The "Aceto Balsamico Tradizionale di Modena is obtained only by cooked must of grape all harvested in the territory of Modena , matured thanks to a slow acetification, resulting from a natural fermentation and a gradual concentrating through a long ageing in series of casks made of different kinds of wood where no flavouring is added. This gourmet vinegar is presented in a bottle designed exclusively for the Consorzio by Giugiaro inside a unique box with pamphlet. A special commission of judges taste the vinegar through a scoring system and then the Consortium certificate and bottle the product. Gold cap Balsamic Vinegar that must have minimum 25 years of ageing. Ivory cap Balsamic Vinegar that must have minimum 12 years of ageing.

The Production Cycle of Traditional Balsamic Vinegar of Modena DOP

The area of production: the production of Traditional Balsamic Vinegar of Modena must be carried out in the territory of the province of Modena. The Vineyards: the must used in producing Traditional Balsamic Vinegar of Modena may come from grape varieties: Trebbiano and Lambrusco. Cooked must: this is made by slowly cooking and keeping a watchful eye on the freshly pressed grape must made from ripe grapes. Cooking the must will make it more concentrated and evaporate the sugars while increasing the thickness and therefore lending a brown colour to the must, with a classic caramel like scent. Finally, the must will then be sterilized and will become the base to make the mother set of barrels and the catalyst for production. Fermentation: the cooked must goes from a slow alcoholic fermentation to vinegar in wooden vats together with the mother mixture, the real catalyst of the production process. This phase also includes the sedimentation of the must that lends to the purity of the product. The Barrels: the ageing of the vinegar occurs inside wooden barrels that hold various volumes and transmit its fragrance and aromas that are typical of this product. The quality of the wood is truly important and oak, chestnut, juniper, mulberry, ash and cherry are used. Throughout the years the barrels become rich with the fragrance of the balsamic vinegar and allow it to age. Shapes and volumes of the barrels come from a century old tradition that is part of the history of balsamic vinegar itself. Ageing: inside the barrels the vinegar slowly becomes concentrated as it evaporates and sweating through the wood. The open barrels allow oxygen to constantly come into contact with the product and all the mother vinegars to carry on. In the hotter season the vinegar becomes more concentrate, while the cold winters allow for the delicate sedimentation that contributes to the purity of the product. The cyclical and natural process of the seasons is one of the key ingredients in the ageing of balsamic vinegar. All of our Balsamic Vinegar has unique characteristics that are determined by the quality of the raw materials and the complete absence of caramel or additives. The amount of time the vinegar is kept in the barrels determines the intensity of its thickness and fragrance to make it more prized with time. We identify our Balsamic Vinegars with different shaped and coloured labels.

The Production Cycle of Balsamic Vinegar of Modena IGP

The area of production and the vineyards: the production of Balsamic Vinegar of Modena must be carried out in the territory of the province of Modena or Reggio Emilia. The must used in producing balsamic vinegar may come from seven grape varieties: Trebbiano, Lambrusco, Sangiovese, Albana, Ancellotta, Fortana, Montuno. Cooked must: this is made by slowly cooking and keeping a watchful eye on the freshly pressed grape must made from ripe grapes. Cooking the must will make it more concentrated and evaporate the sugars while increasing the thickness and therefore lending a brown colour to the must, with a classic caramel like scent. Finally, the must will then be sterilized and will become the base to make the mother set of barrels and the catalyst for production. Fermentation: the cooked must goes from a slow alcoholic fermentation to vinegar in wooden vats together with the mother mixture, the real catalyst of the production process. This phase also includes the sedimentation of the must that lends to the purity of the product. The Barrels: the ageing of the vinegar occurs inside wooden barrels that hold various volumes and transmit its fragrance and aromas that are typical of this product. The quality of the wood is truly important and oak, chestnut, juniper, mulberry, ash and cherry are used. Throughout the years the barrels become rich with the fragrance of the balsamic vinegar and allow it to age. Balsamic Vinegar of Modena IGP Our Surplus Value

Ingredients: Balsamic Vinegar of Modena IGP is made with cooked must of selected grapes as first ingredient and wine vinegar in a minimum quantity. Does not contain caramel, water or colouring agents. The large use of these ingredients is in compliance with IGP regulation of production, although it is contrary to our philosophy of production. No one of our IGP products has wine vinegar as main ingredient, on the contrary our products are based on cooked must that gives unique density, sweetness and perfumes to our Balsamic Vinegars by aging. These information are always provided on the list of ingredients carried by each bottle. Casks: Our barrels are passed on generations. The most recent ones date back to 1970s. The wood so impregnated with Balsamic flavour, gives the finished product superior quality features. On the contrary the use of new manufactured barrels is largely diffuse. The IGP regulation of production doesnt oblige the use of different kinds of wood. However, we use the following kinds of wood: oak, cherry, chestnut, juniper, mulberry. This let us give strong aromas and perfumes to our IGP products. The capacity of our barrels tends to average 70-80 litres, obtaining a good exchange between wood and product. According to us, bigger sized barrels are not indicated because of the lower contact between product mass and internal surface of the wood. This is frequently forgotten affecting the production quality.

We like to take care of all the characteristics of our products, right down to the tiniest detail. According to us every piece is unique and deserves all our attention, starting with selecting the raw materials right through to packaging the finished product.

Tradition is an essential tool for preserving an historical product and whose quality depends on the experience and palate of the producer.
