Prep: Cover meat in flour Mix softened butter (1 sticks for two bones) & seasonings (Seasoned Salt, Montreal Steak Seasoning, Chop n Steak Seasoning, etc) Spread mixture on meat for a minimum of 1 hour (more is better) Meat should be room temperature before cooking. Cook uncovered Do Not Open Oven While Cooking Cooking: Preheat oven to 500 Cook for 15 - 20 minutes Reduce temperature to 325 for the remainder of cooking time. How to calculate cooking time: 13 minutes per pound for Rare 17 20 minutes per pound for closer to Well Done Au Jus: Scrape drippings and grease from bottom of the pan and place in saucepan add a little flour if needed and heat for a minute or two. Add a can chicken or beef broth and let simmer. Add more broth if needed.
