CANTON

gastronomy including chicken soups, yahuarlocro, fried pork, roasted guinea
pigs, and the standout "hornado" dish featuring pork with crispy skin, potato
tortillas, mote, avocado, corn, and a tangy sauce made from chicha de jora,
paiteña onion, tomato, chili, parsley, and cilantro.
