Sticky Date Puddings (Meal): (serves 3 for a meal replacement) Ingredients: 1 cup boiling water tsp bicarbonate of soda

a (baking soda) 1/3 cup White Self-Raising Flour cup (60g) Pure Soy Protein (Aussie Bodies Trim) 3 scoops (mini) Stevia 1 Tbsp Flora Ultra Light or Western Star 70% reduced fat Margarine 1 egg whites (small) 108g (12) Angus Park Prunes (pitted) Serve with weight-watchers custard, low-fat ice-cream, cream, vanilla yoghurt or frozen berries (optional) Directions: Pre-heat oven to 180 degrees celcius. Place prunes & boiling water in saucepan, simmer for a few minutes until the prunes have softened. Remove from heat, stir in bi-carbonate of soda. Allow mixture to cool for 5 minutes & blend in a food processor. Add Stevia margarine, egg white & blend. Sift flour & soy protein. Mix liquids with flour (do not over-mix). Spoon into greased large muffin tins. Bake for 20 mins. Cool slightly in muffin tins. Tip out & place on cooling tray or serve warm.
