What are the proper conditions for storing wine?


Proper wine storage becomes important when keeping wines for the long term. If you typically drink your wines within a month or so of purchase, the storage environment is less critical, but certain basic rules should still be followed. Long-term or short, the one condition that destroys a wine the fastest is a warm environment. I suggest avoiding storing wine in places where the temperature is consistently above 68 degrees. If the room reaches 68 degrees for short periods of time intermittently throughout the year, then I would be okay with that. (Humidity is not as critical as temperature, unless it is consistently high, say above 90% and you also keep your wines in wooden crates, which are not compatible with high humidity.) Rooms or storage areas with extremes in temperature, vibration and light must be avoided. Ideally, and especially for long-term keeping of quality wines, the temperature range should be narrowed to 50 to 60, for both red and white wines. Failing to keep wine within these limits will either accelerate the aging (high-temperature conditions) or slow the aging (cold temperature conditions), and both conditions will degrade the character and balance of the wine. Laying bottles down bottles on their sides will keep wine in contact with the cork and insure that it remains moist and expanded for keeping a tight closure. A dry cork, arising from a bottle stored upright, will become brittle, shrink and eventually allow air to get to the wine. Over a long period of time, air will eventually ruin the quality of the wine. If you are a relatively serious wine collector, you may want to consider a wine storage unit that works similar to a normal refrigerator. The difference is in the wine storage units precise control of storage temperature in addition to having a low light environment and vibration-damping design. A normal refrigerators motor will cause vibrations that could harm very old wines that contain sediment. Wine storage units come in a wide variety of sizes and have bottle shelves or drawers for holding as few as 24 bottles or as much as 2000 bottles, and sometimes more. The largest units are walk-in rooms with light, bottle racks, shelves and a refrigeration unit, delivered complete and ready to assemble With apartments or houses without basements, the wine storage unit is a necessity for keeping valuable wines. If you have a house with basement that has fairly consistent temperature and humidity throughout the year, you automatically have a low-cost, convenient storage area. Always keep wines in a relatively dark area of the basement, as sunlight, and to a lesser extent, fluorescent light will harm wine.

Located on Arbor Road, the SummerWood estate is a welcoming landmark for travelers venturing west on Highway 46. EBERLE WINERY
Celebrating 34 Years

Gary Eberle is known as the Godfather of Paso Robles wine country, and with a string of successes in 2013, he proves why. Not only is Eberle the longest continuously family-run winery in Paso Robles, but they are celebrating 34 years at Eberle and their 30th vintage of Cabernet Sauvignon, helping to place Paso Cabernet on the map. As if that wasnt enough, Gary was just voted #43 on IntoWine.coms Top 100 Most Influential Winemakers list, and the winery is the recipient of the Winery of the Year as voted by the wine judges at the Central Coast Wine Competition (and where Eberle racked up 12 medals!) Originally from Pennsylvania, Gary found wine at an early age. I suddenly discovered what James Bond was talking about, he says. I was young and stupid and went from drinking Boones Farm to Chateau Latour. Fresh out of U.C. Davis, he bought 160 acres in Paso Robles in 1973, long before wine was even a viable commodity. He started by heading his familys Estrella River Winery. By 1980 he co-founded the Paso Robles Appellation and in 1983, Gary opened the doors to his own Eberle Winery with the premiere of his 1979 Cabernet Sauvignon. Though known for Cabernet and Chardonnay, Gary was the first one to commercially plant Syrah nearly 25 years ago. A visit to the Eberle tasting room off Highway 46 East begins, not inside the tasting room, but with a moment with the bronze statue of a boar sitting out front of the main doors. This is replica of an original casting made in 1620 that sits in Italy. Eberle means little boar, in German and it is considered good luck to rub the boars nose and toss a coin in the water. All money collected at the Eberle boar fountain is then donated to local childrens charities. Once inside the tasting room has expansive views of the surrounding vineyards and the long wood bar can accommodate a number of people. Eberle Winery offers a free 30-minute tour of their facility discussing the entire winemaking process, with little nuggets of truth

