coffee husks present moisture contents ranging from 7 to
18%, with such extensive range being attributed to variations in processing
and storage conditions (Oliveira et al, 2001; Vilela et al, 2001; Souza et al.,
2001. 2003, 2005, Rocha et al., 2005).
RATIONALE

Wet processed coffee husks (coffee pulp) contain approximately 75%


moisture, and are usually let to dry to approximately 13% moisture.
The chemical composition of both coffee husks and coffee pulp are
proteins, lipids, minerals, carbohydrate, caffeine and tannins.

With coffee now the second largest commodity
worldwide, recycling these nutrient-rich by-
products could reduce the amount of organic waste
sent to landfill, whilst producing value adding
products.
Some chemical compounds present in these by-
products, such as caffeine, tannins and chlorogenic
acid are of ecotoxicological concern and can limit
their value-adding applications.

Objective
To develop new customer-driven and high value products from the coffee wastes and by-products.
Specifically this aims to:
1. To conduct initial survey (Google form) to coffee farmers on the amount of solid wastes such as
coffee husks, pulps, and low-quality or defective coffee beans generated during primary processing
stage.
2. To train coffee farmers for the utilization and production of high-value products from coffee wastes
including coffee pulp and coffee husk.
3. To conduct virtual demo on the production of tea, smoothies, energy bars and juices from coffee
husk;

4. To conduct virtual demo on the production of nutritional flour from coffee pulp.
5. To conduct virtual demo on the production of soap, scrubs, body washes and body
exfoliants from coffee pulp.
6. To evaluate the high value products of the coffee farmers (participants) who adopted the
innovative products through survey material (Google Form).
7. To prepare and disseminate IEC materials on the production of flour, cookies, soap,
exfoliants and body wash.
Expected Outputs
1. High value products like flour, cookies, soap, body wash and body exfoliants from
coffee wastes.
2. At least ten (10) trained coffee farmers for the production of flour, cookies, soap, body
wash and body exfoliants.
3. Number of IEC materials produced and disseminated
4. Number of virtual demo meetings conducted
