Courgette carbonara

This is an unusual twist on a traditional recipe, with the carbonara sauce made the traditional way from egg and grated parmesan cheese.

Ingredients
400g spaghetti 2 courgettes, sliced thinly 4 tbsp olive oil 1 small onion, diced 4 eggs 100g parmesan cheese, grated Zest from 1 lemon Salt and pepper

Method
1. Boil a large pan of water, cook the spaghetti according to taste (typically 8-10 mins) 2. Fry the onion in the olive oil until soft. Add the sliced courgettes and fry until they begin to wilt. 3. Beat the eggs together with the cheese, the lemon zest, and the black pepper. 4. Drain the cooked pasta, tip into the frying pan and toss with the courgettes and onions. 5. Turn off the heat, then add the egg mixture and still until the sauce thickens. 6. Garnish with a little extra cheese and serve immediately!