like, The difference between wine and children is that you can sit down and reason with a bottle of Cabernet, one of Garys sayings. The winery also has a beautiful picnic area overlooking the vines and a bocce ball court. And Eberle is heavily involved in the community, most notably being the founder of the long running Paso Robles Rotary Winemakers Cook-Off held each August, which raises money for local charities. The annual event pulls in 30 winemakers who personally grill up their best dishes to match their wines. Its a feast of food and wine with live music and has raised over $400,000 for local high school charities. Unlike many wineries, Eberle has always offered complimentary tastings that include five tastes of anything on their list. The wines you will find at Eberle include Cabernet, Chardonnay, Viognier, Sangiovese, Barbera, Zinfandel and a lovely little kitchen sink blend called Full Boar Red. The majority of Eberle wines are priced under $25. Garagiste Festival Adds New Event


64 Winemakers to Pour During Festival
The Garagiste Festivals announced The Opening Round, a brand new tasting event joining the line-up of the 2013 Garagiste Festival in Paso Robles, which will be held from November 7th 10th. Bringing the total number of garagiste winemakers pouring hand-crafted, high quality wines during the festival to 64, The Opening Round showcases 15 outstanding artisan winemakers from across California. The event will be held at Atascaderos Pavilion on the Lake on Friday, November 8th. The Festival also announced two new Southern California Taste of Garagiste mini-tastings at The Petersen Automotive Museum and Sonoma Wine Garden in August, featuring winemakers who will be pouring at the November festival. DON BRADY
Robert Hall Winery
Texas native, Don Brady, has made Paso Robles his home. For the past twelve years, as winemaker at Robert Hall Winery, he has played a lead role in building the nationally distributed brand to be recognized as a quality, food-friendly and age-worthy wine. After graduating from Texas Tech Universitys horticulture program, he began his winemaking career in Texas where he worked his way from small vineyards and wineries to the largest in the state. Having achieved everything he could, including being awarded Louis F . Qualia Award for outstanding contributions and leadership in the Texas wine industry, Brady knew it was time to move to California, where some of the top wines of the world are produced. His career flourished in California. At Delicato Family Vineyards he earned worldwide acclaim for his part leading the team to receipt of the International Wine and Spirits Competitions United States of Americas Winemaker of the Year Award. In 2006 he was named the Central Coast Winemaker of the Year by the California Mid-State Fair and in 2010 Robert Hall Winery was award the Golden State Winery of the Year from the California State Fair. When Brady joined the team at Robert Hall in 2001, he was excited to be part of a winery that would allow him control of the product from the vineyard to the bottle. Sharing a vision with owner, Robert L. Hall, the two worked together as the winery located on Mill Road, just off of Highway 46 East, was built and the brand was developed. Vintage after vintage the Robert Hall brand delivers a consistency that comes from knowing each block of the vineyard and Brady is still as excited about crafting the wines as he was twelve years ago. According to Brady, The 2013 harvest is showing signs that this will be a great vintage. The fruit started coming in early with all varietals delivering wonderful, high-quality fruit and we expect to finish early as well. The wine made this vintage will be bottled in the nationally distributed white label, the reserve burgundy reserve label and the new silver/gray Cavern Select label. Cavern Select wines are very limited in production and available only to club members and tasting room visitors. Each vintage Brady will select a handful of varietals to be released the highest quality wine. The Brady family now thinks of Paso Robles as home; however, they do miss Texas. This harvest since Brady could not get to Texas, Robert Hall Winery decided to bring a piece of Texas to him. On October 19th, the winery will host a traditional Texas-style BBQ to celebrate Harvest Wine Tour Weekend. The winery brought in famous pitmaster, Scott Roberts, from the Salt Lick Restaurant in Driftwood Texas. Join the team at Robert Hall Winery, Saturday October 19th for a Texas feast and see why BBQ connoisseurs across the nation seek him out. Venteux Vineyards is a dream realized by two families who share a passion for wine and hospitality. In 2000, the Stelzle family bought 12 acres of property in the renowned wine growing region of the Templeton Gap. This exceptional viticultural area is known for hot, dry days and cool damp nights. Vibrant describes Estrella Restaurant. The color palette of its surrounds reflects the rich cultures within the food. Tastes of Sante Fe, NM, Spain and Argentina are prepared to excite and intrigue in such a way that a first-time guest cant help but want to savor another one of their creations. And what a selection there is at Estrella. The Latin Rivera cuisine combines flavors to make for a distinctive and memorable meal. Among Chef Travis Borbas offerings, the Tapas menu includes Grilled Scallop Ceviche, in which a citrus marinade with red onions, oranges and mango commands the taste buds. Crispy Masa Cakes topped with servings of shredded chicken, chipotle-tomatillo sauce, sour cream and a spicy cabbage salad is fun to share. For lunch, a Cuban Sandwich of Mojo marinated pork loin and ham and the Braised Chicken and Chorizo Taquitos are especially popular as well as the new southwest green chile burger. For dinner, the Chile Relleno entre features roasted Anaheim chilies with a choice of fillings including roasted corn and crab, queso fresco or carnitas and two varieties of salsa. Seafood entrees include a Plantain Crusted Halibut served with mango-habenero salsa and coconut-green chili sauce. The Lobster Tacos are finished with smoked paprika-lime garlic sauce. Perfect Pairs
There is a definite chill in the air and as autumn approaches so does the anticipation of hearty dishes and bolder wines and Talley Vineyards has recently released their 2011 Stone Corral Pinot Noir which is perfect for the upcoming season. Pinot Noir is one of my favorite varietals as it contains many different characteristics that make it a natural pairing for meals. Normally, I make traditional pork chops with a potato hash but using boneless pork chops and a mandolin to slice the potatoes transforms this dish into a meal that is guest worthy for any occasion. The 2011 Stone Corral Pinot Noir complements the hint of flavor from the apple cider and brings out the earthiness of the pork. Deep garnet in color, this wine has a vibrant bouquet layered with juicy notes of black cherry balanced by savory hints of nutmeg, sweet tobacco and cedar. This full-bodied Pinot Noir has plush flavors consistent with the aromas, as black fruits mingle with mineral and

