School valedictorian to law
school student, Voorhees native
Matt Tolnick embarked on a ca-
reer change he never imagined
starting a beef jerky company.
Tolnick graduated from East-
ern in 2001 and stood by his fel-
low classmates as valedictorian.
During his time at Eastern, he
was scholastically inclined, keep-
ing up with his grades. He played
on the basketball team his fresh-
man year, but didnt believe a ca-
reer in the sport would pan out.
I wanted to go to the best col-
lege I could, and I figured things
would align themselves from
there. I never had any specific
goals, he said.
Tolnick attended Duke Univer-
sity, graduating with a degree in
public policy studies and eco-

Tolnick started making jerky
in 2002 with college friends
nomics. While thinking about
pursing a career as an NBA
agent, he thought going to law
school after Duke would be a rea-
sonable move toward his future
aspirations.
That was something I had
kicked around a little bit. When I
went off to college, I didnt have a
specific idea for a major. It wasnt
like this is what I have to do with
myself. To me, it always seemed
like I could, and had the ability
and the potential to do so many
things. It was always so hard to
settle on one, he said.
He set himself up for a career
in law knowing he would have to
go back to school, studying for a
number of years if he pursued
his degree in business.
In 2002, Tolnick started mak-
ing beef jerky with a few college
friends, splitting the cost of a $50
dehydrator from Wal-Mart. They
decided buying jerky was expen-
sive.
The first batch wasnt good,
he said. Back then I didnt have
the spice cabinet that I would
come to have in subsequent
years. We were following the di-
rections of the dehydrators ...
thats not how you make good
beef jerky.
According to Tolnick, using
lean cuts of meat is a better op-
tion over ground beef. When he
discovered more gamy pieces
turned into a better quality jerky,
as well as the rudimentary un-
derstanding of flavors, he took
the idea and ran with it.
I was able to quickly have
something as good as what we
were getting in stores, he said.
But he wasnt keeping track of
his recipes.
That came later, he said.
The jerky sharing did not trav-
el past his core group of friends.
It would be gone before you
knew what to do with it, he said.
He made small batches, mak-
ing jerky the same way someone
would make cookies or baked
goods in their house or apart-
ment.
When he went to UCLA, he
continued to make jerky and
began to hone in on flavor pro-
files.
By the third year in law
school, I decided I had enough of
the law courses and wanted to
branch out and take whatever

The evolution of The Voorhees Town Cen-
ter into our downtown continues with the
opening of Iron Hill Brewery & Restaurant,
with the first pour planned for early Au-
gust. Iron Hill will be another addition to our
restaurant row and bring an exciting new
concept to the Boulevard.
Iron Hill takes its name from an historic
Revolutionary War landmark in Delaware,
where Generals Washington and Lafayette
battled against General Cornwallis to ensure
American liberty.
It was the pursuit of happiness as de-
scribed by the Declaration of Independence
that led to the formation of Iron Hill in 1994,
when two award-winning home brewers,
Kevin Finn and Mark Edelson, teamed up
with Kevin Davies, an experienced profes-
sional in restaurant operations, to open the
first Iron Hill.

will be open for
lunch and dinner
seven days a week,
serving made-from-
scratch menu items
that include soups,
sandwiches, pizzas,
salads and entres,
covering a variety
of cuisines from
ethnic to hearty
comfort foods. Sig-
nature dishes in-
clude cheesesteak
egg rolls with fried
onions, crispy fried matchstick potatoes with
ketchup and horseradish-chive sauce, pan
seared sea scallops with crabmeat, Lejon
pizza with Florida rock shrimp, bacon, green
onion, mozzarella and horseradish sauce,
and Dijon chicken breasts with cheddar
smashed potatoes.
The restaurant will feature a comfortable
and welcoming interior bar and dining areas
with large plate glass windows separating
the restaurant from the state-of-the-art brew-
ery that will produce Iron Hills award win-
ning brews.
Through the brewerys windows, beer en-
thusiasts will be able to watch the brewing
process and enjoy Iron Hills six house beers,
monthly beer releases and selections from
the bottled reserves as well as the brewerys
award-winning beers from over the years

inally, nine months after Super-
storm Sandy touched ground,
New Jerseys economy is gain-
ing momentum.
A report released last week by Wells
Fargo, the states second largest bank
by deposits, says that federal and in-
surance money flowing into the state
to aid in the Sandy recovery started to
pay dividends in the first half of 2013,
and should continue to propel the
economy for the rest of this year.
According to the report, the state
added 4,200 construction jobs from
January to June of this year. The
same time last year, the industry lost
4,500 jobs.
Its a great sign for the state. Gov.
Christie estimated New Jersey suf-
fered $37 billion in damage from the
storm. Approximately 22,000 homes
were left uninhabitable and 325,000
others were significantly damaged.
Now, in the dead of the summer,
with the start of hurricane season ap-
proaching again, construction is heat-
ing up, fueling the states overall eco-
nomic recovery.
The Wells Fargo report wasnt all
peachy, though. While New Jerseys
economy was significantly better in
the first half of this year compared to
last, it still lags behind national aver-
ages. Six percent of all mortgages are
in foreclosure, the second-highest rate
in the country behind only Florida.
Housing prices grew only 2.9 percent
year over year, while the national aver-
age stood at 12.2 percent. New Jerseys
unemployment rate dropped almost a
point in the last year, and that trend is
expected to continue, but it still sits at
8.7 percent compared to the national
average of 7.6 percent.
These stats beg the questions:
Should we compare New Jersey to the
rest of the country? Or should we just
compare the Garden State to itself ?
New Jersey is a very unique state in
that its economy is fueled strongly by
two major metropolitan regions whose
city is in another state. The economy
works differently here. Employment
works differently here. Elections work
differently here. So why, then, if we
are an outlier, must we compare our-
selves to others?
For once, we need to focus on our
own recovery, and ensure we are
adding as many jobs as we can, no
matter what our stats look like com-
pared to every other state.
