Fight the Thanksgiving Day Bulge

Every year families and friends gather around the
table to celebrate and give thanks for the bounty of the year. They also tend to consume 3,000 to 4,500 calories per person. Should giving thanks be about gluttony? Many people are interested in lower-fat, lower-calorie options for Thanksgiving meals that dont take away from the traditions of the holiday. Its possible to cook and serve foods that are healthier and offer the spirit of Thanksgiving. Lets examine traditional fare and some alternatives that are healthier. Traditional: Turkey and stuffing. Alternative: Turkey that has been roasted or cooked on a rotisserie so that the excess fat drips off. Turkey itself tends to be lean. Avoid basting the turkey with butter and remove the skin upon serving. Do not stuff the turkey with bread dressing, which tends to be fat-laden. Also, from a food safety standpoint, a raw turkey could infuse salmonella or other bacteria into the stuffing during cooking. Traditional: Candied sweet potatoes and marshmallows. Alternative: Forget the butter, brown sugar and marshmallow topping on sliced sweet potatoes. Instead, serve sweet potatoes in their natural glory, baked and sprinkled with a little cinnamon and nutmeg for extra flavor. Traditional:Gravy made from pan drippings.
4 Foothills Marketplace

Alternative: Gravy made from a low-fat broth. Why douse turkey and fixings with extra calories? A light au jus will provide flavor and a little extra moisture to the bird. Traditional: Cheese and buttery crackers platter. Alternative: Fresh vegetables and a light dip. The recommended daily serving of cheese is one ounce. People tend to graze on Thanksgiving, eating much more than an ounce of cheese. Plus, theyre pairing the cheese with fattening crackers. Instead, offer sliced fresh vegetables and a dip made of low-fat sour cream. If crackers are served, choose whole grain varieties. Traditional: Bread stuffing. Alternative: Fruit stuffing. Whip up a batch of stuffing that is much more about fruit than the bread and butter. Use cubed wholewheat bread and slices of apples, pears, cranberries, raisins, and any other in-season fruits. Wet with a lowcalorie broth and bake until browned. For even more flair, bake in individual muffin cups so that portions are clearly identified. Traditional: Fruit pies, such as pumpkin and apple. Alternative: A buttery, flaky crust is certainly delicious, but it can pack even more calories on the end of a meal. Serve cobblers that are much more fresh fruit and much less crust and extra calories. Better yet, simply serve a platter of refreshing fruit slices.

How to Plan a Successful Office Holiday Party

Holiday office parties are a tradition at many businesses across the country. These parties can vary greatly depending on the size of the company, the resources allocated for the festivities and the participation level among the employees. The parties can also vary in how their invitees view these end-ofyear festivities. Some companies throw parties their employees would just as soon pass on, while other business treat their workers to the party of the year. Office party planners hoping this years event is closer to the party of the year than one nobody wants to attend should consider a host of factors before getting started. Timing The timing of the office holiday party is a key factor in how successful it will be. Since most parties are in the month of December, its best to aim for earlier in the month. By the end of December, guests might be too exhausted to have a good time or may have already planned their holiday vacations and be unable to make it. The closer the party is to Christmas and the end of the year, the less likely it is that all invitees will be able to attend. Another timing concern is clients. Many businesses include clients on their holiday party guest lists as a gesture of appreciation for their loyalty. By choosing a date thats earlier in the month, party planners are increasing the chances their clients can make it
6 Foothills Marketplace

and wont be forced to miss the event due to their own office party commitments. Settle on a few dates early in the month and then ask employees which theyre most amenable to. Finances Finances should also dictate certain aspects of the holiday party. If the company is paying for everything, be sure to verify a budget with the accounting department before shopping around for caterers, locations, etc. If the office party will require some financial contribution from employees (such as paying for spouses or significant others), keep that in mind, too. Employees will of course be less enthusiastic about a holiday party if they have to contribute considerable funds toward the event. Location Location is another key consideration for party planners. No one wants to travel far and wide for an office party, so it helps to choose a locale that is centrally located and convenient for everyone. Unless the company is one where most workers telecommute, chances are employees will be comfortable with a location thats close to the
272-4919

office itself since workers make the trip to that neighborhood anyway. Safety Safety is a genuine concern at holiday office parties. Much of that concern can be traced to alcohol consumption. Unfortunately, many employees overindulge with alcohol at holiday office parties. With stress a concern for many during the holiday season, alcohol consumption is incorrectly viewed as a means to relieving that stress. But many businesses have banned alcohol from such parties, be it the result of local host laws or simply out of concern for their employees safety. When planning the party, be aware of the alcohol policy. If the policy is no alcohol allowed, theres no need to worry. If alcohol is allowed, arrange for complimentary transportation for anyone who might overindulge and prove unfit to drive.

FMP Fun Things To Do

Oct. 25 ~ Nov. 17: Sierra Stages presents Stephen Sondheims ASSASSINS. The groundbreaking musical Assassins by Stephen Sondheim and John Weidman brings the Sierra Stages 2012 season to a close with a bang! Using the most American of art forms, the musical, Assassins investigates the personalities of nine men and women who killed or attempted to kill nine Presidents. These Presidential assassins are never glorified or celebrated, but presented by Sondheim and Weidman to explore how and why each of these outsiders stop and alter history. The show is entertaining yet thought-provoking, and at turns hilarious, jolting and heart-wrenching, as the history of these men and women unfurls across (and often without regard to) time. Susan Mason is the director and Ken Getz is the musical director. Assassins begins on October 25 and continues for four weekends through November 17. Performances are Thursdays at 7 pm, Fridays and Saturdays at 8pm and Sundays at 2pm. The first two performances, Thursday October 25 and Friday October 26, are previews and general admission tickets are only $15. For all other performances, general admission tickets are available at the reduced price of only $20 if purchased before October 27. After that, general admission tickets will be $25 for all performances. In addition, Sierra Stages is pleased to offer reserved seating for $30. With reserved seating, audience members may select specific seat locations in advance and also provide additional financial support for the production. General Admission Tickets and Reserved Seating are available online at www.sierrastages.org, by calling Sierra Stages at 530-346-3210, and in person at the Nevada City Box Office (at the Miners Foundry) and BriarPatch Co-op. If tickets are still available, student rush (under age 18, with presentation of fulltime student ID) will be available for $15 on a firstcome, unreserved basis, 30 minutes prior to curtain. On-Going through Nov. 17: Nevada City Farmers Market, Celebrating Local Food with fresh seasonal produce & flowers, live music & great food. Every Saturday, 8:30am to 12:30pm in Historic Downtown