spice notes. On the palate, the texture is rich with medium tannins and a long, dusty finish. SAUTEED PORK CHOPS WITH SWEET POTATO AND APPLES


Recipe adapted from One Pan, Two Plates by Carla Snyder

DIRECTIONS 1. Combine the cider, cinnamon and tsp salt in a cup. Set aside. 2. Pat the pork chops dry and sprinkle generously with salt and pepper. 3. heat a 12-in skillet over medium-high heat and add the olive oil. When the oil shimmers, add the seasoned pork chops to the pan and cook until lightly browned on the first side, about 3 minutes. Turn and cook until browned on the second side about 2 minutes longer. Transfer the pork chops to a plate (they wont be cooked through at this point). 4. Add the sweet potato, apple, shallot, cider mixture and a grind or two of pepper to the hot pan. Bring it all to a simmer, cover and reduce the heat - the pan should bubble, but not too aggressively. Cook the potato mixture until a fork easily pierces the partially cooked potato but there is still some resistance, about 10 minutes. 5. Return the pork chops to the pan (along with any juices accumulated on the plate) and nestle them into the potatoes and apples. Cover and cook until the meat is cooked through and the potatoes are tender, about 8 minutes longer. Taste and adjust the seasoning. 6. Transfer the pork chops, potatoes and apples to two warmed plates. There should be some liquid remaining in the pan to serve as a base sauce. If the potatoes have absorbed all of the liquid, add 2 to 3 Tbsp cider to the pan and heat it briefly over medium heat. Stir the mustard into the pan juices with a fork. Taste the sauce and add more pepper if it needs it. 7. Spoon the sauce over the meat and vegetables, sprinkle with parsley for garnish.

