4. WATER the integrity & purity of beer

Pre-processing
- Malting
- Allow the barley seed to germinate and grow only enough to release the plants store of enzymes and then heated enough to kill the growing plant.

- Water filtering
- To filter out the unwanted chemicals and minerals in water.

- Hops processing
- Hops are harvested, and processed at the farm, as the flowers need to be dried to preserve them.

Brewing
- The malt is ground so that water can get inside. - It is then soaked in water which called mash. - The liquid is then drained from the bottom of the tun called lautering. - The sweet liquor is drained into the kettle, where it is boiled. - Hops are added in the boiled mixture. - The boiled mixture called wort is then drained from the kettle, through a cooler which cools it to the correct fermentation temperature. - Yeast is added to ferment. - Once fermentation is complete the beer can be filtered. - The beer is then cooled for cold-conditioning.
