Lebanese Rice Pudding (Riz B' Haleeb)

Rice Pudding Ingredients (5-6 servings)


4 cups of milk 10-12 teaspoons of sugar (to taste, I like it sweet so I tend to overdo the sugar) 1/2 cup of rice ( I use Calrose rice) 2-4 Table Spoons of corn flour 2 teaspoons of orange blossom water (syrup made from distilling orange blossoms, found in Middle Eastern grocery stores) Pistachio to garnish

Preparation Method
1. Rinse the rice then let dry
2. Boil the milk with the sugar and rice on low heat, stir continuously, until the

rice softens. 3. As the rice softens add the orange blossom water and the corn flour (add the corn flour slowly start with 2 Tablespoons and check... so the pudding would have the right consistency) and stir it in and boil/stir some more until the pudding hardens and gains the consistency of yogurt. 4. As the pudding hardens, pour it in your heat-resistant serving cups/plates and let rest for a few minutes. Garnish with pistachio and refrigerate 5. Serve cold.
