Apple & Cinnamon or Banana Muffins: (serves 7 for Breakfast, or 9 for a snack/dessert) Ingredients: 1 cups Wholemeal Self-Raising Flour

r 1 tsp bicarbonate of soda (baking soda) 1 tsp Baking Powder 1 Tbsp Apple Puree 18g (1/2 cup) Hermesetas/Natvia/Equal/Stevia 1 Tbsp Flora Ultra Light or Western Star 70% reduced fat Margarine 2 egg whites (small) 35ml Queens Sugar-Free Maple Syrup (optional) 1 tsp Vanilla or Coconut Essence Essence (optional) 285g - 2 Large Bananas (ripe) or 3 medium Granny Smith Apples (sliced & boiled) Serve with weight-watchers custard, low-fat ice-cream, cream, vanilla yoghurt or frozen berries (optional) Directions: Pre-heat oven to 180 degrees celcius. Puree/Blend bananas until lumps are removed. Blend in baking soda, baking powder, apple puree, Hermesetas/Natvia/Equal/Stevia, margarine, syrup & essence in a food processor. Beat egg whites until stiff. Sift flour. Blend egg whites, liquids & flour (do not over-mix). Spoon into greased large muffin tins. Bake for 20 mins. Cool slightly in muffin tins. Tip out & place on cooling tray or serve warm.