At 2,500-acres, Rancho Tierra Rejada in Paso Robles is a massive plot of earth. In fact the Spanish name roughly translates to, the land of worked earth. Its rather fitting then that Broken Earth Winery owns and operates the land and is now in the hands of winemaker Chris Cameron, a veteran winemaker from Australia. Cameron is vice-president and director of winemaking for Broken Earth, but it is not his first winemaking foray into Paso Robles. Though born and raised in Australia, Cameron has worked more than 35 vintages around the globe including in Italy and Turkey, not to mention the U.S. For the last six years Cameron has called Paso Robles home, working at first at Summerwood Winery before taking the helm at Broken Earth Winery on Paso Robles Eastside right off Highway 46. And Camerons diligent focus on the wines at Broken Earth has already been recognized, between 2012 and 2013 they have won 5 best of class awards and 15 gold medals at various wine competitions throughout the US. Weve come a long way in our first 12 months, Cameron explains. The winery grounds at Broken Earth are dotted with sprawling lawns, Italian Cypress trees, multiple patios and picnic areas and youll probably notice the solar panels that provide the majority of energy for the winery. As you enter the massive 110,000 square-foot winery and hospitality facility, not only is the cavernous space decked out with multiple tasting bars, but there are five different wine labels to choose from. The winery makes a full range of wines from dry table wines to dessert and specialty wines. The multiple labels you will encounter include Shimmin Canyon, Pull, Triptych, Quadrant and Broken Earth. The strategy was to develop different wine brands and styles at a variety of price points to try and meet the needs of every guest. There are no tasting fees for any of their estate wines, a rarity for any tasting room, and theres even a small deli on site. In addition to the wines they have just released their single vineyard series, those wines made from specific vineyards and not blended from other vineyard blocks. Wines under the Triptych label include two wines, a white blend made from Viognier, Pinot Gris and Chardonnay & a red blend made from Grenache, Syrah and Petite Sirah. The Broken Earth wines include Petit Verdot, Tempranillo, and Albario, Cabernet Sauvignon, Merlot,

Petite Sirah, Grenache Blanc and Chardonnay. The Broken Earth wines include Petit Verdot, Tempranillo and Albario. All the five labels are offered in the tasting room and on their website. There are about 20 different wines to choose from on the tasting menu with bottle prices ranging from $15 to $40. Broken Earth wines are distributed throughout the U.S and even Australia. The cheeses are from Holland, Spain, Wisconsin and the Central Coast, and are made from cow, goat and even sheeps milk.

The 2010 Jersey Girl, an estate Syrah, is paired with a Central Coast cheese called Seascape, made from cow and goats milk. The 2010 Jack of Hearts, 64% Estate Petit Verdot, 36% Estate Cabernet Sauvignon, is paired with Ewephoria, a gouda made from sheeps milk, that comes from Friesland, Holland. The 2010 Hells Kitchen, 44% Estate Grenache, 37% Estate Syrah, 15% Mourvedre, 4% Tannat, is paired with a cheese from Spain called Iberico & Quince, made with cows milk. There are two separate flights tasting room visitors can choose from the Reserve or the Jada Signature Series. Here are the wines found in each flight.

