School valedictorian to law
school student, Voorhees native
Matt Tolnick embarked on a ca-
reer change he never imagined
starting a beef jerky company.
Tolnick graduated from East-
ern in 2001 and stood by his fel-
low classmates as valedictorian.
During his time at Eastern, he
was scholastically inclined, keep-
ing up with his grades. He played
on the basketball team his fresh-
man year, but didnt believe a ca-
reer in the sport would pan out.
I wanted to go to the best col-
lege I could, and I figured things
would align themselves from
there. I never had any specific
goals, he said.
Tolnick attended Duke Univer-
sity, graduating with a degree in
public policy studies and eco-

Tolnick started making jerky
in 2002 with college friends
nomics. While thinking about
pursing a career as an NBA
agent, he thought going to law
school after Duke would be a rea-
sonable move toward his future
aspirations.
That was something I had
kicked around a little bit. When I
went off to college, I didnt have a
specific idea for a major. It wasnt
like this is what I have to do with
myself. To me, it always seemed
like I could, and had the ability
and the potential to do so many
things. It was always so hard to
settle on one, he said.
He set himself up for a career
in law knowing he would have to
go back to school, studying for a
number of years if he pursued
his degree in business.
In 2002, Tolnick started mak-
ing beef jerky with a few college
friends, splitting the cost of a $50
dehydrator from Wal-Mart. They
decided buying jerky was expen-
sive.
The first batch wasnt good,
he said. Back then I didnt have
the spice cabinet that I would
come to have in subsequent
years. We were following the di-
rections of the dehydrators ...
thats not how you make good
beef jerky.
According to Tolnick, using
lean cuts of meat is a better op-
tion over ground beef. When he
discovered more gamy pieces
turned into a better quality jerky,
as well as the rudimentary un-
derstanding of flavors, he took
the idea and ran with it.
I was able to quickly have
something as good as what we
were getting in stores, he said.
But he wasnt keeping track of
his recipes.
That came later, he said.
The jerky sharing did not trav-
el past his core group of friends.
It would be gone before you
knew what to do with it, he said.
He made small batches, mak-
ing jerky the same way someone
would make cookies or baked
goods in their house or apart-
ment.
When he went to UCLA, he
continued to make jerky and
began to hone in on flavor pro-
files.
By the third year in law
school, I decided I had enough of
the law courses and wanted to
branch out and take whatever

The evolution of The Voorhees Town Cen-
ter into our downtown continues with the
opening of Iron Hill Brewery & Restaurant,
with the first pour planned for early Au-
gust. Iron Hill will be another addition to our
restaurant row and bring an exciting new
concept to the Boulevard.
Iron Hill takes its name from an historic
Revolutionary War landmark in Delaware,
where Generals Washington and Lafayette
battled against General Cornwallis to ensure
American liberty.
It was the pursuit of happiness as de-
scribed by the Declaration of Independence
that led to the formation of Iron Hill in 1994,
when two award-winning home brewers,
Kevin Finn and Mark Edelson, teamed up
with Kevin Davies, an experienced profes-
sional in restaurant operations, to open the
first Iron Hill.

scratch menu items
that include soups,
sandwiches, pizzas,

ning brews.
Through the brewerys windows, beer en-
thusiasts will be able to watch the brewing

inally, nine months after Super-
storm Sandy touched ground,
New Jerseys economy is gain-
ing momentum.
A report released last week by Wells
Fargo, the states second largest bank
by deposits, says that federal and in-
surance money flowing into the state
to aid in the Sandy recovery started to
pay dividends in the first half of 2013,
and should continue to propel the
economy for the rest of this year.
According to the report, the state
added 4,200 construction jobs from
January to June of this year. The
same time last year, the industry lost
4,500 jobs.
Its a great sign for the state. Gov.
Christie estimated New Jersey suf-
fered $37 billion in damage from the
storm. Approximately 22,000 homes
were left uninhabitable and 325,000
others were significantly damaged.
Now, in the dead of the summer,
with the start of hurricane season ap-
proaching again, construction is heat-
ing up, fueling the states overall eco-
nomic recovery.
The Wells Fargo report wasnt all
peachy, though. While New Jerseys
economy was significantly better in
the first half of this year compared to
last, it still lags behind national aver-
ages. Six percent of all mortgages are
in foreclosure, the second-highest rate
in the country behind only Florida.
Housing prices grew only 2.9 percent
year over year, while the national aver-
age stood at 12.2 percent. New Jerseys
unemployment rate dropped almost a
point in the last year, and that trend is
expected to continue, but it still sits at
8.7 percent compared to the national
average of 7.6 percent.
These stats beg the questions:
Should we compare New Jersey to the
rest of the country? Or should we just
compare the Garden State to itself ?
New Jersey is a very unique state in
that its economy is fueled strongly by
two major metropolitan regions whose
city is in another state. The economy
works differently here. Employment
works differently here. Elections work
differently here. So why, then, if we
are an outlier, must we compare our-
selves to others?
For once, we need to focus on our
own recovery, and ensure we are
adding as many jobs as we can, no
matter what our stats look like com-
pared to every other state.

