Raspberry & Choc-Chip Muffins: (serves 4 for a snack/dessert) Ingredients: cup Self-Raising Flour 1/3 tsp Baking Powder

r Tbsp St Dalfour Cherry (whole fruit) Jam 2 Tbsp Natvia Tbsp Flora Ultra Light or Western Star 70% reduced fat Margarine 1 egg white (small) 125g fresh raspberries, pureed 1 Slim Secrets Night-Time Binge Buster Bar (berries with white choc) Little water (if required) Serve with weight-watchers custard, low-fat ice-cream, cream, vanilla yoghurt or frozen berries (optional) Directions: Pre-heat oven to 180 degrees celcius. Puree/Blend raspberries until smooth. Blend in baking powder, jam, Natvia & margarine in a food processor. Beat egg white until stiff. Sift flour. Blend egg white, liquids & flour (do not over-mix). Spoon into greased large muffin tins. Bake for 20 mins. Cool slightly in muffin tins. Tip out & place on cooling tray or serve warm.