Paso Robles is home to hundreds of wineries, many of which are known for their incredible wines, amazing views or friendly staff. Sometimes you get lucky and discover a winery that embodies all three of those qualities, much like Niner Wine Estates does. Niner Wine Estates, known for their views of Heart Hill and their signature Cooking Classes, are also known for their incredible wines. From Syrah to Cabernet Sauvignon, Albarino to Sangiovese, Niner Wine Estates consistently produces highly desired wines, thanks to the works of winemaker Patrick Muran. Patrick, who joined Niner Wine Estates four years ago as the assistant winemaker, was promoted earlier this year as head winemaker and is excited to further explore the innovative side of winemaking. The creativity is fascinating to me. Its the baking approach vs. the cooking approach; you can either stick to a recipe or free flow, and thats the aspect that really appeals to me, Patrick said. After growing up in Arroyo Grande, Patrick headed south to obtain his degree in Microbiology at UC Santa Barbara, where he stumbled into the wine industry through a friends father. Upon graduation he ventured to San Diego where he worked as an EMT, but eventually made his way back to his roots on the Central Coast. He focused on his degree and started working in the lab for Orcutt Road Cellars, which then led to a cellar job, and the rest, as they say, is history. Throughout his time at Orcutt Road Cellars, Patrick had great exposure to many different winemakers, and soon discovered his passion and talents in this field. Keeping connected with his peers, he was able to work his way up to his position today. What I love most is what a close-knit community this is, we always circle back to each other and share ideas, Patrick said. Working for Niner Wine Estates has given Patrick the opportunity to truly push the boundaries of his talents. Bob Lindquist is a cool guy, huge music fan, loves the Dodgers, a true laid back Southern California dude and a great winemaker. But it is Qupes Syrah that is way cool. Cool climate that is. Stylistically, cool climate Syrah made is uniquely different from those made in warmer areas. As a rule, wines produced further inland tend to be bigger, fatter, richer, and often feature jammy flavors of blueberry, raspberry and cherry. Cool climate Syrah is much more restrained. The wines are aromatic and produce classical floral notes of lavender or violet, smoked meats, leather and tobacco. Intensive, concentrated flavors include black fruit, cherries, ripe blackberries and plums; white pepper and high tone spices are common characteristics. Overall, cool climate Syrahs show a much more elegant and balanced style. The wines have outstanding ageing potential and are more suited to food pairings. Santa Ynez Valleys 4th Annual Scarecrow Fest


Solvang, the Danish-centric town nestled in the heart of Santa Barbara wine country on Californias Central Coast, will usher in the fall season as they kick off their Fourth Annual Scarecrow Fest and Contest on Friday, October 11. This years Scarecrow Fest will, for the first time, be expanded to include four additional Santa Ynez Valley towns: Buellton, Los Alamos, Los Olivos and Santa Ynez. During the month-long event, which concludes on Monday, November 11, Solvang businesses will participate in the contest by featuring a scarecrow of their own creation, posted at their location. Locals, tourists and other area merchants will vote via ballot boxes scattered about the City, for scarecrow winners in eight different categories: Most Danish, Best Action Scarecrow, Best Use of Natural Materials, Best Traditional Scarecrow, Spookiest, Best Use of Business Theme, Most Humorous, and Best Use of Recycled Materials. Ballots will be available at the Solvang Visitors Center and at participating businesses, and will feature maps to direct voters to each of the contests scarecrows. Once a public winner has been chosen for each category, the Best Solvang Scarecrow will be selected by a panel of 10 judges, who will be presented with one scarecrow winner from each of seven different areas of Solvang. The Best Scarecrow from Solvang will be entered into the Valley-wide competition with the winners from Buellton, Los Alamos, Los Olivos and Santa Ynez, to determine the Valleys Best Scarecrow. The ultimate winner will be announced on November 20 at 2:30 p.m., at the Wildling Art Museum (Mission Drive and Fifth Street), during the November edition of Solvang's monthly "Third Wednesday". The Valley winner will receive the contests exclusive, handcrafted trophy, the Harvest Cup, to keep on display in their town until the conclusion of the following years contest. Solvangs Scarecrow Fest was created to drive business to each of the participating businesses and organizations, as well as to the town and the surrounding Santa Ynez Valley locales, in general. The eight different voting categories mentioned above, were selected through a conscious effort to nurture friendly competition and community among the local businesses, to highlight the unique traits that Solvang possesses, and to encourage mindful, ecoconscious creativity. As added enticement for Solvang visitors, the Valley will play host to numerous and varied activities during the month-long Scarecrow Fest stretch. Solvangs Third Wednesday Gear Up for Halloween


