Salmon Gnocchi Bake

Ingredients 500g packet fresh gnocchi 25g butter 1 small leek, washed, trimmed and thickly sliced 200g packet soft cream cheese 2 tbsp tomato pure 1 2!1 tsp dried chilli flakes, to taste "inely grated #est of 1 lemon 1 tbsp chopped fresh parsley 150g pacific or organically farmed salmon, tilapia or trout fillet, skinned and diced $ Method 1% &reheat the o'en to 200() fan1*0() gas +% Bring a pan of lightly salted water to the boil% ,dd the gnocchi and cook for 2!- minutes, until cooked% ./he gnocchi will float to the surface when they are ready%0 1rain and reser'e 250ml of the cooking water% Set aside% 2% 2elt the butter in a wide, deep frying pan and gently fry the leek for -!3 minutes, until soft% Stir in the cream cheese, tomato pure, chilli flakes, lemon #est, parsley and reser'ed water, until the cheese has melted and e'erything is combined% ,d4ust the seasoning% -% ,dd the gnocchi and salmon to the frying pan and stir to coat% Spoon into a deep 1%2!litre o'enproof dish and bake in the o'en for 15!20 minutes or until lightly golden on top% Ser'e immediately% /ip5 6ook out for bargains at your supermarket fish counter or use canned salmon to make this dish e'en cheaper% $ Salmon, cod and tuna are se'erely threatened by o'er!fishing% /here are a number of sustainable and 4ust as tasty species that work e7ually well in the abo'e recipe 8 in some cases they can e'en be cheaper% See channel3%com fish for more information%