network in partnership with Ford
As part of the
Freeholder Boards
continued commit-
ment to the environ-
ment, seven electric
vehicle charging sta-
tions have been in-
stalled at various
Camden County
sites. On July 25, I
had the honor of ar-
riving by electric car with my col-
league Freeholder Jeff Nash at
one of the recently installed
charging stations to launch a
new era of travel in Camden
County.
We made our inaugural road
trip to the charging station at
Camden County Colleges
Cherry Hill Campus. The other
electric vehicle charging stations
are located at the Camden
County Boathouse at Cooper
River, the Camden County Tech-
nical School in Gloucester Town-
ship, the South County Regional
Branch Library in Winslow
Township, the Bellmawr Branch
Library and Camden County Col-
leges Campuses in Gloucester
Township and Camden City.
As a Freeholder, and more im-
portantly as a mother, I am very
concerned about sustainability
and being thoughtful stewards of
our natural resources. The instal-
lation of charging stations to fa-
cilitate the greater use of electric
cars is the responsible thing to do
for our future. This is in keeping
with the Freeholder Boards
pledge to explore ways to reduce
our energy consumption while
shrinking our carbon footprint.
Electric vehicles are seen as a
key to meeting the new fuel-effi-
ciency standards for 54.5 miles
per gallon by model year 2025. To
date, about 100,000 plug-in cars
have been sold in the U.S. and all
of the Freeholder Boards new
charging stations are on the U.S.
Department of En-
ergys website
afdc.energy.gov/lo-
cator/stations/.
Camden County
entered into a pilot
cost-sharing pro-
gram with ECOtal-
ity North America
to install the county-
wide charging infra-
structure that will facilitate the
use of county residents use of
electric vehicles. This will make
recharging part of everyday life.
Ford Motor Company is also
partnering with Camden County
to ensure there is a network of
fuel stations for one of their
fastest selling vehicles the 2013
Fusion Energi. The carmaker
will have a model on site and is
an advocate of creating a larger
network of electric vehicle serv-
ice stations throughout the re-
gion. The Ford Fusion Energi is
anticipated to deliver more than
100 MPG, making it the most fuel
efficient midsize car in America.
I am pleased that our partners
support our commitment to the
environment. The federal gov-
ernment providing funding for
half the cost of the project, com-
bined with the support from Ford
and ECOtality, helped make
charging stations a reality today
in Camden County.
All seven of the electric vehicle
charging stations are now avail-
able to serve motorists.

Perfecting flavors of the jerky
was first step to business

The thoughts of a beef jerky
company began to swirl in his
mind, and the bar for a beef jerky
company was getting higher.
However, Tolnick did not com-
pletely give up on his law degree.
He worked as a sports attorney
for a professional and college bas-
ketball firm in California Kauff-
man Sports and was an agent
for NBA and college players.
He said before moving to
Voorhees, growing up in Boston
as a Celtics fan turned his love of
the business side of the sport of
basketball into a career.
I could have done it for a lot
longer. I might have still been
doing it if it wasnt for the NBA
lockout. At that point, I could
have waited for the lockout to lift.
Not knowing how long it would
be I thought it was the right ca-
reer move, he said.
I was hoping the gold at the
end of the rainbow was actually
enjoying practicing law. So I gave
that a go for a number of years
before I came back again, and the
jerky was speaking louder to me
as a career pursuit as the recipes
got better, he said.
Sending out samples and using
tasting surveys, documenting
and creating recipes suitable for
reproduction and becoming
known as the jerky guy, helped
him move forward with his final
decision of starting Lawless
Jerky.
The last thing I wanted to do
was jump into business with a
product that wouldnt be success-
ful, he said.
Perfecting flavors was the first
step. The next was to find the
proper funding to help market
his product.
He turned away from Shark
Tank an ABC reality TV show
where entrepreneurs pitch busi-
ness ideas to potential investors.
I did not have a history or
track record of growing sales,
he said.
Tolnick heard about an online
funding platform, Kickstarter,
which would aid in his pursuit of
capital investments.

Voorhees crime rate de-
creased 60.4 percent last year,
with 247 fewer offenses, accord-
ing to the states recently re-
leased Uniform Crime Reporting
statistics.
Police Chief Lou Bordi said he
is glad to see the numbers are
down, but the department does
not rely solely on the states re-
ports. The biggest change in the
numbers is in thefts, which
showed a decrease of 57 percent,
or 130 offenses, from January to
June 2013 when compared to Jan-
uary to June 2012.
Bordi said its difficult to indi-
cate why crime decreases from
year to year.
It could range from changes in
the economy, a crime ring work-
ing in an area that may have been
arrested and more.
That can all have effects on
local crime reports, he said.
According to Bordi, the depart-
ment uses an in-house system
(computer-aided dispatch sys-
tem) to keep track of reported
crimes in the township.
CAD systems are only as good
as the information you put in
them, he said.
While we use the UCR to try
to track trends and patterns of
certain crimes, I recognize that at
the same time so much crime
goes unreported that you cant
depend on it solely.
In the next three months, the
department will implement all
possible means of social media to
better communicate with the
public, Bordi said.
The department currently
uses Nixle to keep residents up-
dated, but Bordi believes it does-
nt get out to enough people.
Social media would make it
easier fort the department to no-
tify the public when an area
needs to be avoided, announce
burglaries and aid the police in
locating a suspect, Bordi said.
The department will also up-
date its website, making naviga-
tion and communication between
the department and the public
easier.
It creates lines of communi-
cation that otherwise wouldnt
have been there in the past,
which I should think should lend
itself to getting more people to re-
port crimes, he said.

more. Tolnick is still in the begin-
ning stages of his company after
jumping around in college and in
his career. But he has his mind set

I have worked hard enough up
unto this point of my life and I
dont want to be miserable for the
rest of it. I dont believe I am enti-
tled to anything, but I would like
to be happy. Making jerky for peo-
ple who really enjoyed it, saying it
was the best jerky they ever had,
that made me happy in a way that
not a lot of other things did, he
said.