Solvang's monthly "Third Wednesday" activities in October, to be held on Wednesday, October 16, 2013, will include a Fall Frolic Block Party at the towns West End, which will serve as a Halloween boot camp of sorts for locals and visitors seeking seasonal food, fun, furry-friend frivolity and savings. In addition to the weekly Santa Barbara Certified Farmers Market, regular Third Wednesday deals at local restaurants and gourmet food purveyors, the popular Wine & Beer Walk and discounts at local hotels, the October Third Wednesdays West End block party will feature live music, free treats and cider, free face painting for both children and adults, a doggie costume contest sponsored by Lemos Feed & Pet Supply, another Third Wednesday Cash Mob, and free admission to the Wildling Art Museum, which will stay open until 7:00 p.m. for all West End party-goers. Octobers West End Fall Frolic fun starts with a Cash Mob gathering at 5:20 p.m., when Third Wednesday bargain hunters are invited to meet in front of Santa Ynez Valley Real Estate (1595 Mission Drive, by the clock on the corner of Mission Drive and Atterdag Road), each bearing $10 to spend. The Cash Mob will travel together to Octobers mystery shopping location one of the local merchants who will offer an exclusive Third Wednesday discount on their wares, allowing Mobbers to put their $10 to good use. Zaca Mesa, a loose translation meaning peaceful table, has been a winery of firsts. They were the first winery to plant Syrah in Santa Barbara County in 1978, and the first Central Coast winery to appear in Wine Spectators Top 10 list. Their Syrah was served by President Clinton to French President Jacque Chirac at a White House State Dinner, and also served at President Reagans 80th birthday party at the Beverly Hilton. Thats a pretty impressive history. The focus is squarely on Syrah, but youll also find Chardonnay, Viognier and Roussanne as well as Mouvedre and Grenache. The rustic wood clad tasting room, shaded by old oak trees, is large enough so you dont feel cramped, but small enough to remain intimate. At Zaca Mesa youll get a tasting of seven wines for $10. The tasting flights change every couple of weeks based on availability of the wines so theres always something different and new to sample. You can relax at one of their many picnic tables or challenge your friends to a game of chess on their life-size chessboard. A quick walk on their hiking trail provides extraordinary sights of the Santa Ynez Valley and surrounding farms. Tours and large group tastings are

available, so call in advance for a reservation. Family owned for nearly three decades they are dedicated to the farming of their vineyards and the 2013 crop looks promising. They have been shoot-thinning and removing leaves around the fruitingzone for balanced yields and maximum exposure to the early-morning sun which should lead beautiful fruit once harvest begins in August. Rancho Sisquoc Winery is one of the oldest wineries in Santa Barbara County having started growing grapes in 1968 with Cabernet Sauvignon and Riesling. Today it is still a family owned winery and their 310 acres of vineyards overlooking the Sisquoc River are home to unique micro-climates which allow them to grow diverse varieties such as including, Malbec, Merlot, Syrah, Pinot Noir, Cabernet Franc, Sangiovese, Chardonnay, Sauvignon Blanc and the obscure German grape Sylvaner. To the Chumash Indians who once lived on this land the word Sisquoc meant a gathering place and wine seekers still gather down a long dirt road amid lush green pastures and fruit trees at the winery tasting room, truly getting a feeling of early California. The vineyards are warmer than vineyards in the lower Santa Maria Valley, but Rancho Sisquoc is cooler than the Santa Ynez Valley just 20 miles south due to what is known as the transverse range; coastal mountains which running west-east, not north-south, that bring cool winds and fog inland from the Pacific Ocean, tempering the vines. Winemaker Alec Franks abides by a simple philosophy for the 18,000 cases he makes; create high quality wines in limited quantities, and offer them at a reasonable price. Tasting fees are $8 for any six wines from their wine list and there are usually a dozen wines to choose from, and a stemless logo glass is included. You can bring a picnic to the beautiful and quiet grounds any time you like. Rancho Sisquoc is truly a throwback to another time. The 5th anniversary of this popular event celebrates the Spirit of Santa Barbara with over 100 ways to crave, toast and explore the bounty of the region. Tessa Marie Wines


