Pat Bendall of Woodlands Theme Park
Woodlands Theme Park was the inspiration of Pat and Graham Bendall in
1989. Pat is very creative and designed much of the original park. Son Mike
joined the firm with brothers Chris and Phil, the family built Woodlands
into a successful tourism business.
Checking out Woodlands Theme Park on Google it says that the all weather
attraction and leisure park is  “ fantastic value for money and a great place
to have fun, explore, enjoy, or just relax” Woodlands Leisure Park is situated
near Totnes in Devon, the advice for new visitors is Don’t trust your satnav
follow the excellent Brown Tourist signs they will take you the easiest route
from the A38.
The park is still owned by the Bendall family and is now run by Pat and son
Chris and we had the pleasure of interviewing this dynamic and interesting
lady who still enjoys the thrills and challenges of running Woodlands and

The Wow Factor
T HE WAITING as they say is almost over for this
month heralds the much anticipated and eagerly
awaited re-opening of the Grand Pier in Weston. With
the gossip mongers in overdrive in terms of what the
Pier will feature, one thing’s for sure the level of interest
in this beacon for tourism and growth can only bode
well for this bastion of Victorian sea-side charm and the
economy in general.
Viewed perhaps rather unkindly as a traditional ‘kiss-
me-quick’ type venue, Weston has much to recommend
for itself. One of the town’s un-sung hero’s has to be the
rather wonderful Weston Seaquarium situated on the
sea front. This is a gem of an attraction offering a rare
insight into ocean life and with an all day family ticket
allowing you to come and go as you please, it offers
entertainment and exceptional value for all the family.
With the sea front and stalwart donkeys in attendance,
the beach will always prove a winner. However, it would
be a pity to discount the other fine opportunities that
exist. Whether it be bowling, the chance to explore
some fabulous Victorian architecture and world class
museums or to plump for the bird’s eye option and soak experience whatever your age or persuasion. With
it all in courtesy of Weston’s very own version of the summer firmly in our sights make sure to factor it in

The Royal Bath and West Show in June 2010, was a major success, with record
numbers of visitors joined with the fantastic weather. The organisers of this
event were very pleased. The Whatson Team were working with the Wookey
Hole team and came back to the office. We did not think that they had been
working. We thought they had been on holiday to Spain as each and every one

A visit to the Lockside Restaurant
I LIKE to think we have visited the Lockside
Restaurant in most of its incarnations, sometime

Blue Ginger, Whitchurch
W E LOOKED forward to trying out Blue Ginger,

Chicken Liver Paté


IngredIents
3Lb chicken liver
recipe of the month

1LB Clarified butter


½ pint of port
thyme
3 shallots
2 star anise
15cl cream
2 eggs
to prepare
Clarify the butter
Clean the liver (taking off the little membrane).
reduce all together the port, thyme, sliced shallots and star anise.

once all the ingredients are ready mix together in a food processor until smooth.
pass mixture through a fine conical sieve.
put the mix in a terrine or 10 ramekins.
Cook in the Bain Marie at gas mark 2.
60 mins for terrine or 25mins for ramekins.

Griddled Sea Bass on a beetroot risotto


IngredIents
4 bass fillets, scaled and pin bone removed
200 grams risotto rice
3 pints of chicken stock
1 diced onion
2 garlic cloves
2 medium sized beetroot
8cl white wine
50grams parmesan
10cl cream

Boil the beetroot until tender, and then dice into cubes.
risotto – sweat the onion and garlic until translucent, add rice & mix together, add the white
wine and reduce until the liquid evaporates, and add boiling stock little by little until rice is
cooked.
Flour the fillets of bass, then pan fry on both sides for 2 minutes.
add the parmesan, beetroot and cream to the risotto.
place a sea bass on a bed of risotto drizzle with herb oil and parmesan shavings.

IngredIents
8oz unsalted butter
8oz chocolate
4oz plain flour
8oz soft brown sugar
4 eggs
2tsp bicarbonate of soda
Handful white chocolate buttons
to prepare
grease & line 10” round spiny sided tin
pre heat oven to gas4, 180c or 350f

Whisk together sugar and eggs until triple in size
When melted and cooled slightly add chocolate & butter to eggs and sugar

Fold in flour and white chocolate buttons

Cut into slices and serve with chocolate sauce, cream or ice cream