Graduating from high school, most people think about college. But Tessa Parker was thinking about wine. Coming from a winemaking family (her father is Eli Parker who has his own label and her grandfather was Fess Parker) her college curriculum was working in her familys tasting room and ironically at age 18 she was legally unable to sample the wines she was pouring. But that didnt stop her enrolling in the Enology and Viticulture program at Allan Hancock College in Santa Maria. During her first semester while working harvest at a local winery, she discovered what would become her favorite wine - Sangiovese. This Italian grape captivated her because of its food-friendly appeal and ripe fruit. I like to make New World-style wines with bold, standout flavors that still demonstrate balance, she says. Not yet a veteran winemaker, she nonetheless has multiple harvests under her belt. She crafts her wines in a small, unassuming industrial warehouse, a stark contrast to her sleek modern Italian-styled tasting room. For me, making wine is really about making art. I dont mean that I take it all too seriously; its just that I like to take my time when Im making wine, Tessa says. I rely much more upon my intuition and sense of taste when Im in the cellar, than on analysis. I guess my approach is intuitive, more than anything else, she says, You can sample her wines including Vermentino, a sparkling Vermentino, Sangiovese and Coquette - a flirty blend blend of a sparkling Sangiovese and Syrah, hinting at seduction. Santa Maria is a bit of a difficult place to describe to Pinot-philes who havent been there. Its basically a cowboy town full of ranchers and farmers and big, manly trucks. Lots of cowboy hats, cowboy boots and big belt buckles. Not exactly not the backdrop most imagine of when daydreaming about wine country, especially that of the refined Pinot Noir. Nevertheless, the Santa Maria Valley produces bar none, some of the finest Pinot Noirs that the entire state of California has to offer. You just have to come to grips with the image of cowboys and an open fire grill lined with sizzling beef in your fantasy. One such cowboy figure is Bob Torres. Torres family has been in Santa Barbara Countys Santa Maria Valley for over 100 years. A local legend himself since he opened his first Pappys restaurant in 1957, Bob is an old-school Santa Maria guy, with the cowboy hat, cowboy boots and belt buckle to prove it. He loves this land. Bob planted five acres of vines on his Santa Maria estate in 2000. The quality of the fruit was recognized immediately, and Caymus Chuck Wagner snatched up all he could get. In 2006 Torres bottled under his own label Toretti Family Vineyard. Forget the images of cowboy country when you enter their newly opened Los Olivos tasting room. Los Olivos Tasting Room

Established in 1987, the Los Olivos Tasting Room & Wine Shop was Californias first independent tasting room, specializing in Santa Barbara and Central Coast Pinot Noirs. Located in the heart of the Santa Ynez Valley wine country, this beautiful and inviting tasting room is perfectly situated to also feature handcrafted wines produced by smaller, Central Coast winemakers and wineries that do not have their own tasting room or have limited hours. The robust assortment of wines changes constantly, giving tasters the opportunity to experience several new wines each visit. Tastings are only $10 per person, and includes tastings of up to nine wines, including four Pinot Noirs, two white wines, two other select reds and a dessert wine. The sign indicating Consumable Art above the door is an accurate reflection of the artistry that is reflected in each of the wines carried. Visitors will often have the opportunity to taste with owner Chris Benzinger, whose knowledge of wines is incredibly extensive. Now entering its fourth year in its off-Grand location in downtown Los Olivos, Dragonette Cellars has rapidly become known for the high quality of its limited and/or allocated, smallproduction, ultra-premium Sauvignon Blanc, Pinot Noir and Rhne styled (Syrah- and Grenache-based) blends. Prominent wine critics, including the Wine Spectator, Wine Advocate and Stephen Tanzers International Wine Cellar have also discovered Dragonette Cellars, bestowing high praise and scores on their wines. Utilizing a network of personal vineyard contacts, they obtain grapes from selected blocks within meticulously managed vineyards throughout the Sta. Rita Hills (Pinot Noir), Happy Canyon (Sauvignon Blanc) and the Santa Ynez Valley (Syrah). In most cases, they buy grapes on a per acre basis, which allows them to control important viticultural decisions and limit yields to produce the highest quality fruit. In the cellar Brandon, John and Steve focus on allowing their carefully selected fruit to evolve into wines of great complexity, purity and balance. To that end, they monitor each vineyard block carefully before harvest, picking in several passes to ensure optimal ripeness and balance. Fermentation and elevage are monitored obsessively, and the final blends are painstakingly crafted barrel by barrel. Like most passionate wine enthusiasts, a great epiphany led Joe Davis to his calling as a winemaker... While in college on an athletic scholarship, Davis, the son of a Monterey California fishing family, took a job in a wine shop. One Christmas, a good customer brought Joe a gift of a 1978 Clos de la Roche Grand Cru, Domaine Dujac. One sip and he was completely taken with the flavor and sheer deliciousness of the wine.To have winemaking as a life pursuit and to make wine like this, he thought, would be the most wonderful thing in the world. And so his quest began. Joe voraciously read everything he could find that was wine related and enrolled in UC Davis graduate program. In 1985, he met and went to work for Dan Lee of Morgan Winery. While primarily making award-winning Chardonnay, Davis never lost site of that fantastic Burgundy and in 1990, he presented a classic Pinot Noir production plan to Morgan Winery. His original plan included techniques Davis applies today to his Arcadian Winery Pinot Noir; whole cluster fruit is hand picked and is sorted early in the day to ensure chilled fruit. Obviously, not all vintages are the same, the recipe might change, but by using these methods consistently, I impart a common thread among my wines that translates into my style says Davis. He employed these procedures for all of his Pinot Noir vintages (1986-1994) at Morgan and then took this knowledge to a general managers position at Bernardus Winery. Finally, in 1996, on his own and ready to fulfill his dream, he released Arcadian Winerys first vintage of Chardonnay to rave reviews. Joe realized another dream in late November 2011 when he opened his long-anticipated tasting room in the Lompoc Wine Ghetto. Wine Bar Tasting


The most common tasting experience is a Wine Bar Tasting. You step up to the bar where typically a list of wines being poured is displayed. Expect to pay a tasting fee between $10-$40. Some tasting bars will offer you the option to taste a library or reserve wine. Exercising this option increases the fee, but will allow you to taste very unique, old or rare wines.

Sit Down Tasting


A Sit Down Tasting usually requires an appointment, and there may be a slightly higher fee than a wine bar fee. Seated in an elegant room, you are poured several wines by your winery host. Expect your host to describe the unique characteristics of each wine and how it was made.

    

       

  

Walk Around Tasting


A Walk Around Tasting is a combination of a tour and a tasting. Your host brings along several bottles of wine on your tour, and may take you to a garden area of the winery to pour the first round. Then you move to another place within the winery to sample the next wine. This experience continues until all the wines are tasted.

 

    

 

  

Barrel Tasting
         
Another popular tasting experience that can be part of a tour or a Walk Around is a Barrel Tasting. Your guide takes a wine thief, a special siphon placed into a hole in the top of a barrel to extract tasting samples of a maturing wine. The sample allows you to taste what the wine is like in the middle of developing its full potential.

Some wineries are so small that they need to know when you are coming so someone will be there to greet you. Others have sit-down tastings that start and end at specific times. Its always a good idea to schedule your appointments well in advance.
